TEXAS-STYLE BAKED BEANS



Texas-Style Baked Beans image

Make this barbecue staple from scratch.

6 center-cut bacon slices, chopped
1 medium yellow onion, finely chopped (about 1½ cups)
1 small red bell pepper, chopped (about 1 cup)
2 jalapeño chiles, seeded and finely chopped (about ⅓ cup)
3 large garlic cloves, finely chopped
½ cup dark lager beer (such as Modelo Negra)
5 (15-oz.) cans pinto beans, drained and rinsed
¾ cup barbecue sauce (such as Sweet Baby Ray's Original Barbecue Sauce)
¼ cup light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
1 teaspoon kosher salt

Steps:

  • Preheat oven to 350°F. Cook bacon in a large skillet over medium, stirring occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a paper towel-lined plate, reserving 2 tablespoons of the drippings in skillet; reserve remaining drippings for another use. Increase heat to medium-high. Add onion, bell pepper, jalapeños, and garlic; cook, stirring often, until tender, about 6 minutes.
  • Add beer, and bring to a simmer over medium-high. Simmer, stirring occasionally, until slightly reduced, about 3 minutes. Stir in beans, barbecue sauce, brown sugar, Worcestershire sauce, chili powder, and salt. Bring mixture to a simmer over medium-high. Remove from heat, and transfer mixture to a 2-quart baking dish. Cover with aluminum foil.
  • Bake in preheated oven 20 minutes. Remove foil, and continue to bake until bubbling around edges and hot, 15 to 20 minutes more. Top with cooked bacon crumbles.

1 pound ground beef
4 (16 ounce) cans baked beans with pork
1 (4 ounce) can canned chopped green chile peppers
1 small Vidalia onion, peeled and chopped
1 cup barbeque sauce
½ cup brown sugar
1 tablespoon garlic powder
1 tablespoon chili powder
3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste

Steps:

  • In a skillet over medium heat, brown the ground beef until no longer pink; drain fat, and set aside.
  • In a 3 1/2 quart or larger slow cooker, combine the ground beef, baked beans, green chiles, onion and barbeque sauce. Season with brown sugar, garlic powder, chili powder and hot pepper sauce. Cook on HIGH for 2 hours, or low for 4 to 5 hours.

1 tablespoon butter, or as needed
2 tablespoons vegetable oil
1 red onion, diced
2 cloves garlic, minced, or more to taste
1 tablespoon butter, or as needed
1 pound bacon, diced
1 red bell pepper, diced
3 jalapeno peppers, minced, or to taste
1 cup beer, or more to taste
1 cup barbeque sauce
1 cup brown sugar
¼ cup molasses
6 cups cooked pinto beans
1 pinch garlic salt, or to taste
cracked black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Heat oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion begins to soften, 5 to 7 minutes. Add bacon, bell pepper, and jalapeno peppers; cook and stir until bacon is browned, 7 to 10 minutes more.
  • Stir beer, barbeque sauce, brown sugar, and molasses together in a large bowl; add pinto beans and bacon mixture. Season with garlic salt and black pepper. Pour beans mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling and browned, about 45 minutes.

Yummy bean side dish that tastes great and cooks up fast! I got this from the Texas Beef Council, cuz ya know we raise cattle! :) BUT of course I had to play with it and change it up a little. I used turkey bacon in here but you can use any bacon you like, even fake bacon to make this vegetarian. Enjoy!

4 slices bacon or 4 slices soy bacon
1 cup onion, finely chopped
1/2 cup green bell pepper, finely chopped
1 garlic clove, minced
2 (15 1/2 ounce) cans pinto beans, rinsed, drained
3/4 cup barbecue sauce
1 -2 tablespoon brown sugar, packed

Steps:

  • Spray a skillet really well with cooking spray (or add a little veg oil) and saute chopped turkey bacon* or soy bacon*, onion, bell pepper and garlic. Keep stirring so that it doesn't stick and everything gets cooked on all sides. About 3 to 5 minutes or until onion is tender.
  • Stir in remaining ingredients, cover and cook 5 minutes or until heated through, stirring occasionally.
  • Serve!
  • *Note: If you choose to use regular bacon cook it first and then drain and crumble. Pour off any grease from the pan leaving a tiny bit to saute the veggies.

These Texas style baked bean are an excellent side dish that can also serve as a great dinner too. This recipe is easy because it doesn't rely on dried beans, and you don't even need the your oven--they cook up in a skillet or dutch oven right on your stove top.

1 tbsp oil
1 (14 ounce) package smoked sausage or kielbasa (sliced ¼ inch thick)
2 jalapenos (diced small, seeds and membrane removed; or to taste)
1 cup onion (diced small)
1 tsp garlic (finely chopped)
2 (28 ounce) cans baked beans or pork and beans (undrained)
1 ½ tsp chili powder
½ cup beer (bock or lager)
½ cup ketchup (or bbq sauce)
1 tbsp yellow mustard
2 tbsp brown sugar (maple syrup, honey or white sugar)
1 tbsp apple cider vinegar
2 tbsp Worcestershire sauce (or A1 steak sauce)

Steps:

  • Heat oil in a large skillet, cast iron pot, or dutch oven. Add sliced sausage, chopped jalapeño, onions, and garlic. Cook, stirring occasionally until sausage is lightly browned and vegetables are tender, about 5-7 minutes.
  • Add canned beans (don't drain beans) and the remaining ingredients (chili powder through Worcestershire sauce) to the pot, stirring to combine. Bring mixture to a boil over medium-high heat, then reduce to low heat and let beans simmer for at least 20 minutes, uncovered.
  • Season with salt and black pepper and a dash of hot sauce, if desired.
