PUMPKIN TART WITH WHIPPED CREAM AND ALMOND TOFFEE
Steps:
- 1. Prepare Tart: Preheat oven to 350°. Fit piecrust into a 9-inch deep-dish tart or quiche pan with removable bottom; press into fluted edges. Whisk together granulated sugar and next 3 ingredients in a large bowl. Whisk together pumpkin and next 2 ingredients in a separate bowl. Whisk pumpkin mixture into sugar mixture. Add eggs, 1 at a time, whisking until blended after each addition. Whisk in evaporated milk, and pour into crust. 2. Bake at 350° for 1 hour and 30 minutes or until a knife inserted in center comes out clean. Cool completely on a wire rack. Cover and chill 8 to 24 hours. 3. Prepare Almond Toffee: Cook brown sugar and 4 Tbsp. butter in a small skillet over medium heat, stirring constantly, until bubbly. Add almonds, and cook, stirring constantly, 2 minutes or until golden. Pour mixture onto lightly greased (with cooking spray) parchment paper; cool completely. Break into pieces. 4. Prepare Whipped Cream: Beat cream and 1/4 tsp. pumpkin pie spice at medium-high speed with an electric mixer until foamy; gradually add powdered sugar, beating until soft peaks form. Top tart with whipped cream; sprinkle with toffee.

TOFFEE ALMOND TART
My aunt passed this recipe on to my mother, who then shared it with me. Both of them are excellent cooks, so I knew it had to be a winner. I wasn't disappointed! The rich tart is wonderful as a holiday dessert.

- Prepare the pastry: Place the flour in a large, shallow bowl and make a well in the center. Add the butter, sugar, egg and salt to the well and mix them together with your fingers, then very gradually draw in the flour. As necessary, sprinkle the water over the flour mixture and knead until well blended. Wrap the pastry in plastic wrap and refrigerate for about 30 minutes.
- Preheat the oven to 425 degrees.
- Prepare the filling: Remove seeds and any strings from the pumpkin, and cut into about eight even portions. Place the unpeeled pumpkin pieces in the top of a steamer. Cover and steam over boiling water until the pumpkin meat is tender, about 15 minutes. Drain the pumpkin, and when cool enough to handle, cut off the peel and discard it. Puree the pumpkin in the bowl of a food processor or blender. You should have two cups of puree. (The puree can be made in advance and refrigerated or frozen).
- In the bowl of a food processor or blender, coarsely chop the almonds. Add the pumpkin puree, the eggs, creme fraiche, brown sugar and orange zest and mix well.
- Assemble the tart: Roll out the dough to fit a 10 1/2-inch tart pan and carefully transfer the dough to the pan. Pour the filling into the prepared dough and bake until a knife inserted in the center of the tart comes out clean, about 45 minutes.
- Serve at room temperature within two or three hours of baking.

- Preheat oven to 375 degrees F (190 degrees C). Sprinkle toffee bits into pie shell; set aside.
- In a large bowl, combine pumpkin puree, white sugar, brown sugar, cinnamon, ginger, nutmeg, vanilla and salt. Beat in the milk, cream and eggs until filling is smooth and creamy. Pour filling over toffee bits in pie shell. Place on baking sheet in the middle of the oven.

This tart has a chocolate cookie crust, but you can substitute a different cookie for the crust if you would like. - For the crust, place wafers and sugar in a food processor; process until finely ground. Add melted butter; process until combined. Press crumbs onto bottom and up side of an ungreased 9-in. tart pan. Freeze for 30 minutes., Preheat oven to 350°. Bake crust until dry, 8-10 minutes, rotating once halfway through baking. Cool on a wire rack., Meanwhile, for the filling, in a large bowl, whisk cream, eggs and vanilla until combined. In a medium saucepan, combine pumpkin, sugars, salt and spices. Cook and stir with a wooden spoon over medium heat until bubbly. Cook and stir 5 minutes longer., Whisk a small amount of hot mixture into egg mixture; return all to pan, whisking constantly. Remove from heat; pour into prepared crust. Place tart pan on a rimmed baking sheet. Bake until center is just set and top appears dull, 30-35 minutes. Cool completely on a wire rack. Refrigerate, covered, at least 4 hours or overnight., Drizzle melted chocolate over tart; let stand until set. For the whipped cream, in a large bowl, beat cream, confectioners' sugar, vanilla and cinnamon until soft peaks form. Serve with tart.
