LADIES' FINGERS (OKRA) NORTH INDIAN STYLE

Steps:
- Cut off the top and end of the ladies' fingers and slit lengthwise on one side. Stuff the masala through the slit.
- Heat the clarified butter and add the ladies' fingers to it. Stir-fry over high heat, till they look glossy. Lower the heat to medium, add 1 tsp lemon juice and mix well.
- Leave uncovered and continue to sauté over medium heat. Add the lemon juice in two more stages, till the vegetable is cooked through. The ladies' fingers should retain some of their green colour and their shape.
- Serve hot, garnished with mint leaves.

TEXAS OKRA FINGERS W/ JALAPENO SOUR CREAM
I got this from the HEB website and really liked them. Make a bunch and reheat later on a cookie sheet. You can serve with just plain sour cream, Ranch dressing or with the suggested flavored sour cream.

Steps:
- Combine the peppers and sour cream.
- Chill till ready to use.
- In a small bowl combine beaten egg and milk and set aside.
- Place cornbread mix in a plastic or paper bag and set aside.
- Dip frozen okra, one at a time, in the egg/milk mixture and then shake to coat in the cornbread mix.
- Place coated okra on a large piece of wax paper or foil.
- Dip and coat all the okra and set aside.
- In a medium skillet heat oil to 375 degrees.
- Fry coated okras 4-6 at a time for 2 minutes.
- Drain on paper towels.
- Serve as an appetizer with the dipping sauce or with just plain sour cream.
- YUMM!

- I use my cast iron deep fryer for this.You can use any deep fryer. Maintain oil temp between 325 and 350. Clean okra and remove stems. Dry okra, In a shallow bowl add the buttermilk,a few dashes of hot sauce and okra set a side for at least a 1/2 hour.
- In another dish mix,all dry ingreadents.(I add a little red pepper flakes also.Mix very well. remove okra from buttermilk and roll in cornmeal,flour mix. Drop into hot oil(be very carful so as not to get burnt) Fry 3-5 minutes. Turning once. Drain on papper towl...
