Chilaquiles with Corn and Black Beans image

This vegetarian meal is heart-healthy: It's low in cholesterol and full of omega-3s from the avocado.

1 14-ounce can fire-roasted tomatoes
1 cup chunky tomato salsa
2 cloves garlic, crushed
1 small jalapeño pepper, halved (seeded for less heat)
1 tablespoon vegetable oil
1 red bell pepper, chopped
1 15.5-ounce can black beans, drained and rinsed
1 cup frozen fire-roasted corn
6 cups yellow corn tortilla chips (about 6 ounces)
1 avocado, diced
1/2 cup fresh cilantro
1/3 cup crumbled cotija cheese

Steps:

  • Preheat the broiler. Combine the tomatoes, salsa, garlic and jalapeño in a blender and blend until smooth.
  • Heat a large nonstick broiler-proof skillet over high heat and add the vegetable oil. Add the bell pepper and cook until the edges just begin to soften, 1 to 2 minutes. Add the black beans and corn and cook, tossing, until heated through, 1 to 2 minutes. Remove to a bowl using a slotted spoon.
  • Heat the empty skillet over medium-high heat. Add the tomato mixture and cook until slightly thickened, 3 to 4 minutes. Add 1 cup water to the blender and swirl it around; set aside.
  • Add the chips to the skillet and stir, adding the water from the blender as needed to moisten. Scatter the vegetable-bean mixture over the top. Transfer the skillet to the broiler and broil until heated through, 1 to 2 minutes. Top with the avocado, cilantro and cheese.

I looked all over for a recipe for black beans that included my favorite ingredients. When I couldn't find one, I started experimenting. These have become one of our favorite side dishes with Mexican meals. The lime juice adds a real tang to the recipe.

6 slices bacon, chopped
1 cup chopped onion
1 jalapeno pepper, seeded and finely diced
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can tomatoes (I use petite diced tomatoes)
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
2 tablespoons lime juice

Steps:

  • Saute bacon until crisp, then set aside.
  • Drain all except 1 T bacon grease.
  • Saute onion and jalapeno in remaining bacon grease.
  • Add all remaining ingredients except bacon and simmer until beans are hot and tomatoes have reduced a bit.
  • Top with bacon pieces.
  • If you like more spice you can either leave some seeds in the jalapenos or add a pinch of cayenne pepper.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Heat oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion begins to soften, 5 to 7 minutes. Add bacon, bell pepper, and jalapeno peppers; cook and stir until bacon is browned, 7 to 10 minutes more.
  • Stir beer, barbeque sauce, brown sugar, and molasses together in a large bowl; add pinto beans and bacon mixture. Season with garlic salt and black pepper. Pour beans mixture into the prepared baking dish.

This one-skillet breakfast is perfect for chilly holiday mornings that call for hot melted cheese and eggs with as little work as possible. Use your favorite jarred salsa verde for this recipe, or feel free to make your own.

1/2 lb. thick-cut bacon, cut into small pieces
6 garlic cloves, crushed, peeled
1 serrano chile, thinly sliced
1 (14.5-oz.) can pinto beans, drained, rinsed
2 cups jarred or homemade salsa verde, plus more for serving
8 cups thick tortilla chips, plus more
Kosher salt
4 oz. Monterey Jack or pepper Jack, shredded (about 1 cup)
1/2 oz. Cotija or Parmesan, finely grated (about 1/4 cup)
8 large eggs
1/4 cup cilantro leaves with tender stems
Hot sauce and lime wedges (for serving)

Steps:

  • Preheat oven to 425°F. Cook bacon in a large (12") cast-iron or other ovenproof skillet over medium heat, stirring occasionally, until fat is rendered and bacon is beginning to crisp, 5-7 minutes. Add garlic and chile and continue to cook, stirring, until bacon is crisp and garlic is golden brown, 2-3 minutes more. Add beans, stir to combine, then stir in 2 cups salsa verde. Taste by dipping a tortilla chip into mixture; season with salt if needed.
  • Transfer bean mixture to a large bowl (trying to add the chips to the skillet will make a mess, trust us). Gently stir in 8 cups chips with a rubber spatula until thoroughly coated without breaking chips. Return to hot skillet. Stick a handful of fresh chips vertically into mixture here and there-they will get extra crunchy as the chilaquiles bake. Sprinkle Monterey Jack and Cotija over. Make 8 evenly spaced indentations in filling and carefully crack an egg into each. Bake until egg whites are opaque and cheese is bubbly, 10-15 minutes.
  • Top chilaquiles with cilantro. Serve with hot sauce, lime wedges, and more salsa verde alongside.

1 package (9 ounces) tortilla chips

1/3 cup crumbled Cotija or feta cheese
1/4 cup minced fresh cilantro

  • Preheat oven to 350°. In a small bowl, combine salsa and sour cream. Arrange half the tortilla chips in a greased 13x9-in. baking pan. Layer with half the salsa mixture, all of the spinach, half the shredded cheese and half the bacon. 5 garlic cloves, minced
2 cups shredded cooked chicken breasts
15 ounces black beans, rinsed and drained
1 cup reduced-sodium fat-free chicken broth
7 3/4 ounces salsa de chile fresco
15 (6 inch) corn tortillas, cut into 1-inch strips
1 cup shredded queso blanco

Steps:

  • Preheat oven to 450.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  • Add onion; saute 5 minutes or until lightly browned.
  • Add garlic, saute 1 minute.
  • Add chicken, cook 30 seconds.
  • Transfer mixture to a medium bowl; stir in beans.
  • Add broth and salsa to pan, bring to a boil.
  • Reduce heat, and simmer 5 minutes, stirring occasionally. Set aside.
  • Place half of tortilla strips in bottom of an 11 x 7 baking dish, coated with cooking spray.
