This is delicious and easy to make. Make it as spicy as you like or keep it mild.

2 cups uncooked jasmine rice
1 quart water
¾ cup coconut milk
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
1 ½ tablespoons fish sauce
¾ teaspoon red pepper flakes
1 tablespoon olive oil
1 medium onion, sliced
2 tablespoons fresh ginger root, minced
3 cloves garlic, minced
2 pounds skinless, boneless chicken breast halves - cut into 1/2 inch strips
3 shiitake mushrooms, sliced
5 green onions, chopped
1 ½ cups chopped fresh basil leaves

Steps:

  • Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
  • In a bowl, mix the coconut milk, soy sauce, rice wine vinegar, fish sauce, and red pepper flakes.
  • In a skillet or wok, heat the oil over medium-high heat. Stir in the onion, ginger, and garlic, and cook until lightly browned. Mix in chicken strips, and cook about 3 minutes, until browned. Stir in the coconut milk sauce. Continue cooking until sauce is reduced be about 1/3. Mix in mushrooms, green onions, and basil, and cook until heated through. Serve over the cooked rice.

225g / 7oz chicken thigh fillets (, skinless boneless, cut into bite size pieces)
1 green onion (, cut into 4cm / 2" lengths.)
1 cup Thai basil leaves (, loosely packed (Holy Basil if you can find it) (Note 1))
2 garlic cloves (, large, finely chopped (Note 2))
1 birds eye or Thai chilli (, deseeded and finely chopped)
1 1/2 tbsp oil ((peanut, vegetable or canola))
2 tsp oyster sauce
1 tsp light soy sauce ((Note 3))
1 tsp dark soy sauce ((or all purpose) (Note 3))
1 tsp sugar
2 tbsp water
Steamed jasmine rice

Steps:

  • Put Sauce ingredients in a small bowl and mix to combine.
  • Heat oil in wok or pan over high heat.
  • Add garlic and chilli and cook for 10 seconds. Don't inhale - the chilli will make you cough!
  • Add the white part of the green onions and chicken and fry until cooked, around 2 minutes.
  • Add Sauce and cook for 1 minute until the water reduces to make a thick glossy sauce.
  • Toss through green part of green onions and basil leaves. Stir until just wilted, then serve immediately with steamed jasmine rice.

approx. 1 lb. (.45 kg) chicken breast or thigh, cut into thin strips for stir-frying
1 shallot (or substitute 1/4 cup purple onion), finely chopped
4 cloves garlic, minced
2 red chilies, finely sliced (OR substitute 1/2 tsp. crushed dried chili)
1 red bell pepper, chopped into bite-size pieces or strips
3 Tbsp. sherry/cooking sherry, OR white wine
1 compressed cup (2 oz./56 grams) fresh Thai basil (or substitute sweet basil)
Optional: 1/4 cup chicken stock, + 1 Tbsp. lime juice
STIR-FRY SAUCE:
2 Tbsp. oyster sauce (I use Golden Dragon brand)
3 Tbsp. Golden Mountain sauce (see below)
1 Tbsp. fish sauce
1 Tbsp. brown sugar
2 Tbsp. lime juice
OTHER: oil for stir-frying

Steps:

  • Combine the stir-fry sauce ingredients together in a cup, stirring to dissolve the sugar. Set near the stove. Heat a wok or large frying pan over medium-high heat. Add 2-3 Tbsp. oil and swirl around, then add the shallot, garlic, and chili. Stir-fry 1-2 minutes. Add the chicken and continue stir-frying 3-4 minutes, or until chicken is no longer pink. When the wok/pan becomes dry, add 1-2 Tbsp. of the sherry/wine to keep ingredients frying nicely. Add the red pepper, plus another Tbsp. of sherry/wine as needed. Continue stir-frying 1 more minute. Reduce heat to medium-low and add the stir-fry sauce. Stir and let the dish gently simmer while you prepare the basil. If you prefer more sauce with your stir-fry: add some, or all, of the optional chicken stock and lime juice. Stir and let the dish gently simmer. While ingredients are simmering, prepare your basil. Setting a handful aside for the garnish, mound the rest of the basil together into a compressed pile. Slice into thin shreds (you can also stack the leaves on top of each another, then roll them up and thinly slice). Reduce heat to minimum and add the prepared basil, gently folding it into the dish. Now taste-test for salt and spice, adding more lime juice if too salty, or more fish sauce if not salty enough. Add more chili if you'd like it spicier (Tip: this dish is meant to taste spicy-salty). Serve with plenty of plain steamed rice to balance out the instense flavors of this dish. Sprinkle each portion with some of the reserved basil, and ENJOY!

This simple, delicious recipe for a spicy beef stir-fry comes from Leela Punyaratabandhu, a cookbook author who adapted it from Soei, a family-run restaurant in Bangkok. Using thinly sliced beef tenderloin means the dish is ready in just minutes, and you can adjust the heat to taste by reducing or increasing the number of fresh bird's-eye chiles. Made with fresh holy-basil leaves, the classic Thai dish is known as phat ka-phrao. If you can't find holy basil at a Thai market, Indian market or health food store, you could swap in more widely available Thai sweet basil (pictured), and make a dish of phat bai hora-pha. The dish could be one part of a larger meal or stand alone with some jasmine rice and a fried egg.

1 tablespoon Thai thin soy sauce, or light soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce
1/4 cup chicken stock
1 packed teaspoon grated palm sugar, or light brown sugar
8 large cloves garlic
4 to 8 fresh bird's-eye chiles
1 1/2 tablespoons lard, or neutral oil
1 1/2 pounds beef tenderloin, sliced against the grain into 2-inch-long, 1/4-inch thick strips
3 to 4 makrut lime leaves, lightly bruised and torn into pieces (optional)
1 1/2 cups loosely packed fresh holy-basil leaves or sweet Thai basil leaves, sweet Thai basil leaves or other fragrant basil

Steps:

  • If you're making rice with this dish, get it started. In a small bowl, stir together the soy sauce, oyster sauce, fish sauce, chicken stock and sugar. In a mortar or small food processor, grind together the garlic and chiles into a coarse paste.
  • Heat the lard in a wok or large skillet over medium-high heat. Add the garlic-chile paste, and stir until fragrant, about 1 minute. Before the garlic starts to brown, add the beef, and stir-fry to separate the pieces and coat with fat. Add the liquid mixture, making sure not to leave any behind in the bowl, and cook until the beef is only barely pink, about 2 minutes. Add the lime leaves, and continue to cook until no pink remains on the beef, about 1 minute. Add the basil leaves, and stir until they are just starting to wilt, then remove from heat and serve with rice. (You can fish out the large pieces of makrut leaves before serving or put them aside as you eat.)
