CURRIED CRAB DIP

You can put together this modern version of this classic appetizer in minutes.

1 lb lump crabmeat (shells and cartilage picked out)
6 tbsp mayonnaise
1½ tsp curry powder
2 tsp Worcestershire sauce
2 tbsp fresh lemon juice
¼ tsp salt
3 tbsp sliced scallions (white and green parts)
Granny Smith apple (sliced)
Crackers
Cherry tomatoes

Steps:

  • In a bowl, combine the crabmeat, mayonnaise, curry powder, Worcestershire sauce, lemon juice, salt and 2 tbsp scallions. Stir gently to combine.
  • Transfer dip to a bowl and arrange on a platter surrounded by apple slices, crackers and tomatoes. Top with 1 tbsp scallions. Serve immediately or chill, covered, until read to serve.

1 lb pork mince
1 onion
4 garlic cloves
1 tablespoon ginger
2 chilies
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon lemongrass
oil
yoghurt
chives

Steps:

  • Place all the ingredients in a large bowl and mix together. Divide the mixture into 16 golf ball sized portions.
  • Put some oil in a non-stick frying pan and fry the bites for 5-6 minutes, turning frequently, until golden brown all over.
  • Serve with a dip of natural yoghurt and chopped chives.
