SOUTHERN FRIED TOFU WITH SWEET POTATOES

Steps:
- Preheat the oven to 425 degrees F. Toss the sweet potatoes with the vegetable oil, 1 teaspoon paprika, 1/4 teaspoon salt and a few grinds of pepper on a baking sheet. Bake, flipping halfway through, until lightly browned and tender, about 30 minutes.
- Whisk the buttermilk and hot sauce in a shallow dish. Add the tofu, turning to coat; marinate 10 minutes. Whisk the ketchup, brown sugar and vinegar in a bowl; set aside. Whisk the flour, the remaining 1 tablespoon paprika and 1/2 teaspoon each salt and pepper in a large bowl; stir in 1 tablespoon of the marinade to make clumps.
- Heat 2 inches vegetable oil in a large pot over medium heat until a deep-fry thermometer registers 350 degrees F. Dip the tofu in the flour mixture, turning to coat, dip back in the marinade, then re-dip in the flour to coat with the clumpy bits; transfer to a plate. Fry the tofu in two batches, flipping halfway through, until golden brown and crisp, 3 minutes. Transfer to a rack; season with salt. Serve with the sweet potatoes, coleslaw and ketchup sauce.

- Heat olive oil and sesame oil in a skillet over medium-high heat. Reduce heat to medium, and cook green onions for one minute. Add tofu, and continue cooking 4 minutes more, sprinkling with soy sauce halfway through. Gently stir in the peanut butter and ginger, being careful not to break the tofu, until well incorporated.
- Remove from heat, and toss in coconut. Transfer to a serving dish, and sprinkle with sesame seeds.

- Cut tofu in half widthwise. Keep the pieces stacked and cut lengthwise into thirds (creates 6 rectangles), and then cut the tofu horizontally (slicing parallel to work surface) into quarters to create 24 cubes, each about 1 inch. Press the tofu. Meanwhile, in a small bowl, whisk together fish sauce, lime juice, sugar, curry paste, and coconut milk until blended; set aside.
- In a large, nonstick skillet, heat 1 tablespoon oil over high heat. Add the tofu and sear without moving until the cubes have browned, 2 to 3 minutes. Carefully turn the tofu and sear other side until browned, about 2 minutes more. Turn and sear a third side, again for about 2 minutes. Remove tofu to a plate and set aside.
- Add the remaining tablespoon of oil to the skillet and heat. Add the broccoli, red pepper, 3 tablespoons of water, and salt to taste; cook, stirring frequently, until vegetables are almost tender, 2 to 3 minutes. Return tofu to the skillet and stir in the sauce. Cook to heat and blend flavors, about 1 minute. Serve immediately, garnishing each portion with basil, cilantro, mint, and peanuts.

- Cut the tofu in half lengthwise down the top. Slice into squares 1/4 inch thick. Stir together the soy sauce, vinegar, sesame oil, and sugar in a small bowl, set aside.
- Heat oil in a large, nonstick pan over medium heat. Add garlic and green onions, and cook until fragrant, about 20 seconds. Brown tofu well on each side, then pour in sauce and cook until the sauce has been incorporated by the tofu, 2 to 3 minutes. Season to taste with salt and pepper.

- DRAIN tofu. Wrap tightly in clean kitchen towel to remove moisture. Let stand 20 minutes. Cut tofu into 2x1x1/4-inch strips. Mix rice flour and cornstarch in shallow dish. Coat tofu with flour mixture.
- HEAT oil to 385°F in wok or large skillet on medium heat. Deep fry tofu strips 7 to 8 minutes or until golden brown. Drain on paper towels.
- SERVE with Sweet Red Chili Sauce and Peanut Satay Sauce, and lettuce leaves and cucumber slices. Garnish with cilantro, if desired.
GOLDEN FRIED TOFU BITES
Fast, easy and tasty. Goes well with Thai curry. The only tofu that my BF (serious carnivore) will eat! Prep time is mainly the time that the tofu is draining.

Steps:
- Rinse the tofu.
- Place tofu on a plate, cover with two large heavy plates and let drain for 30 minutes.
- Dry the tofu and cut into small bite-sized cubes.
- (3/4 inch or less).
- In a large bowl, mix the flour, cornstarch and seasoning salt.
- Carefully dredge the tofu bites in the seasoned flour mixture, making sure they are well-coated.
- Fry, half at a time, in peanut oil at medium-high heat for about five minutes or until golden and crispy.
- Repeat with other half of the tofu.
- Best eaten piping hot as soon as they are cooked.
- May be eaten plain, dipped into liquid honey, or they go very well with red Thai curry.
