THAI STEAMED SEA BASS WITH LIME AND GARLIC SAUCE

Thai Steamed Sea Bass With Lime and Garlic Sauce image

This simple steamed sea bass is delicious served with the sweet, sour, spicy and savoury sauce!

Provided by Dan Toombs

Categories     Thai Recipes

Time 22m

Number Of Ingredients 9

2 x 700g (1 ½ lb) sea bass
20 kaffir lime leaves
250ml (1 cup) chicken stock
2 tbsp palm sugar
20 cloves garlic - finely chopped
6 red bird's eye chillies (more or less to taste) finely chopped
150ml (about 8 tbsp) freshly squeezed lime juice
6 tbsp Thai fish sauce
3 tbsp coriander - finely chopped

Steps:

  • Make three or four shallow slits on each side of the sea bass. Place the kaffir lime leave in the cavity and place on a steaming tray. If you have a fish steamer as shown, that is the best option but any steamer that will hold the fish is fine.
  • Place the steamer over high heat and steam the fish for about 12 minutes or until cooked through.
  • While the fish is cooking, heat the chicken stock in a sauce pan over medium high heat and bring to a rolling simmer. Add the palm sugar and stir it into the stock until it dissolves. Turn off the heat and then add the chopped garlic. The sharp flavour of the garlic will mellow in the hot stock and become softer.
  • Stir in the chopped chilies followed by the fish sauce and lime juice and coriander and give it a good stir. Set aside
  • Check the fish to see if it is cooked through. When checking sea bass for doneness, the meat should easily come off the bone. If it is sticking, steam it for about another minute or so.
  • Place the cooked fish on a heated platter and spoon some of the solid ingredients of the sauce, like the garlic, chillies and coriander over it. Then pour the remaining sauce over the fish. It is not necessary that the sauce be piping hot. This is more of a salsa than a sauce but I do lime mine to be warm.
  • Serve immediately and enjoy.

STEAMED FISH WITH LIME AND GARLIC RECIPE (ปลากะพงนึ่งมะนาว)

Steamed Fish With Lime and Garlic Recipe (ปลากะพงนึ่งมะนาว) image

Pla kapong neung manao (ปลากะพงนึ่งมะนาว), or Thai steamed barramundi fish with lime sauce, is a favorite seafood dish for many Thais. Make this recipe at home and you're in for a real steamed fish!

Provided by Mark Wiens

Categories     Thai

Time 35m

Yield 1 whole fish

Number Of Ingredients 10

1 whole barramundi, about 1 - 2 kilos (or whatever size you can get), guts and gills already removed
5 stalks lemongrass, bottom half only, smashed, and cut into chunks
1 cup good chicken stock or fish stock (fresh or canned)
2 Tbsp finely chopped palm sugar
8 Tbsp lime juice
6 Tbsp fish sauce (here's my preferred fish sauce)
2 heads of garlic, chopped
Thai chilies to taste, finely chopped
20 - 25 sprigs cilantro, chopped
1- 2 stalks Chinese celery, cut into 1-inch pieces

Steps:

  • Make sure your fish is scaled and gutted, and then score the fish with 3 diagonal incisions on each side of the fish. Cut off the top halves of the lemongrass, bruise, and stuff the lemongrass into the cavity of the fish. Steam the fish over high boiling water for about 10 - 15 minutes depending on the size of your fish.
  • In a saucepan, heat the chicken stock until it comes to a boil, and then toss in the sugar, reduce heat, and boil until the sugar is completely dissolved. Pour the mixture into a bowl and set aside.
  • Mince the garlic, chilies, and cilantro, and mix into the chicken stock soup, along with fish sauce and lime juice. Stir gently and then taste test. Make sure it's sour, and balanced with a hint of sweetness.
  • When the fish is fully steamed, transfer it to a serving platter (with edges to keep in the soup), garnish with a bed of Chinese celery, and place the fish on the platter. Gently scoop on all the sauce over the fish, putting most of the garlic and chilies on the top of the fish.
  • Make sure you eat with steamed rice!

FISH EN PAPILLOTE

Provided by Melissa d'Arabian : Food Network

Categories     main-dish

Time 47m

Yield 4 servings

Number Of Ingredients 11

1/2 red onion, julienned
1 zucchini, julienned
1 large carrot, julienned
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 (4-ounce) sole fillets, hake, flounder or other white fish
1 lemon, thinly sliced, seeds removed
8 sprigs fresh thyme
4 pats butter
1/4 cup white wine

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together the onion, zucchini, carrot and garlic. Adds the oil, season with salt and pepper, to taste, and toss to combine. Put each fish fillet in a large square of parchment paper and season with salt and pepper, to taste. Arrange the vegetables on top, dividing evenly. Top the vegetables with 2 lemon slices, 2 sprigs thyme, a pat of butter and 1 tablespoon white wine, layering in order. Fold the parchment paper around the edges tightly in 1/4-inch folds to create a half moon shape. Make sure you press as you crimp and fold to seal the packets well, otherwise the steam will escape. Arrange the packets on a baking sheet. Bake until the fish is cooked through, about 12 minutes, depending on the thickness of the fish. To serve, cut open the packets and serve directly in the parchment on a plate or remove the fish to the plate using a spatula, being sure you don't leave the juices behind.

SEA BASS EN PAPILLOTE WITH THAI FLAVOURS

Sea bass en papillote with Thai flavours image

Make a parcel from baking parchment and let your fish steam to perfection while infusing with garlic, ginger, chilli and lime

Provided by Mat Follas

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 9

2 small seabass , scaled and gutted
12 new potatoes , cleaned
small knob salted butter
coriander leaves, to serve
2 lemongrass stalks
100g chunk fresh ginger
3 garlic cloves
3 small red chillies , finely chopped
zest and juice 1 lime , plus extra wedges to serve, if you like

Steps:

  • Heat oven to 180C/160 fan/gas 4. To prepare the stuffing mixture, bash the lemongrass with the blunt side of your knife to bruise it, then slice it into thin rings. Finely slice the ginger (across the grain) - you can leave the peel on. Squash the unpeeled garlic cloves to release their aroma. Put all the stuffing ingredients into a bowl and mix together.
  • Take a piece of baking parchment about 50cm in length and place the 2 sea bass across its width. Fill the stomach cavities with ¾ of the stuffing mixture, scattering the rest over the fish, then season. Fold the sides of the parchment over the heads and tails of the fish, then roll it into a parcel. This can now be stored in the fridge for a few hrs, if you like. When ready to cook, place on a tray in the oven and bake for 20-25 mins, until the flesh flakes off the bone.
  • While the fish bakes, put the new potatoes in cold water and bring to the boil. Once cooked, drain well, slice in half and return to the pan with a knob of butter.
  • Arrange the new potatoes and sea bass on the plate, still in the parcel, if you like, and sprinkled with the coriander leaves.

THAI BAKED FISH IN GARLIC & CHILI SAUCE

Thai Baked Fish in Garlic & Chili Sauce image

I'm actually posting this here so I can have this available wherever I go. I love this recipe! It's so easy...but great presentation for company. Looks and tastes like you spent hours preparing this. We always double the recipe because if we invite a couple (so 4 of us in all), we eat every bit of BOTH fish...no leftover for later. :( I found the base of this recipe on about.com, but after tinkering, the final recipe is a bit different...better, I think. :) So some pointers: Basil & cilantro: do not mince or chop. Looks much better when whole...like garnish you actually eat. Approx. 2-3 lbs. of a white fish (or two smaller ones) For example, red snapper, rainbow trout or tilapia, fresh or frozen. (defrosted when you are ready to bake) The whole fish, including the head, make for great presentation. I serve this with sticky rice and the green mango salad I posted. If I have time, I'd make tom yum (soup).

Provided by StoryMom

Categories     Thai

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 14

2 -3 lbs whole white fish, cleaned (descale but leave head and tail on for presentation)
1 bunch fresh cilantro (to taste and for serving presentation)
1 bunch fresh basil (to taste and for serving presentation)
2 lemons (1 sliced for baking, 1 wedged for serving-if you want)
aluminum foil or banana leaf
4 tablespoons oyster sauce
4 tablespoons soy sauce
8 -10 garlic cloves, minced
1 inch fresh ginger, minced (more if you like the taste)
1 tablespoon fish sauce
2 tablespoons brown sugar
1/4 teaspoon black pepper
1 tablespoon lime juice or 1 tablespoon lemon juice
1 -3 red chili peppers, sliced or 2 teaspoons thai chili-garlic sauce, depending on how spicy you like it

Steps:

  • Preheat oven to 375 degrees.
  • Stir all marinade/sauce ingredients together in a bowl. Set aside.
  • Place fish on a cutting board and score it by making vertical cuts an inch or more apart along the length of fish from head to tail. Turn fish over and do the same on the other side.
  • Place fish on a large piece of tin foil or banana leaf. Make sure the foil or leaf is big enough to cover/wrap the fish.
  • Drizzle 3 tablespoons (or more) of the marinade/sauce over each fish, covering both sides. Be sure to spoon some into the cuts you've made, as well as into the cavity. Reserve the rest for later.
  • Stuff the cavity of the fish with lemon slices and some of the basil and cilantro. (approx. 1/4 to 1/2 cup).
  • Bring the long sides of the foil up and over the fish, scrunching it together. Try to keep the foil off the surface of the fish, making a kind of shallow tent over it. Also fold up each end and scrunch to secure. If using banana leaf: Simply fold the sides and ends of the leaf over fish to cover it. With banana leaf, you actually want the leaf to come into contact with the fish, as this adds to the flavor.
  • Bake the wrapped fish on a baking sheet or tray and place in the oven. (Fish wrapped in banana leaf will require a dish or tray, as banana leaf is permeable.).
  • Bake at 375 degrees for 20 minutes or longer, depending on the size and thickness of your fish.
  • Remove fish from oven and check some of the deeper cuts to see if inner flesh is cooked. If fish still needs more time, return to your oven for up to another 8-10 minutes, or until cooked.
  • To finish the fish, remove from oven and open up the foil, scrunching it around the fish to create a kind of bowl. For banana leaf, simply open up the leaf.
  • Pour remaining marinade over fish and return to the oven. Turn oven on "Broil" setting, and broil for approximately 5 minutes, or until the fish is nicely browned and crisp-looking. Banana leaves will become quite brown and fragrant. (keep an eye on it it during the broil to keep it from burning).
  • Remove from the oven and serve the fish with fresh coriander and basil. Add lemon wedges or slices. (or put fresh lemon slices on top & slices on the side).

TIME FOR THAI GRILLED FISH WITH CHILI-LIME SAUCE

Time for Thai Grilled Fish With Chili-Lime Sauce image

This was in my clipping stash which I am trying to clean out. Salmon is not traditional Thai but with the typical Thai seasonings, it should fit right in. The sauce is optional but sounds delicious. I am always looking for fish recipes as we try to incorporate 2 to 3 servings a week.

Provided by TXOLDHAM

Categories     < 30 Mins

Time 20m

Yield 6 serving(s)

Number Of Ingredients 15

2 tablespoons fish sauce
3 tablespoons lime juice
2 tablespoons sugar
1 teaspoon garlic, finely chopped
1 teaspoon jalapeno pepper, finely chopped
1 teaspoon cilantro, finely chopped

  • Sauce: Preheat the oven to 400F (200C). Remove the tough outer part of lemongrass. Cut off the green color top part and only use the white bulbous part. Use a small bottle or meat pounder to pound the lemongrass a few times until it’s in flat shape then finely chop them. Combine all ingredients under “Sauce”. Set aside.
  • Next, fold the paper over so the two ends meet, enclosing the food. Beginning at either end of the center crease, make small, overlapping diagonal folds around the filling, pleating it all around to make a semicircular airtight package that looks like a half-moon shape calzone. Seal the papillote tight. You might need to twist and fold the end tip to secure the envelope. Place the packet over a large sheet pan.
