THAI GREEN BEAN AND CRAB SALAD

Steps:
- Cook the green beans in boiling water until they just start to turn tender but are still crisp, about 5 minutes.
- Rinse the green beans under cold water to stop the cooking process.
- Place the green beans, red pepper, crab meat, green onions, cilantro and mint in a large bowl.
- Mix the peanut butter, coconut milk, lime juice and zest, fish sauce and chili in a bowl.
- Toss the dressing and salad to coat and serve topped with peanuts.

Steps:
- For dressing, whisk together soy sauce, garlic, fish sauce, rice vinegar, lime juice and zest, brown sugar, and sriracha.
- Bring a pot of water to a boil and blanche beans for about 2 minutes, still crunchy and bright green. Shock in cold water.
- Combine red pepper, tomato, cilantro, basil, mint, and green beans. Toss with dressing and add black pepper to your liking. Let sit for at least 30 minutes for flavors to meld.
- Before serving, toss in peanuts, and garnish with green onion.

I love Thai food, its so quick and easy to make. If you prepared your crabmeat ahead of time, this salad is ready before you know it. It is soooo good. I really enjoy the flavors and textures in this salad. It makes a light and refreshing meal.

- On a nice platter arrange your lettuce and add the crabmeat, scallions, cucumber and cliantro.
- Mix your ingredients for the salad dressing together and pour over the plated salad.
- Serve immediately, great with fresh fruit and homemade bread.
