Recipe video above. These taste JUST like the Thai Fish Cakes from your favourite Thai restaurant! They should be firm but bouncy, almost a spongey texture, well seasoned, golden brown and with lovely complex flavours from the red curry paste and other seasonings.

1 lb / 500g white fish fillets (, skinless and pin boned, cut into chunks (Note 1))
3 tbsp red curry paste ((Note 2))
1 tbsp cilantro/coriander leaves (, chopped)
1 tbsp fish sauce ((sub soy sauce))
1 tbsp lime juice
1 egg
1/4 cup (40g) rice flour ((or cornstarch / corn flour))
6 green beans (, finely sliced (optional, Note 3))
4 - 6 tbsp oil ((vegetable, canola, sun flower))
Sweet chilli sauce
Cilantro/coriander leaves
Lime wedges

Steps:

  • Place fish, red curry paste, cilantro/coriander, fish sauce, lime and egg in a food processor. Whizz until the fish is minced and it looks like a paste. (See video)
  • Transfer to a bowl and stir through rice flour and green beans until flour is all incorporated. (Note 4)
  • Measure 1/4 cup of mixture (I use an ice cream scoop - Note 5), form 1cm / 2/5" thick patties.
  • Heat enough oil in skillet over medium high heat to cover the base (4 tbsp or so)
  • Place in oil, cook 2 minutes until deep golden brown, then turn and cook the other side for 2 minutes. Transfer to paper towel lined plate.
  • Repeat with remaining mixture, adding more oil into the skillet if required.
  • Serve with Sweet Chilli Sauce, garnished with cilantro/coriander leaves and lime wedges on the side. Add a side of Thai Fried Rice or even just plain jasmine rice to make a meal!

500 g white fish fillets (basa or ling)
1 egg
2 tablespoons cornflour
1 tablespoon tamari (or gluten-free light soy sauce)
2 tablespoons fish sauce
2 garlic cloves (minced)
1 tablespoon grated ginger
4-5 kaffir lime leaves (finely chopped)
1/2 inch lemongrass piece (finely chopped (white only))
1/2 bunch coriander stalks (roughly chopped)
1/2 cup fresh coriander leaves (roughly chopped)
1 teaspoon red chili flakes
salt to taste
lettuce leaves and Thai sweet chili sauce (to serve)
olive oil (to fry)

Steps:

  • Place fish, egg, cornflour, tamari, fish sauce, garlic, ginger, lime leaves, lemongrass, coriander stalks and leaves, chili flakes and salt in the bowl of a food processor.
  • Process briefly until the mixture comes together but is still a bit chunky.
  • Roll the mixture into 10-12 rounds and flatten each to resemble a fishcake.
  • Heat a large frying pan on medium. Drizzle about half a tablespoon of olive oil in the pan. Place half of the fishcakes in the pan. Reduce heat to medium-low. Cook each side for approximately 5 minutes until both sides are cooked and golden. Press down on the fishcakes with a spatula during cooking.
  • Repeat with the remaining fishcakes.
  • Serve in lettuce leaves with Thai sweet chili sauce on the side.

AUTHENTIC THAI GREEN CURRY

This is a classic Thai green curry (kaeng kiau wan) and my favorite curry of all time! You can substitute chicken or tofu for the pork, but make sure you serve it with lots of jasmine rice.

2 (8 ounce) cans bamboo shoots, drained and thinly sliced
3 tablespoons corn oil
3 tablespoons green curry paste, or more to taste
1 pound lean boneless pork, cut into 1/2-inch cubes
2 (14 ounce) cans coconut milk
1 small red bell pepper, thinly sliced
1 tablespoon white sugar
½ teaspoon salt
8 kaffir lime leaves, thinly sliced
2 teaspoons fish sauce, or more to taste
½ cup Thai basil

Steps:

  • Bring a large pot of water to a boil and cook bamboo shoots for 5 minutes. Drain.
  • Heat oil in a large pot over medium heat and cook curry paste until fragrant, about 2 minutes. Add pork, increase heat and cook until starting to brown, 3 to 5 minutes. Add bamboo shoots, coconut milk, and red bell pepper. Reduce heat and bring to a simmer. Season with sugar and salt; simmer for 10 minutes. Stir in kaffir lime leaves. Cook for 1 more minute. Season with fish sauce. Stir in Thai basil and serve.

These easy Thai fish cakes are full of intense flavours with green beans for extra texture. Each serving provides 354 kcal, 38g protein, 9g carbohydrate, 18g fat, 5g fibre.

600g/1lb 5oz salmon fillet, skin removed and cut into chunks
1 large free-range egg
2 tsp lemongrass paste
2 tbsp Thai red curry paste
1 tbsp fish sauce
4 kaffir lime leaves, finely shredded
100g/3½oz green beans, finely sliced
1-calorie sunflower oil spray
sea salt and freshly ground black pepper
2 limes, cut in half, to serve
2 carrots (about 200g/7oz), peeled and cut into thin ribbons
200g/7oz cucumber, peeled and cut into thin ribbons
½ red onion, thinly sliced
12 radishes, thinly sliced
large handful of coriander, roughly chopped
60g/2¼oz mixed salad leaves
1 tbsp rice wine vinegar
1 tbsp soy sauce
salt and freshly ground black pepper

Steps:

  • Put the salmon into a food processor with the egg, lemongrass paste, curry paste, fish sauce and lime leaves. Season with salt and pepper and blend until the mixture comes together but still has some texture. Transfer to a bowl and fold in the sliced beans. Cover and leave in the fridge until needed.
  • To make the salad, mix together the carrot, cucumber, red onion, radishes, coriander and mixed leaves in a large bowl.
  • Heat a large pan over a medium-high heat. Divide the fish cake mixture into eight equal-sized pieces and shape into patties. Spray a little oil into the pan and add four of the fish cakes, spacing them apart and flattening each one slightly. Cook for 2-3 minutes on each side or until cooked through. Set the cooked fish cakes aside on kitchen paper while you cook the remaining fish cakes.
  • Add the rice vinegar and soy sauce to the salad and mix well. Divide between serving plates and add two fish cakes and a lime half to each plate. Serve straight away.

THAI FISHCAKES WITH SWEET CHILLI SAUCE

Get your wok hot and your tastebuds jumping with these classic Thai snacks

100g skinless salmon fillet
100g skinless white fish fillet
175g prepared squid or cuttlefish
25g red chilli paste
4 lime leaves , shredded
50g green beans , trimmed and finely chopped
1 tbsp fish sauce
1 egg white
1 tbsp oyster sauce
groundnut or vegetable oil , for deep frying
5 tsp white rice vinegar
85g granulated sugar
3 fat red chillies
¼ cucumber , diced
25g roasted peanuts , chopped

Steps:

  • Put the salmon, white fish and squid into a food processor, then whizz until smooth. Add the chilli paste and pulse until well mixed. Place all the other ingredients, except the oil, into a large bowl. Add the fish mixture, then knead together for 5 mins until smooth and elastic.
  • Shape into small flat discs about 5cm across. Heat a few cms oil in a wok until it shimmers, then fry the fishcakes in batches for 2-3 mins until golden. Drain on kitchen paper. Can be chilled for up to 1 day, then reheated in a hot oven for 5 mins.
  • For the chilli sauce, place the vinegar, sugar, 2 tbsp water and the whole chillies in a small saucepan, then bring to the boil. Simmer for 15 mins, then remove from the heat. Place in a food processor and blend until smooth. Strain, saving 1 tsp chilli, then stir in the saved chilli and leave to cool. Will keep in the fridge for up to 1 week. Serve fishcakes with the chilli sauce, cucumber and peanuts.

Forget buying a jar of ready-made sauce and make an aromatic Thai green curry from scratch. This recipe makes more curry paste than needed, but you can freeze the rest for next time

1 tbsp vegetable oil
2-3 tbsp green curry paste (see below)
200g chicken thighs, skinned, de-boned and cut into chunks
400g can coconut milk
2 Thai aubergines
50g pea aubergines
2 baby corn, sliced at an angle
50g sugar snap peas
2-4 tbsp fish sauce
2-4 tsp sugar or palm sugar
2 lime leaves, stems removed
¼ bunch of Thai basil
1 red chilli, sliced
2 garlic cloves, finely chopped
8 green chillies, finely sliced
5g fresh turmeric root
1 lemongrass stalk, bruised and finely chopped
25g galangal, finely chopped
2 stalks coriander root, finely chopped
2 lime leaves, roughly chopped
4 Thai shallots, peeled and thinly sliced
10g ginger, finely chopped (optional)
½ tsp shrimp paste

Steps:

  • To make the curry paste, gradually combine all the ingredients, except the shrimp paste, using a pestle and mortar. Add the ingredients one at a time and pound vigorously after each to form a rough paste. Add the shrimp paste and continue to pound together until you have a smooth paste. The paste is ready when you can no longer identify any of the ingredients. Will keep in an airtight container in the fridge for 3-5 days or in the freezer for up to three months.
  • To make the curry, heat the oil in a saucepan over a low heat. Add the green curry paste and stir until fragrant - you won't need all the paste. Increase the heat to medium and add in the chicken pieces, coating with the paste. When the chicken has browned, spoon in half the coconut milk, avoiding adding any of the water at the bottom of the tin - this will split the curry. Stir continuously for 10 mins or until the chicken is fully cooked and the sauce is simmering.
  • Pour in the remaining coconut milk, discarding the water, and turn the heat up to bring to the boil, then return the heat to medium. Add the Thai and pea aubergines with the baby corn and sugar snap peas and simmer, stirring occasionally, for about 10 mins or until the flavours combine, the sauce thickens slightly and vegetables are tender.
  • Gradually add the fish sauce and palm sugar, stirring and tasting after each addition until you are happy. Add the lime leaves and most of the Thai basil, then cook for a further 5 mins to let their flavours infuse. To serve, pour the curry into individual serving dishes and scatter over the sliced chilli and the remaining Thai basil leaves.

400g pack frozen pollock fillets, thawed, dried and roughly chopped
1 egg
1 tbsp red Thai curry paste
2 tsp fish sauce
1 tbsp cornflour
zest and juice 1 lime
50g green beans , trimmed and finely sliced
2 tbsp sunflower oil , for frying
3 tbsp sweet chilli dipping sauce
leafy salad , to serve
