Time 45m

Number Of Ingredients 18

400 grams/14 oz. Chicken Mince
1 teaspoon Crushed garlic
1 teaspoon Chilli Paste or Sambal Olek ((see note 1))
1 teaspoon Minced ginger paste
1 teaspoon Light Soy Sauce
1 teaspoon Onion salt
1 cup Jasmine rice
12 Green beans
Optional: Dried shallots and fresh spring onions to garnish
1 garlic clove, crushed
½ teaspoon Ginger, finely grated
½ tablespoon Chilli Paste or Sambal Olek
2 tablespoons sugar free crunchy peanut butter ((Note 1))
¾ cup light coconut milk
1 teaspoon Raw honey or granulated sweetener that measures like sugar
1 teaspoon Light Soy Sauce
1 teaspoon fresh lime juice
1 tablespoons Penang Curry Paste

Steps:

  • Get the rice on, and cook according to packet instructions. (I use a rice cooker)
  • Boil a saucepan of water ready for the beans.
  • Making the meatballs: In a bowl, add the chicken mince, ginger, garlic, chilli, soy sauce and onion salt. Divide into 12 pieces and roll into meatballs.
  • Heat a large non stick frypan on medium heat and add the meatballs. After they have lightly browned, put a lid on to keep the heat in. They should take about 10 to 12 minutes to cook.
  • Making the Satay Curry Sauce: in a medium saucepan, add the garlic, chilli paste and ginger. Stir for a minute until fragrant.
  • Add the coconut milk and stir in for 1 minute
  • Add the peanut putter and stir in until it melts.
  • Add the curry paste, honey or granulated stevia (depending on which you;re using), light soy, pinch of salt and lime juice. Stir for a minute to mix it all in and then remove from heat
  • Cooking the beans: While the meatballs and curry sauce is cooking, add the beans to the saucepan of boiling water. Cook for 3 to 4 minutes and remove from the heat
  • Putting it together: add the rice, meatballs, and pour over the curry sauce. Add the beans, slice of lime, dried shallots and fresh spring onions.

BEEF SATAY WITH THAI PEANUT SAUCE

Beef Satay with Thai Peanut Sauce image

Recipe video above. Meat on sticks is always a good thing, and Thai Beef Satay is one of the best! In this beef version of Thai Chicken Satay, a secret tenderising satay marinade makes economical steak astonishingly succulent. So good, you can eat it plain - but no one in their right mind would skip the Thai Peanut Sauce!Note: Baking soda tenderised beef needs to be thoroughly cooked to be tender. The beef is still a bit chewy if it's medium or less (because we're using economical beef).Top tip: Excellent to grill on the BBQ, or even better, over charcoal for a truly authentic Thai experience.Use leftover sauce for Thai Chicken Satay, Gado Gado (Indonesian Salad with Peanut Sauce) or just douse a bowl of plain rice. You can't go wrong!

DELICIOUS THAI STYLE MEATBALLS

Delicious Thai Style Meatballs image

This is a really yummy recipe I got out of Hello Magazine years ago. The dipping sauce is a must! Serve either as a starter or serve with noodles/stir fry as a main meal. It takes a bit of prep, but is worth it!

Time 55m

Yield 4 serving(s)

Number Of Ingredients 20

1 teaspoon chopped fresh coriander
3 spring onions, chopped fine
1 teaspoon grated fresh ginger
1 garlic clove, chopped fine
1 mild chili, deseeded and finely chopped (optional)
2 tablespoons fresh lime juice
2 tablespoons light soy sauce
1 teaspoon sesame oil
1 tablespoon honey
50 g caster sugar
3 tablespoons Thai fish sauce
450 g ground lean pork
4 spring onions, chopped fine
1 garlic clove, chopped fine
2 teaspoons lemongrass, chopped fine
1 teaspoon cornflour
1 tablespoon finely chopped of fresh mint

salt and black pepper
1 tablespoon oil

Steps:

  • For the dipping sauce, whisk all the ingredients together and set aside. Start to prepare the meatballs.
  • Gently heat the sugar and fish sauce in a non-stick saucepan until the sugar has melted and mixture starts to thicken. Cool, then stir into the pork mince with the remaining ingredients mixing thoroughtly.
  • With damp hands, roll into 15-20 small balls, place on a plate and chill until ready to cook.
  • Heat the oil in a large non-stick frying pan and fry the meatballs for 15-20 minutes, until brown and cooked through.
  • As an appetizer, serve the meatballs hot accompanied by the dipping sauce. For a main meal, serve with rice/noodles and a vegetable stir fry.
  • You can also freeze the meatballs raw and cook when needed. This works well.
  • Happy chopping!
