2 cups mashed potatoes (cooled)
1 egg (beaten)
1 onion (minced)
1/4 cup all-purpose flour
1/2 cup Parmesan cheese (grated)
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Mix together the mashed potatoes, beaten egg, and onion in a medium bowl.
  • Add the flour, cheese, salt, and pepper, and stir well with a wooden spoon.
  • In a large nonstick skillet over medium heat, heat the olive oil and butter together until the butter melts and the mixture starts to sizzle.
  • Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2 inch thick. Cook the potato patties until the bottom is browned and crisp, which will take about 3 to 4 minutes.
  • Carefully turn each patty over with a spatula and cook the second side until it is brown and crisp, about 3 to 4 minutes longer.
  • Remove the patties from the pan and drain briefly on paper towels.
  • Serve the patties immediately with ketchup or salsa or any other sauce you'd like. Enjoy.

2 pounds Idaho russet potatoes
1/2 cup finely chopped onion
1 clove garlic, peeled
Salt to taste if desired
6 tablespoons butter, plus butter for greasing the dish
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
2 tablespoons finely chopped parsley
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Peel the potatoes and cut each into quarters. There should be about 4 cups. Put the potatoes in a large saucepan and add water to a depth of about one-half inch above the potatoes.
  • Add the onion, garlic and salt. Bring to a boil and cook 10 to 15 minutes or until tender. Drain the potato mixture and return to the kettle in which it was cooked. Add salt, 4 tablespoons of the butter, pepper, nutmeg and parsley.
  • Mash the potatoes to a smooth texture, using the back of a large spoon. Spoon the potato mixture into a buttered baking dish (a dish measuring 6 1/2 by 11 1/2 inches is ideal), and smooth over the top. Sprinkle with Parmesan cheese and dot with the remaining 2 tablespoons butter.
  • Meanwhile, preheat the broiler to high.
  • Place the potatoes under the broiler 3 or 4 inches from the source of heat. Broil 6 to 8 minutes or until golden brown and slightly bubbling on top.

3 large potatoes (about 2 pounds), peeled
2 large eggs, lightly beaten
1 tablespoon grated onion
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
Vegetable oil for frying

Steps:

  • Finely grate potatoes. Drain any liquid. Add eggs, onion, flour, salt and baking powder. In a frying pan, add oil to the depth of 1/8 in.; heat over medium-high (375°). , Drop batter by heaping tablespoonfuls in hot oil. Flatten into patties. Fry until golden brown, turning once. 1 pound ground beef
2 bacon strips, diced
1 teaspoon finely chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
TOMATO GRAVY:
2 tablespoons chopped green pepper
1 tablespoon chopped onion
1 can (14-1/2 ounces) diced tomatoes, undrained
1 to 2 bay leaves
1 teaspoon sugar
1/2 teaspoon celery salt
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons all-purpose flour
1/2 cup water

Steps:

  • In a large bowl, combine the beef, bacon, onion, salt and pepper. Shape into four oval patties; brown in a skillet over medium heat. Remove patties and keep warm. , Drain, reserving 1 tablespoon drippings. In the same skillet, saute green pepper and onion in drippings until tender. Add the tomatoes, bay leaves, sugar, celery salt, salt and pepper. , Combine flour and water until smooth; add to tomato mixture, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return patties to gravy. Reduce heat; cover and simmer for 30 minutes. Uncover; simmer 10 minutes longer. Discard bay leaves.
