These spicy pan-fried pork patties are flavoured with Thai red curry paste, fish sauce and cilantro. Cool them down with a side of our refreshing Cucumber Salad.

1 lb (0.5 kg) lean ground pork
1 cup thinly sliced green onions
1/4 cup finely chopped fresh cilantro
3 tbsp Thai red curry paste
1 tbsp granulated sugar
2 tsp fish sauce
1 tbsp canola oil
Cucumber Salad
1/2 cup Thai sweet chili sauce
Lime wedges, optional

Steps:

  • Combine pork, green onions, cilantro, red curry paste, sugar and fish sauce until well blended. Shape pork mixture into 12 patties, each about 2 inches in diameter. Cover and refrigerate for 30 minutes.
  • Heat oil in a large non-stick frypan over medium heat. Cook patties in batches until browned on both sides and completely cooked, about 5 minutes per side. Cooked patties may be frozen for up to 1 month.
  • To serve, use a slotted spoon and place a small amount of Cucumber Salad on individual serving plates. Top with a hot patty. Drizzle with chili sauce and garnish with lime wedges.

250g minced pork
1 garlic clove , finely chopped
3 lemongrass stalks, outer layers removed and the bottom thirds of the stalks finely chopped
1 tbsp fish sauce
handful coriander , chopped
1 tbsp sesame oil
1 tsp sugar
100g fine rice noodle
4 spring onions , chopped
sweet chilli dipping sauce , to serve

Steps:

  • Heat the grill. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with pepper. Mix well and form into 8 patties. Rub each one with the oil and a sprinkling of sugar, then place on a rack in a baking tray.
  • Grill the patties for 3 mins each side until golden brown. Meanwhile, in a large bowl, cook the rice noodles following pack instructions. Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.

400 g ground pork
1 inch fresh ginger
1/2 inch galangal
1 stalk lemongrass
1 tablespoon chili paste
1 teaspoon brown sugar
1 tablespoon turmeric powder
2 tablespoons fish sauce
5 kaffir lime leaves
10 basil leaves
1 egg

Steps:

  • Marinate the minced pork with fish sauce and chili paste. Add the turmeric powder. Add chopped the Kaffir lime leaves and basil leaves.
  • Pound to paste, the brown sugar with lemongrass, ginger and galangal; add them to the minced pork, then add an egg, Stir well, marinate for half hour. Scoop with tablespoon and fry with oil. Serve with tomato sauce.

1/2 cup bread crumbs
1 egg, lightly beaten
2 tablespoons soy sauce
3/4 teaspoon ground ginger
3/4 teaspoon ground mustard
1 pound ground pork
1 can (20 ounces) unsweetened pineapple chunks, undrained
1 medium green pepper, cut into chunks
3 green onions, sliced
3 tablespoons white vinegar
3 tablespoons water
3 tablespoons brown sugar
2 tablespoons cornstarch
Hot cooked rice

Steps:

  • In a large bowl, combine the first five ingredients. Crumble pork over mixture and mix well. Shape into four patties. , In a large skillet, over medium heat, brown patties 4-5 minutes on each side or until a thermometer reads 160°; drain. Add the pineapple, juice, green pepper and onions; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , In a small bowl, combine the vinegar, water, brown sugar and cornstarch. Add to pineapple mixture. Bring to a boil; cook and stir for 2 minutes. Serve with rice.

2 tablespoons rice vinegar
1 teaspoon crushed red pepper flakes
1 teaspoon minced garlic
2 pounds boneless pork loin chops
1 tablespoon cornstarch
1/4 cup cold water
1/4 cup creamy peanut butter
Hot cooked rice
1/2 cup chopped green onions
1/2 cup dry roasted peanuts
Lime juice and Sriracha chili sauce, optional

Steps:

  • Mix the first 4 ingredients. Place pork chops in a 3-qt. slow cooker; top with sauce. 8 oz pad thai noodle, or noodles of your choice
2 tablespoons sesame oil, divided
2 eggs
1 chicken breast, diced
¼ cup shallot
¾ cup pad thai sauce, we used 2 tablespoons each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha
1 cup bean sprout
½ cup peanuts, crushed, plus more for garnish
¼ cup green onion, plus more for garnish
¼ cup fresh cilantro, plus more for garnish

Steps:

  • Cook the noodles according to the package instructions.
  • Toss with 1 tablespoon of sesame oil and set aside.
  • Add ½ teaspoon of sesame oil to a pot with the lightly beaten eggs. When the eggs are finished cooking, set aside.
  • Pour the remaining ½ tablespoon of sesame oil into the pot and add the diced chicken breast. Cook until no longer pink in the middle, then set aside.
  • Add the shallots to the pot and cook until lightly browned and fragrant. Then, add the noodles, eggs, and chicken back into the pot.
  • Pour in the pad Thai sauce and toss to coat.
  • Top with the bean sprouts, crushed peanuts, green onions, and cilantro, and stir until well blended.
  • Dish up and garnish with extra peanuts, green onions, and cilantro.
  • Enjoy!

I have made these patties - served as a first course - with the chillis for guests who like hot and spicy food (and they've loved them) and for myself minus the chillis! Some useful conversions: 350g = a tad more than 11oz.; 50g = approximately 13/4oz.

350 g ground pork (for Americans) or 350 g pork mince (for Australians)
1 small carrot, peeled, coarsely grated
50 g green beans, topped, thinly sliced
1/2 red onion, diced
1 teaspoon ground coriander
2 tablespoons fish sauce
1 egg (optional)
2 tablespoons peanut oil
1 long green chili, halved, deseeded, finely chopped
1 lime, juice of
1 teaspoon caster sugar
1 teaspoon peanut oil, extra
1 butter lettuce, leaves separated, washed, dried

Steps:

  • Place the ground pork/pork mince, carrot, beans, onion, coriander and 1 tablespoon of the fish sauce and optional egg (if using) in a bowl; use your hands to mix until all the ingredients are well-combined; divide the mixture into 12 portions and use your hands to shape each into 2cm-thick/3/4", round 5cm/2" patties.
  • Heat the oil in a large pan, preferably non-stick, over a medium-high heat; add half the patties and cook for 3 minutes on each side or until they are golden-brown; transfer the cooked patties to a plate, cover loosely with foil and set aside; repeat with the remaining patties.
  • Meanwhile, place the chilli, lime juice, sugar, extra oil and the remaining fish sauce in a small bowl; stir to combine and set aside.
  • Place lettuce leaves on the serving plates; top with the patties and drizzle with a little of the lime mixture; serve with the remaining lime mixture.

1 1/2 teaspoons fish sauce (such as nuoc mam or nam pla)

Sauce and assembly:
1 1/2 tablespoons rice vinegar, plus more to taste
1 tablespoons sugar, plus more to taste

Herb sprigs, such as mint, cilantro and Thai basil

Steps:

  • For the patties:
  • In a large bowl, use your hands to mix together all of the ingredients, then form the mixture into twelve 2-inch patties (about 3/4 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
  • Preheat the grill for at least 10 minutes and set it up to grill over moderately high heat. Oil the grates. Grill the patties until brown grill marks form on the bottom, about 4 minutes. Flip the patties, then grill for 3 to 4 minutes longer, until cooked through but still juicy.
  • For the sauce and assembly:
  • In a small mixing bowl, whisk the vinegar with the sugar and water. Add the fish sauce, then taste and season with more vinegar or sugar, depending on your taste.
  • Arrange the lettuce leaves and herb sprigs on a platter. To serve, wrap the pork patties and herb sprigs in lettuce and dip in the sauc
