1 Hass avocados
1/3 cup extra virgin olive oil (plus more if needed)
1/4 cup grated Parmesan cheese (8 ounces)
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 to 2 garlic cloves
3/4 teaspoon Worcestershire sauce
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
4-6 small heads of romaine lettuce (washed and patted dry)
1/2 batch homemade garlic croutons

Steps:

  • Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado flesh into a food processor bowl.
  • Add the olive oil, parmesan cheese, red wine vinegar, lemon juice, garlic cloves, Worcestershire, salt and pepper. Pulse for 1 to 2 minutes until smooth and creamy. Adjust the salt and pepper if needed.
  • When ready to serve, tear the lettuce into small pieces or serve whole if it's a knife and fork salad, and top with a few spoonfuls of the dressing. Toss to combine and add more dressing if needed. Add the garlic croutons and serve.

4 hearts romaine lettuce, cleaned and chopped
2 ounce grated parmesean cheese
tomatoes (optional)

Steps:

  • To make the dressing, blend all of the ingredients except for the cheese, romaine, and tomatoes, in the blender until creamy and smooth. Chill.
  • Toss the salad greens with the dressing, garnish with the cheese and optional tomatoes. If you have leftover dressing, it will keep without turning brown, for a few days in the refrigerator.

1/2 teaspoon Dijon mustard
1 clove garlic
1 head romaine lettuce ((washed and torn into bite-sized pieces))
4 slices bacon ((cooked, cooled, and cut into pieces))
1 avocado ((cut into small cubes))
1 cup croutons
2 tablespoons Parmesan cheese ((finely grated))

Steps:

  • In a food processor fitted with a steel blade, combine all dressing ingredients.
  • Blend for 30 seconds on high.
  • Scrape down the sides with a spatula and blend for another 30 seconds - 1 minute, until dressing is creamy (as pictured above).
  • Wash and dry lettuce, and tear into bite-sized pieces.
  • Toss the lettuce with the dressing until completely coated and evenly distributed.
  • Serve with the bacon, avocado, croutons, and additional Parmesan cheese.
