- In medium mixing bowl, whisk together the Gluten Free Flour, Sugar, Baking Powder, Baking Soda & Salt.
- Add in the Buttermilk (or alternative), Melted Butter, Vanilla Extract & Eggs and beat on Medium speed just until batter is smooth.
- Allow waffle mixture to rest while you preheat the Waffle Iron.
- Grease & preheat your waffle iron according to the manufacturer's instructions. (We prefer to lightly spray ours with a Non-Stick Spray after the indicator shows 'Ready' and right before we add the mixture).
- Bake the waffles according to your waffle iron's instructions. To keep finished waffles warm as you continue baking, you can place them in a preheated 200°F oven, directly on the rack..

GLUTEN-FREE WAFFLES
So far this is the best I've come up with for waffles. They get a nice crispy outer shell in my waffle iron that I find delicious. Be warned: you have to like buckwheat to like these. Using half creamer and half milk is pretty awesome if you don't mind the extra fat/calories. You can substitute applesauce for the oil, if desired.

These waffles are delicious! Perfect crispness outside and light as a feather on the inside! Remember to allow them to brown to a dark golden color for an absolutely amazing waffle! Yum Yum!!!

- Add all dry ingredients to a large bowl and mix well.
- Separate the eggs.
- In a medium bowl, beat egg whites until stiff peaks form.
- Mix together the egg yolks, milk, oil, seltzer water, oil and mix.
- Add dry ingredients to to egg/milk/oil/seltzer/oil mixture and beat on high speed for 3 minutes.
- Fold in egg whites.
- Cook in waffle maker until deep golden brown for a great crunch and light fluffy inside and enjoy!
