HOT DOG ONION SAUCE

Steps:
- In a medium skillet, heat oil over medium heat.
- Add onion slices.
- Saute about 7-10 minutes until golden& limp.
- Mix in the ketchup.
- Add the cinnamon, chili powder, garlic powder,hot pepper sauce& salt.
- Pour in water.
- Stir.
- Bring to a boil.
- Reduce heat and simmer uncovered about 10 minutes.

I love the push cart hot dogs, mainly because of the onions they serve on top...so I mixed and matched many different ingredients until I came up with the perfect combination for this recipe! This tastes just like the kind of onions I often would get from my favorite hot dog stands!

Steps:
- Heat the corn oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the hot sauce, yellow mustard, sugar, chili powder, salt, black pepper, and cayenne pepper. Reduce heat to medium-low, and continue to cook for about 5 minutes. Stir in the water and tomato paste; simmer until liquid has reduced, about 20 minutes.

NEW YORK HOT DOG CART ONION SAUCE
Born in the Bronx, raised in Queens. My father worked for Pan Am in the day (data Control), drove a New York Cab at night, and on the weekends he owned a New York Hot Dog Cart. Before he passed away in February of 2004, he did give me the recipe to the Onion Sauce. When everybody else is saying to use pasta sauce, and this and that, the truth is there are only six ingredients. Bobby Flay is about the only one who got it close. In New York a true New York Hot Dog ordered from a cart is, Nathan Hot Dogs, Mustard, Onion Sauce, and topped with Sauerkraut. I wanted to write this recipe for a long time but after seeing so many Onion Sauce recipes, and hearing how so many people are from New York, it is time to post the original recipe.

Steps:
- In a small sauce pan place vegetable oil, and onions.
- Cook over medium heat; saute until onion is soft; don't burn it.
- Quickly add ketchup, water, stir.
- Stir for at least 20 minutes or until the water is reduced about 1/2.
- Note: I had to mention a measurement in order for this recipe to go through. The truth is to use a pinch of cinnamon and a pinch of salt.
- This is the true recipe for Onion Sauce for New York Hot dogs.
- When I use the sauerkraut I boil it with added water to make it softer.

THE BEST HOT DOG ONION SAUCE
This Onion Sauce is a staple at most hot dog carts - spicy, smoky and full of flavor, this Hot Dog Onion Sauce will make your dog the best in taste!

Steps:
- Over medium heat, heat the oil in a medium saucepan or heavy bottomed dutch oven.
- Add the thinly sliced onions to the oil and cook for 5 minutes or so, until the onions are soft.
- Sprinkle in the ancho chile powder, cinnamon and smoked paprika. Saute for another minute or so.
- Add 1 cup of water, ketchup, hot sauce, mustard, brown sugar, salt and brown pepper.
- Cook until the sauce has thickened and the onions are soft - about 25 - 30 minutes. If you need to add more water, feel free.
- Let cool before serving.
- Top your hot dog with some of the spicy brown mustard, a bit of the Hot Dog Onion Sauce and enjoy!
