Just like its big relative, cauliflower crust pizza, but better! Easy and fun to eat, it's sure to be a crowd pleaser!

1 large head cauliflower, cut into large chunks
2 ½ cups shredded mozzarella cheese, divided
½ cup freshly grated Parmesan cheese
1 egg
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
⅓ cup pizza sauce

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a muffin tin with parchment paper squares.
  • Grate cauliflower into a microwave-safe bowl using a fine grater. Chop up any remaining pieces that are too small to grate but too big for the crust.
  • Microwave cauliflower until soft and tender, 4 to 6 minutes. Pour cauliflower into a clean dish towel cool easily handled, 15 to 20 minutes.
  • Wrap the towel around the cauliflower and squeeze out as much liquid as possible; the drier the cauliflower is, the better it will hold together as a crust once mixed with the other ingredients.
  • Combine cauliflower, 1 cup mozzarella cheese, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder in a large bowl.
  • Scoop cauliflower crust mixture into prepared muffin tin, dividing the mixture evenly among the cups. Pat down cauliflower mixture with the back of a spoon, making it compact.
  • Bake in the preheated oven until golden brown, about 15 minutes.
  • Spoon a small amount of pizza sauce onto each cauliflower crust. Top with remaining 1 1/2 cups mozzarella cheese, dividing evenly among the crusts.
  • Bake until golden brown and cheese is melted, about 15 minutes. Let sit in pan for 5 minutes before moving each bite to a cooling rack. Let cool for 10 minutes. Peel parchment paper squares off the crusts and serve on a platter.

3 cups cauliflower rice
2 eggs
3 tbsp coconut flour
1 tsp baking powder
1 tsp garlic powder
1 tsp Italian seasoning
1/3 cup Paleo friendly pizza sauce
12 nitrate free, sugar free Pepperoni slices
2 tbsp sliced black olives
fresh basil leaves (optional)
salt to taste

Steps:

  • Preheat oven to 350°F.
  • Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
  • Mix to combine.
  • Cover with a lid.
  • Microwave at 600W for 5 minutes.
  • Remove from the microwave oven and allow to cool completely.
  • Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
  • Transfer the cauliflower to a bowl.
  • Add the eggs, coconut flour, baking powder, garlic powder and Italian seasoning.
  • Season to taste with salt and black pepper.
  • Mix to combine.
  • Line a large baking sheet with parchment paper.
  • Scoop out mixture 2 tablespoons at a time and shape into rounds ½ inch thick.
  • Bake in preheated oven for 20-25 minutes or until golden brown.
  • Remove from the oven.
  • Top each cauliflower base with pizza sauce and pepperoni.
  • Bake for 5 minutes.
  • Remove from the oven, top with sliced olives and basil leaves and serve.

Who says you can't have pizza when you are living the keto lifestyle? These protein-packed cauliflower bites are cheesy and packed with the same flavors you'll find on a classic slice --garlic, onion, Italian seasoning and some red chile flakes, for heat. We add a touch of jarred marinara sauce to the mix and also serve more sauce warm on the side. Just make sure the one you use is keto-approved and has no added sugar.

1 small head cauliflower (about 1 1/2 pounds), green leaves and core removed, cut into medium florets (about 4 cups)
1/4 cup fresh flat-leaf parsley leaves
1 large egg plus 1 large egg yolk
1/4 to 1/2 teaspoon red chile flakes
1 1/4 teaspoons Italian seasoning
1 1/4 teaspoons onion powder
1 1/4 teaspoons garlic powder
Kosher salt
3/4 cup almond flour (about 3 ounces)
2 tablespoons keto-approved marinara sauce, plus additional for serving
1/4 cup plus 1 tablespoon finely grated Parmesan (about 1 1/4 ounces)
1 cup finely shredded Italian cheese blend (about 3 1/2 ounces)
Nonstick extra-virgin olive oil spray

Steps:

  • Put the cauliflower and 1/4 cup water into a medium heat-safe glass bowl. Wet a paper towel and lay over the cauliflower. Microwave until fork-tender, 6 to 8 minutes, depending on your microwave. Carefully remove the paper towel, transfer the cauliflower to a food processor (leaving any water behind in the bowl) and cool for 10 minutes. Clean out the glass bowl and set aside.
  • Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment and set aside. Stir together 1 tablespoon of the Parmesan and 3 tablespoons of the Italian cheese blend in a small bowl, then set aside.
  • Add the parsley to the food processor and pulse until the cauliflower is finely chopped and similar to the texture of rice. Transfer to a large clean kitchen towel and wring out any excess water.
  • Transfer the cauliflower mixture to the reserved bowl along with the whole egg, egg yolk, red chile flakes, Italian seasoning, onion powder, garlic powder, 3/4 teaspoon salt, almond flour, marinara sauce and the remaining 1/4 cup Parmesan and 3/4 cup plus 1 tablespoon Italian cheese blend. Use your hands to mix everything together until well combined.
  • Scoop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them evenly apart, for about 28 total. Lightly wet your hands, then roll each mound into a round ball, re-wetting your hands as needed. This helps keep your hands from becoming sticky and makes rolling the mix much easier to do. Spray the balls with the cooking spray and sprinkle the tops with the reserved cheese mixture, pressing the cheese gently onto the tops to help it adhere.
  • Bake in the oven until light golden brown and cooked through, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
  • Transfer to a platter and serve with additional warm marinara sauce alongside, for dipping.

Start with cauliflower florets and turn them into cauliflower rice. Then, add cheese, spices, and egg, and bake the crust until it's golden-brown. Add your favorite toppings and call it pizza night.

1 head cauliflower
½ cup shredded mozzarella cheese
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon garlic powder
1 egg

Steps:

  • Preheat oven to 500˚F (260˚C).
  • Remove the leaves and stem of the cauliflower.
  • Transfer pieces to a food processor and rice the cauliflower by pulsing it in the food processor, or by shredding it on a box grater.
  • Once riced, transfer to a large bowl and microwave for 4 minutes. Let it cool down for a few minutes before handling!
  • Transfer cooked cauliflower to a clean towel and wring out as much liquid as possible.
  • Place wrung cauliflower in a bowl and combine with mozzarella, oregano, basil, salt, garlic powder, and an egg. Mix well.
  • Line a baking sheet with parchment paper.
  • Place cauliflower mixture in the middle. Spread out the mixture and form a circle out of the cauliflower mixture, pushing along the edge to raise a "crust."
  • Bake for 15 minutes, or until the crust has become golden brown in the center and on the edges.
  • Top with your favorite pizza sauce and toppings, being careful not to overload the pizza.
  • Bake for another 5-7 minutes, or until the cheese has fully melted.
