1 pound catfish, flounder or other delicate-texture fish fillets
1/4 cup yellow cornmeal
1/4 cup dry bread crumbs
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/4 cup French or ranch dressing

Steps:

  • Heat oven to 450°. Spray broiler pan rack with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Mix cornmeal, bread crumbs, chili powder, paprika, garlic salt and pepper. Lightly brush dressing on all sides of fish. Coat fish with cornmeal mixture.
  • Place fish on rack in broiler pan. Bake uncovered 15 to 18 minutes or until fish flakes easily with fork.

Crunchy catfish nuggets that can be served as hors d'oeuvres. These were a special hit with my 3 year old who loved the fact that she could eat them like finger food. You may want to adjust the seasoning - my daughter is used to spicy stuff! These have the great taste of fried fish without the grease.

½ cup dry bread crumbs
½ teaspoon lemon pepper
½ cup egg substitute
2 (4 ounce) fillets catfish, cut into 1 inch pieces
2 tablespoons vegetable oil

Steps:

  • In a small bowl, mix dry bread crumbs and lemon pepper. Place egg substitute in a separate small bowl. Dip catfish pieces in the egg substitute, then into the bread crumb mixture to coat.
  • Heat oil in a medium skillet over medium heat. Place coated catfish pieces in the hot oil. Fry on both sides until lightly browned and fish is easily flaked with a fork, about 15 minutes. Drain on paper towels.

1 teaspoon seasoned salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/3 cup butter, melted
4 catfish fillets (about 8 ounces each)

Steps:

  • In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork.

oil for deep frying
1 cup matchstick-cut green mango pieces
½ cup shallots, thinly sliced
½ cup chopped fresh cilantro
¼ cup chopped green onions
¼ cup peanuts
4 tablespoons fish sauce
2 tablespoons lime juice, or more to taste
3 Thai chiles, finely chopped, or to taste
1 teaspoon white sugar

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Place catfish on a baking sheet.
  • Roast in the preheated oven until flesh is opaque, 10 to 15 minutes. Flake into large pieces with a fork. Lay the flaked fish out on a plate to dry.
  • Heat oil in a large pan over medium-high heat. Fry fish in batches until golden brown, about 5 minutes. Try not to break up the fish too much in the pan.
  • Toss mango, shallots, cilantro, green onions, peanuts, fish sauce, lime juice, Thai chiles, and sugar together in a large bowl. Toss in crispy catfish at the very last minute. Check the seasoning; the salad should taste sour, hot, and salty, with a slight sweetness at the end.

1 Table fresh line juice

1 Table brown sugar
1 tea chile paste
1 tea minced fresh Thai chile
1 1/2 lb whole catfish or catfish fillets
1 Table flour
1 head romaine lettuce, cut into bite-size pieces
2 Table minced lemongrass
1 Table thinly sliced shallot
1 Table chopped cilantro stems
1/2 cup chopped reasted peanuts
1 Table crispy fried garlic
1 table dried shrimp, soaked in warm water 20 minutes, drained, finely chopped

Steps:

  • Preheat grill. Make marinade. Add fish and turn to coat. Let stand 10 minutes. Make dressing. Set aside. Drain fish from marinade. Place fish on lightly oil grill. Grill 5 to 7 minutes per side Butterfly fish, carefully remove spine, head and tail. Press fillet firmly with a fork to compress it; dust with flour and shake lightly to remove excess. In a wok, heat oil for deep-frying to 375. Deep-fry fish, turning once, until golden brown, 3 to 4 minutes. Remove with slotted spoon and drain on paper towels. 2 lbs catfish fillets
oil (for frying)

Steps:

  • In a shallow bowl, whick together the egg and milk.
