THE GREEN MAN'S MEATLOAF
One of my favorite comfort foods of all time is meatloaf, we have it for dinner, then have the leftovers for sandwiches for lunch the next day. This spinach packed meat loaf is a big winner in my books!!

Steps:
- Place the beef, pork, bread crumbs, spinach and other greens in a large bowl, and mix lightly.
- In a separate bowl, mix all the wet ingredients, tomatoes, pepper and salt. Pour this over the meat mixture, and mix until it comes together.
- Form the mixture into a loaf on a sheet pan, and refrigerate for 1 hour.
- Preheat oven to 350°F Bake for 1 hour and 15 minutes or until the internal temperature reaches 165°F Let stand for 5 minutes before serving.
- EMBELLISHMENT: Some people like a glaze on meat loaf. If you are one of these people, simply brush the outside of the loaf with ketchup halfway through the cooking process.

This meatloaf is now considered our family recipe for the perfect meatloaf! With a little of this and a little of that, it yields just the right amount to satisfy even the pickiest of eaters! Steps:
- Place a large cast iron skillet in the oven. Preheat oven to 375 degrees F (190 degrees C).
- Combine ground beef, Italian bread crumbs, noodle soup mix, 1/2 the tomato sauce, eggs, onion, ketchup, cracker crumbs, 1 tablespoon Worcestershire sauce, barbeque sauce, steak sauce, salt, 1 1/2 teaspoons black pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder in a large bowl; mix well.
- Mix remaining tomato sauce, 1 tablespoon Worcestershire sauce, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and cayenne pepper in a small bowl until topping is smooth.
- Remove skillet from the oven. Place ground beef mixture in skillet, smoothing the top. Spread topping over beef.
- Bake in the preheated oven until beef is mostly cooked through, about 1 hour 30 minutes. Remove from oven and drain off grease. Return to the oven and continue cooking until meatloaf juices run clear and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 1 hour more.
- Remove meatloaf from oven and allow to cool for 15 minutes before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

TAVERN ON THE GREEN'S MEATLOAF
My friend gave me this recipe and it's a great variation on your ordinary meatloaf. Prep time includes overnight refridgeration.

Steps:
- In a large bowl, beat together the eggs and milk.
- Add the torn bread and let it absorb the liquid for about 15 minutes.
- Meanwhile, cook bacon (very crispy but not burnt) until most but not all of the fat is rendered. Drain and set aside to cool.
- Stir the bread mixture with a fork to blend.
- Add the remaining meatloaf ingredients, including the drained bacon, but not the beef, and mix thoroughly.
- Fold in the beef and mix to incorporate throughout, being careful to avoid mashing or overhandling the meat.
- Cover bowl and refrigerate overnight.
- When ready to cook, preheat oven to 375 degrees.
- Remove bowl from the refrigerator and shape meat into a loaf approximately 5 inches long and 3 inches high.
- Place in the middle of a low-sided baking pan and bake for 35 minutes.
- In a small bowl, whisk glaze ingredients together.
- Brush meatloaf with glaze and bake for another 20 minutes.
- Remove meat loaf from the oven and let it sit for a few minutes before slicing and serving.

MAN'S MEATLOAF
This is a big, hearty meatloaf the stays juicy and doesn't dry out while cooking. I found the recipe in a cookbook and added some of my own little favorites

Steps:
- Preheat oven to 350 degrees.
- In a medium skillet, saute the onion, bell pepper and garlic until translucent. Drain.
- Combine the onion, bell pepper and garlic with all other ingredients except for the bacon in a large bowl. Mix well.
- In a medium casserole dish, form the mix into a loaf about 8-10" long and 4-6" wide.
- Cut bacon slices in half and place over loaf forming a covering over the entire loaf.
- Cover the dish with aluminum foil and bake for 1hr 30 minutes. Serve hot!
