A delicious crispy and sweet, yet mildly spiced beef stir-fry recipe. Great served with steamed rice and broccoli.

1 ½ pounds beef top sirloin, thinly sliced
⅓ cup white sugar
⅓ cup rice wine vinegar
2 tablespoons frozen orange juice concentrate
1 teaspoon salt
1 tablespoon soy sauce
1 cup long grain rice
2 cups water
¼ cup cornstarch
2 teaspoons orange zest
3 tablespoons grated fresh ginger
1 ½ tablespoons minced garlic
8 broccoli florets, lightly steamed or blanched
2 cups oil for frying

Steps:

  • Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.
  • Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary.
  • Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.
  • Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

Number Of Ingredients 26

To Marinate And Cook Beef:
8 ounces flank steak, cut into slivers 1-inch long by ½ inch wide by ¼-inch thin.
½ tsp baking soda
3 tbsp vermouth
½ tsp Shaoxing rice wine or dry sherry
Pinch freshly ground pepper
1 tbsp peanut oil
2 tbsp cornstarch
1/3 cup of fresh orange rind that has been julienned into 1-inch lengths
3 ½ cups peanut oil
1 tbsp egg white, lightly beaten
2 tbsp cornstarch
For Sauce:
2 Tablespoons sugar
1 Tablespoon sweetened Chinese black vinegar
1 Tablespoon Chinkiang vinegar (or use one additional black, if you can't find it)
1 Tablespoon shaoxing wine (or substitute dry sherry)
2 teaspoons soy sauce
1 teaspoon cornstarch
For Aromatics:
½ cup scallions, sliced diagonally into ½ inch pieces, white part only
¼ cup finely julienned ginger and sliced garlic - i.e. 1/8 cup of each
1 teaspoon sesame oil
1 Tablespoon Grand Marnier
1 ½ teaspoons Szechuan chili paste
1 fresh Thai chili, minced

Steps:

  • In a bowl, mix the steak, baking soda and vermouth, and marinate in the refrigerator for a minimum of 4 hours or preferably overnight.
  • After marinating, wash thoroughly, twice, with cold water. Drain and dry with paper towels. Place the beef in a bowl, add the egg white, and mix well until the beef is coated. Add the shaoxing, white pepper, 1 tbsp peanut oil and cornstarch, mixing with your hand each time an ingredient is added. Allow to rest for 1 hour, refrigerated. There should be no residue.
  • In a hot wok, add the peanut oil and heat to 400 deg F. Place the beef strips, one at a time, in the oil and cook for 1 ½ minutes, loosening the beef with a spatula. Remove with a strainer and drain. Heat the oil again to 425 deg F. Place the beef strips back in the oil and cook for 2 minutes, until the beef becomes crisp. Remove and allow to drain.
  • In a bowl, mix sugar, vinegars, shaoxing, soy sauce, and 1 teaspoon of cornstarch.
  • Drain off all but 1 tablespoon oil from the wok and heat over high heat for 20 seconds.
  • Add scallions, ginger, garlic, beef, minced Thai chili, sesame oil, shaoxing-soy sauce blend, orange rind, Grand Marnier and chili paste. Stir-fry for 30 seconds. Remove from heat and serve immediately.

8 ounces flank steaks, cut into pieces 1 inch long, 1/2 inch wide, and 1/4 inch thick
1 1/2 teaspoons baking soda
1 orange
2 tablespoons sugar
2 tablespoons red wine vinegar
1 tablespoon rice wine or 1 tablespoon dry sherry
1 tablespoon soy sauce
1 teaspoon cornstarch
vegetable oil, for passing through
1 cup cornstarch
1 large egg white, lightly beaten
3 scallions, white part only, trimmed and sliced diagonally into 1/2-inch
1 teaspoon dark sesame oil
1 tablespoon orange liqueur, such as Grand Marnier
1/4 teaspoon chili paste

Steps:

  • Mix the flank steak, baking soda, and 3 tablespoons of water in a medium bowl. Cover, and refrigerate for 4 hours or overnight. (The baking soda will tenderize the steak.).
  • Using a vegetable peeler, remove the colored zest from the orange. Cut the zest into thin strips about 1 inch long, and set them aside. Save the orange flesh for another use.
  • To begin the sauce, mix the sugar, vinegar, rice wine, soy sauce, and cornstarch in a small bowl. Set it aside.
  • Heat a large wok over high heat. Add enough vegetable oil to come about 1½ inches up the sides of the wok, and heat it to 375 degrees. Meanwhile, add the cornstarch and egg white to the steak, and mix well to coat the steak with the batter.
  • Add the flank steak to the oil, one piece at a time so it doesn't splash or stick together, and stir gently until it begins to look crispy, about 1 minute.
  • Using a wide-mesh wire strainer, transfer the steak to a colander to drain. Using a fine-mesh wire strainer, remove any bits of fried batter from the wok.
  • Reheat the oil to 375 degrees, return the flank steak to the wok, and fry again until the beef is crispy all over, about 2 minutes. Transfer to a strainer to drain. Discard all but 1 tablespoon of the oil from the wok.
  • Return the wok with the oil to high heat. Add the scallions, flank steak, sugar-vinegar mixture, orange zest, sesame oil, Grand Marnier, and hot chile paste. Stir-fry until all of the ingredients are well blended, about 30 seconds. Serve immediately.
