MUST-TRY CUCUMBER SANDWICH RECIPE
Easy cucumber sandwich recipe without cream cheese perfect for parties, picnics, or light lunches! You'll love the creamy labneh spread with olive oil and plenty of fresh herbs! Use soft white sandwich bread (as fresh as possible!) and English cucumbers for best results. If using garden cucumbers, be sure to peel off the waxy skin first. Serve cucumber sandwiches with other finger foods and little desserts like tomato and feta bites, antipasto skewers, biscotti, and butter cookies.

Steps:
- In a small mixing bowl, combine the labneh, chopped fresh herbs, and a dash of kosher salt. Add a drizzle of extra virgin olive oil. Mix well.
- Arrange the bread slices on a large cutting board and spread one side of each slice with a generous spoonful of labneh.
- Arrange the cucumber slices on half of the bread slices, overlapping the cucumbers so they will fit well. Top with the other slice of bread (you should have 4 cucumber sandwiches at this point).
- Pressing down gently, cut each cucumber sandwich into quarters (triangles or rectangles will work as well).
- Arrange the sandwiches on a plate and serve with a garnish of dill. (If you have any cucumber slices left, you can arrange them on the plate as well). Enjoy!

- I don't usually peel the cucumber but you can do so if preferred.Thinly slice your cucumber. You can do it in circles or lengthwise, however you like. Use a sharp knife or a mandoline slicer for even thin slices.
- Spread the butter one slice of bread. Then spread cream cheese over the other.
- Place the cucumber slices over the slice with cream cheese, then top with the dill (or your chosen herbs).Finally, cover with the last piece of bread and, if you prefer, cut off the crusts.

Cucumber sandwiches are made with fresh springy white or brown bread, lightly buttered, and with the crusts cut off - the perfect cool summer snack to go with your afternoon tea. This recipe idea came from a friend who was lucky enough to attend a Garden Party at Buckingham Palace - she swears this is how they made them! Cucumber sandwiches achieved literary notoriety in Oscar Wilde's play The Importance of Being Earnest (1895) when Algernon devours an entire plate full in the first act and there are none left for his aunt, Lady Bracknell. They are presented by Jack as being a delicacy: "Hallo! Why all these cups? Why cucumber sandwiches? Why such reckless extravagance in one so young? Who is coming to tea?"

Steps:
- Peel cucumber and slice in paper-thin rounds. Salt rounds lightly and place in colander for 15 minutes to drain. Press to release water; pat dry with paper towels.
- Spread sliced bread with softened butter. Put 2 layers of cucumber slices on bottom slice, sprinkle with finely chopped mint, salt and pepper to taste, and top with another buttered slice. Press lightly with palm of hand.
- Cut all crusts off with a sharp knife. Cut sandwiches in half diagonally and then again into quarters.
- Serve in alternate rows of brown and white bread sandwiches, points facing up!
