Sighing at what's leftover from your Christmas feasting? This quick recipe makes ingenious use of the ends of the cheeseboard, odd nuggets of stuffing and even the last spoonfuls of gravy.

1 tbsp olive oil
1 small onion, finely sliced
2 tbsp cranberry sauce
4 smoked streaky bacon rashers
80g leftover stuffing
50g butter, softened
4 thick slices white bread
4 tbsp leftover gravy
4 slices leftover turkey
100g leftover cheese, such as cheddar or gruyère

Steps:

Heat the oil in a pan over a medium heat. Fry the onion for 10-15 minutes until browned. Add the cranberry sauce and fry for a few minutes more.
Meanwhile, cook the bacon in a frying pan over a medium-high heat for 5 minutes until golden and crisp. Set the bacon aside on kitchen paper, then add the stuffing to the pan. Fry for 3 minutes or until starting to crisp.
Butter one side of each bread slice. Put 2 slices, buttered-side down, on a work surface and top each one with 1 tbsp gravy, then layer each with half the onion, bacon, turkey, stuffing, cheese and remaining gravy. Sandwich with the non-buttered side of the remaining 2 bread slices.
Heat the grill to high. Melt the rest of the butter in a pan on a medium heat and fry both sandwiches for 3-4 minutes on each side until golden, then put under the grill for 5 minutes more until the cheese is oozing.

Another family fav using holiday leftovers. There are variations depending on preferences(for instance DH won't eat mustard or mayo - I know weird, huh?) but I am posting the full nine yards and the way I like it. Adjust according to your tastes, but try it this way if you can, it is DA BOMB! I have used mashed potatoes in place of the stuffing when we ran out of stuffing....still good. *NOTE- I use my Recipe #259563 not pie filling.

2 -3 slices honey-baked ham, as much as desired
2 slices bread (I prefer a wheat and grain like Poulsbo for this)
mayonnaise, to taste (optional)
mustard, to taste
cream cheese, to taste
2 -3 ounces apple pie filling, to taste (Drunken Apples - Like Famous Dave's is my preference or applesauce could be subbed if you have no sliced baked apples)
2 -3 ounces baked beans, to taste (lightly smashed so they stay on if desired, Dad's recipe preferred)
1 -2 slice cheddar cheese
2 -3 slices tomatoes
2 leaves romaine lettuce (or preferred lettuce as desired) (optional)
2 -3 ounces mashed potatoes, to taste
2 -3 tablespoons ham gravy, to moisten potatoes if desired (optional)

Steps:

On one slice of bread mix a bit of mayo (if used) and mustard to lightly cover bread.
Layer ham, baked beans, cheddar, mashed potatoes and spoon desired amount of gravy (if desired to moisten) then spoon a small amount of cinnamon apples on top (although order isn't terribly important).
Top with tomato and lettuce.
Spread cream cheese on final piece of bread.
Enjoy (grab a napkin and maybe a fork in case it gets messy!) ;).

4 Ball Park® Hot Dog Buns
4 ounces cream cheese
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
1 cup mixed salad greens
8 slices leftover roast turkey, warmed
4 tablespoons cranberry sauce, warmed

Steps:

Preheat oven to 425 degrees F and toast buns till golden brown.
Combine cream cheese, chives and parsley.
Spread 1 tablespoon of herbed cream cheese over toasted buns of each sandwich. Then layer with spring mix and sliced turkey.
Top with cranberry sauce.

Take your Boxing Day sarnie to the next level. Hollow out a loaf of bread and layer up all your Christmas leftovers inside it to make a lip-smacking sandwich

400g white round crusty loaf
2 tbsp mayonnaise
2 tsp English mustard
3-4 tbsp cranberry sauce
handful of baby spinach
3-4 tbsp crispy onions
250g leftover roast turkey
6 leftover cooked pigs in blankets, halved lengthways
150g leftover cooked stuffing

Steps:

Slice a roughly 3cm lid off the top of the loaf. Scoop out most of the bread from the loaf and lid, leaving about a 1cm layer (you can use the scooped-out bread for croutons or in another recipe).
Combine the mayonnaise and mustard, then spread 2 tbsp over the inside of the loaf, and 1 tbsp inside the lid. Spoon most of the cranberry sauce into the lid, followed by half the spinach, the crispy onions, and half the turkey. Arrange the rest of the turkey in the base of the loaf, followed by the rest of the cranberry sauce, the pigs in blankets, stuffing and remaining spinach. Top the loaf with the stuffed lid, press down lightly, then tightly wrap and chill for at least 3 hrs. Slice into four or six wedges to serve.
