THERMOMIX APPLE LOAF

Our Thermomix Apple Loaf recipe makes a great sweet treat for the whole family.

Time 1h

Number Of Ingredients 8

225 grams self raising flour
165 grams caster sugar
125 grams butter (softened)
1 tsp vanilla extract
2 eggs
130 grams milk
1 apple
1/2 tsp cinnamon

Steps:

  • Preheat your oven to 180 degrees (fan-forced) and line the base and sides of a large loaf tin with baking paper.
  • Peel the apple and roughly chop it into pieces no bigger than 1cm. Place the apple pieces into a small bowl and add the cinnamon before gently stirring to combine. Set aside until needed.
  • Place the self raising flour, caster sugar, butter, vanilla extract, eggs and milk into your Thermomix bowl and mix for 15 seconds, speed 5.
  • Scrape down the sides of the bowl and mix for a further 10 seconds, speed 4 or until the mixture is smooth and well combined.
  • Pour the mixture into your prepared loaf tin and sprinkle the apple pieces over the top.
  • Place the Apple Loaf into your oven and bake for 50 - 55 minutes or until cooked when tested with a skewer. Carefully remove your Apple and Cinnamon Loaf from the oven and allow it to cool in the loaf tin for 10 minutes before transferring to a wire rack to cool completely.

2 cups Bisquick™ Gluten Free mix
1 cup shredded zucchini (about 1 medium)
1 small unpeeled apple, shredded (1/2 cup)
3/4 cup sugar
1/3 cup vegetable oil
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon gluten-free vanilla
3 eggs

Steps:

  • Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray (without flour).
  • In large bowl, beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 1 minute, scraping bowl occasionally. Pour batter into pan.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 2 hours. To store, wrap tightly in plastic wrap or foil.

Number Of Ingredients 16

1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 jar (4-1/2 ounces) diced apple baby food
1 large egg
1 tablespoon canola oil
1 cup finely shredded zucchini
TOPPING:
1/4 cup quick-cooking oats
1/4 cup sweetened shredded coconut
1/4 cup packed brown sugar
2 tablespoons butter, melted
Dash ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder and salt. Drain apples, reserving juice. In another bowl, whisk the egg, oil and reserved juice. Stir into dry ingredients just until blended. Fold in zucchini and apples until moistened., Pour into an 8x4-in. loaf pan coated with cooking spray. Combine topping ingredients; sprinkle over top. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
