GIRL SCOUT THIN MINT PIE
I got this recipe from a friend on Facebook. Simple and delicious, as if we need another way to eat thin mint cookies!

Steps:
- Remove 10 cookies and set aside.
- Crush or process remaining cookies, then mix them with the butter. Press firmly onto bottom and up side of 9-inch pie plate.
- Pour milk into large bowl. Add both boxes of pudding mix and beat with wire whisk 2 minutes or until well blended. (Mixture will be thick.).
- Spoon out 1 1/4 cup of pudding into another bowl and stir in peppermint extract. Pour peppermint pudding mixture over crust. To remaining pudding mix, add in 1 cup of whipped topping. Spread the pudding/whipped topping layer of the mint layer.
- Chop remaining cookies and combine them with about 2 ½ cups (doesn't have to be precise) whipped topping. Spread this mixture over the top. The pie might look kind of messy at this point, so clean up the edges.
- Chill for 4 hours or until set.
- To garnish, place remaining whipped topping in a plastic zipper bag. Snip off a corner of the bag (about ½ inch up from corner) and squeeze whipped topping around sides decoratively.
- To make thin zig-zags, pour COLD chocolate syrup into a small zipper bag. Snip a very, very tiny cut off the bottom corner and drizzle away!

- Beat 1 cup heavy cream, 1/4 cup confectioners' sugar and 1/2 teaspoon vanilla until stiff peaks form. Fold in 6 finely chopped Thin Mints. Refrigerate until ready to serve. Place 1 small scoop mint chip ice cream into each of 6 mini graham cracker pie crusts. Spread until smooth, then freeze until firm. Top with the whipped cream, crushed Thin Mints and a Thin Mint half.

This pie is soooo good!!! It is highly requested by anyone whom has tasted it. It does taste like a Girl Scout Thin Mint Cookie, but using some Dove Chocolate Discoveries products. Very Semi-Homemade & Easy! I like to serve this at holiday gatherings, Dove Chocolate Discoveries (DCD) Tasting Parties, or to give as a gift!

Steps:
- Thaw your container of cool whip!
- MOUSSE:.
- Melt chocolate slowly in microwave (stirring at 20-second increments until fully melted - 3 is the most I do) and set aside.
- Pour the heavy cream into the bowl and while whipping with an electric mixer, slowly pour in entire contents of the Mousse Mix pouch.
- When the cream is thoroughly whipped (stiff peaks), pour in the melted chocolate and mix thoroughly. Pour into prepared pie crust.
- TOPPING:.
- make sure you have thawed your container of cool whip and stir in 1 package of the Dove Chocolate Discoveries Vanilla Chai Tea mix.
- Spread on top of Mousse filling.
- Crush 1 Dove Chocolate Discoveries chocolate covered Graham Cracker and sprinkle on top.
- You can also dust the top with the DCD Creme Blanc Dusting Powder and/or more chocolate shavings/curls. Use your imagination!
