This traditional French Onion Soup recipe has a rich, decadent broth loaded with caramelized onions and topped with everyone's favorite part: the toasted bread and melty cheese.

8 tablespoons butter
4 tablespoons canola oil
6 pounds yellow onions (, sliced 1/4 inch thick with the grain)
1/2 cup sherry wine
1/2 cup red wine
1/8 cup tomato paste
1/4 cup garlic purée
1 bouquet garni
4 tablespoons concentrated beef base
10 cups chicken stock
thyme leaves for garnish
1 baguette (, cut into 1 inch slices)
8 slices provolone cheese
2 cups shredded gruyere cheese (, (optional))

Steps:

  • In a large stock pot or dutch oven, melt the butter and canola oil together over high heat and add the onions. Sauté, stirring occasionally until they start to caramelize, about 15 minutes. Reduce the heat to medium high and continue to sauté until the onions are a deep brown color, about 1 hour.
  • Deglaze with the sherry and red wine and cook until the liquid is nearly evaporated.
  • Stir in the tomato paste and garlic purée. Add the bouquet garni, chicken stock, and beef base and bring to a simmer and cook for 45 minutes.
  • Skim the butter fat/foamy liquid from the top, and discard. Taste for seasoning and add salt or pepper as desired. Remove the bouquet garni.
  • Ladle the soup into oven-safe bowls and top with 2-3 slices of the baguette, then top with a slice of provolone cheese and grated gruyere if desired. Place the bowls on a baking sheet and broil for 3-4 minutes or until the cheese is melted. Garnish with fresh thyme leaves and serve.

We took the best part of this classic soup, all the sweet caramelized onions, and left behind all the fat. By steaming the onions to get the caramelization started, you can eliminate the need for almost all the fat. A small sprinkling of a good cheese at the end goes a long way.

1 tablespoon unsalted butter
1 teaspoon extra-virgin olive oil
1 1/2 pounds yellow onions, peeled, halved, and thinly sliced, (about 6 cups sliced)
6 shallots, thinly sliced, (1 3/4 cups)
1 leek, white and light green part thinly sliced, washed well, and dark green top reserved
Kosher salt and freshly ground black pepper
3 to 4 fresh thyme sprigs
1 fresh rosemary sprig
1 tablespoon all-purpose flour
4 cups low-sodium beef broth
2 cups water
2 teaspoons Worcestershire sauce
1/4 cup dry sherry
8 (1/4-inch thick) slices whole-wheat baguette (2 ounces), toasted
1/2 cup finely grated Gruyere (about 1 3/4 ounces)
1 tablespoon chopped fresh chives

Steps:

  • Heat the butter and oil together in a Dutch oven over medium heat. Add the onions, shallots and leek, and season with salt and pepper, to taste. Stir to combine and cover. Cook, without stirring until the onions are soft and beginning to brown, about 10 to 15 minutes.
  • Uncover, and continue to cook, stirring often, until the onions are a rich brown color and well caramelized, about 25 to 30 minutes. (If the onions begin to stick to the bottom of the pan or burn add about a 1 tablespoon water at a time.) Meanwhile, tie the reserved leek top with the thyme and rosemary using a piece of kitchen twine.
  • Sprinkle the flour over the onions and cook, stirring, to cook out the raw flour taste, about 2 to 3 minutes. Stir in the broth and 2 cups water, scraping any browned bits from the bottom of the pan; add the herb bundle. Reduce the heat and simmer until thickened, 20 to 25 minutes. Stir in the Worcestershire and remove from the heat. Discard the herb bundle, stir in the sherry and season, to taste, with salt and pepper.
  • Preheat the broiler. Divide the soup between 4 (16-ounce) oven proof bowls or ramekins and arrange them on a baking sheet. Top each bowl evenly with 2 baguette slices and top with the cheese. Put under the broiler until the cheese is melted and lightly browned, about 1 minute. Sprinkle with the chives and serve.

  • In a large saucepan, cook onions in butter over low heat about 30 minutes, stirring occasionally. Add consomme and Worcestershire sauce. Heat to boiling. 5 sweet onions (like Vidalias) or a combination of sweet and red onions (about 4 pounds)
3 tablespoons butter
1 teaspoon salt
2 cups white wine
10 ounces canned beef consomme
10 ounces chicken broth
10 ounces apple cider (unfiltered is best)
Bouquet garni; thyme sprigs, bay leaf and parsley tied together with kitchen string
1 loaf country style bread
Kosher salt
Ground black pepper
Splash of Cognac (optional)
1 cup Fontina or Gruyere cheese, grated

Steps:

  • Trim the ends off each onion then halve lengthwise. Remove peel and finely slice into half-moon shapes. Set electric skillet to 300 degrees and add butter. Once butter has melted add a layer of onions and sprinkle with a little salt. Repeat layering onions and salt until all onions are in the skillet. Do not try stirring until onions have sweated down for 15 to 20 minutes. After that, stir occasionally until onions are dark mahogany and reduced to approximately 2 cups. This should take 45 minutes to 1 hour. Do not worry about burning.
  • Add enough wine to cover the onions and turn heat to high, reducing the wine to a syrup consistency. Add consomme, chicken broth, apple cider and bouquet garni. Reduce heat and simmer 15 to 20 minutes.
  • Place oven rack in top 1/3 of oven and heat broiler.
  • Cut country bread in rounds large enough to fit mouth of oven safe soup crocks. Place the slices on a baking sheet and place under broiler for 1 minute.
  • Season soup mixture with salt, pepper and cognac. Remove bouquet garni and ladle soup into crocks leaving one inch to the lip. Place bread round, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes.

2 large white onions, chopped into small pieces
4 cups homemade or low-sodium canned chicken stock
4 cups homemade or low-sodium canned beef stock

18 thin slices French baguette
2 cups shredded Swiss cheese (1/2 pound)

Steps:

  • In a large, heavy-bottom saucepan, melt the butter over medium heat. Add flour and chopped onions; saute, stirring occasionally, until onions are soft and translucent, about 15 minutes.
  • Pour chicken and beef stocks into the saucepan, and stir to combine. Bring mixture to a boil. Reduce heat to low, and simmer 15 minutes. Add salt and pepper.

4 cups chicken stock
3 cups whipping cream

6 slices French bread
3 ounces Stilton cheese
3 ounces cheddar cheese

Steps:

  • Toast 6 thick slices of French bread in a 300 degree oven until crisp.
  • Blend the Stilton with a couple tablespoons of butter, then spread on the toast.
  • When ready to serve the soup, pop one of these on top of each serving bowl and sprinkle with lots of cheddar cheese.
  • Melt butter in a large saucepan over low heat.
  • Add onions, cover, and cook until translucent, stirring occasionally for about 30 minutes.
  • Add the stock and bring to a boil.

5 lbs vidalia onions, thinly sliced (OR substitute spanish or hawaiian onions. DO NOT USE RED SALAD ONIONS.)
7 teaspoons better than bouillon beef base or 7 cans beef broth
3 teaspoons better than bouillon chicken bouillon granules or 3 cans chicken broth
Worcestershire sauce
2 cups dry white wine
French bread, slices toasted (see below)
olive oil
parmesan cheese
cheese slice (mozzarella, swiss, or gruyere)

Steps:

  • Make stock by bringing 10 cups water to boil.
  • Add beef and chicken bouillon pastes (or heat canned beef and chicken broth).
  • Lower heat to simmer and let simmer while preparing onions.
  • Melt butter slowly (so it does not brown) in large soup pot over low heat.
  • Add thinly sliced onions.
  • Stir, cover, and cook on low heat until lightly brown, stirring occasionally, about 30 mins.

Steps:

  • Veal stock:
  • Preheat oven to 425°F. Place a wire rack inside a rimmed baking sheet and place bones on top. Roast bones (undisturbed) until deep golden brown, 40-50 minutes. Transfer to a large pot and add 5 quarts of water. Bring to a simmer, then use a fine-mesh sieve to skim off any foam or gray bits from the surface. Remove from heat.
  • Meanwhile, in another large pot, heat oil over medium-high. Add onions, celery, and carrots and cook, stirring occasionally, until vegetables start to caramelize, 10-15 minutes. Add tomato paste and cook, stirring often, until slightly darkened in color, 6-8 minutes.
  • Add bones along with liquid, garlic, thyme, and bay leaf to vegetables. Bring just to a boil; reduce heat to low, and cook at a bare simmer, adding water as needed during cooking to maintain level of liquid until stock is flavorful, about 2 hours. Strain stock through a fine-mesh sieve into a large bowl, then strain again into another large bowl or airtight containers.
  • Do Ahead
  • Stock can be made 5 days ahead. Let cool; cover and chill, or freeze up to 1 month ahead.
  • Soup and assembly:
  • Heat oil and butter in a large pot over medium heat. Place garlic, cut side down, in pot and cook undisturbed until golden brown, about 4 minutes. Transfer garlic to a plate.
  • Add onions to same pot, season with salt and pepper, and cook, stirring occasionally at first and then more often as onions darken to keep them from getting too brown in any one spot, until golden but not mushy, 60-70 minutes (and no, this process can't be rushed at a higher temperature).
  • Add Sherry and stir, scraping up any browned bits from bottom of pot. Stir in 8 cups veal stock. Bundle up garlic, thyme, and bay leaf in cheesecloth and tie closed with kitchen twine. Add to pot; bring mixture to a boil. Reduce heat and cook, stirring occasionally, until liquid is reduced by one-quarter, flavors have melded, and onions are completely tender, 45-50 minutes.
  • Heat broiler. Divide soup among bowls and top each with a toast and a slice each of Gruyere and Emmenthal cheese. Place on a rimmed baking sheet and broil until cheese is melted and brown in spots, about 5 minutes. Let cool for a minute or so before serving.
