CLASSIC MASHED POTATOES WITH THREE VARIATIONS
Steps:
- Peel the potatoes, cut them into 1-inch cubes and place them in a large pot of boiling salted water. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender. Drain the potatoes in a colander and then return them to the pot.
- Meanwhile, heat the milk and butter in a small saucepan until the butter is melted.
- Put the potatoes into the bowl of an electric mixer fitted with a paddle attachment and mix them for a few seconds on low speed, to break them up. At low speed, slowly add the hot milk/butter mixture to make the potatoes very creamy. Add the sour cream, 2 teaspoons of salt and the pepper and mix to combine. Serve hot.
- Three variations:
- Truffle Butter Mashed Potatoes: Add 3 tablespoons room temperature white truffle butter to the Classic Mashed Potatoes and combine.
- Parmesan Mashed Potatoes: Add 1/2 cup freshly grated Parmesan to the Classic Mashed Potatoes and combine.
- Garlic Mashed Potatoes: Place 1/2 cup garlic cloves and 1/2 cup olive oil in a small saucepan, bring to a boil, lower the heat and simmer for 20 minutes. Allow to cool for 20 minutes and then add the garlic cloves and 3 tablespoons of the oil to the Classic Mashed Potatoes and combine.
THREE POTATO HASH
Steps:
- Cube all of the potatoes to the same size so that they cook evenly. Place potatoes in a pot and cover with cold water. Bring to a simmer and cook until just fork tender. Drain and set aside. Cut the bacon into 1/4-inch pieces. Add bacon pieces to a frying pan and cook until crisp. Add onion and garlic to pan with bacon and saute until onion is translucent. Add the chopped herbs and saute for 1 more minute. Add potatoes and stir to combine. Season with salt and pepper, to taste. Serve with any savory sausage (cooked in the oven at 350 degrees F until cooked through), sliced in half. Top with 2 poached eggs, if desired.
THREE CHEESE GARLIC SCALLOPED POTATOES
If you love cheese and love potatoes you'll adore this delicious recipe! You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
- Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese. Season again with salt and pepper.
- Bake for 1/2 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top. This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

THREE POTATOES IN A POT
From the Marlboro Country Cookbook....something to perk up the standard side of mashed or baked potatoes. Thinly sliced red, white and sweet potatoes are layered and baked with butter and fresh grated Parmesan (I sometimes substitute Asiago cheese). This particular cookbook is perhaps my favorite. Very rich, western and south-western style recipes. If you can get your hands on one (through E-Bay, a yard sale or otherwise) I highly recommend you add it to your cookbook collection!

- Wash and pare white and sweet potatoes; wash redskin potatoes, do not pare. Cut all into thin slices; no thicker than 1/4 inch and thinner if you can manage it. (A mandolin slicer works great for this!) Keep potatoes in salted water as you work. There should be approximately 2 cups of each potato.
- Brush the bottom and sides of a 12x8 inch baking dish with melted butter; sprinkle with 3 tablespoons cheese.
- Drain and dry potatoes.
- Arrange 6 layers of potato slices in baking dish in this alternating order: white; sweet; redskin. Brush each layer with melted butter and sprinkle with salt and pepper. If desired, sprinkle each layer with additional grated cheese. End with redskin potatoes.
- Cover baker tightly with aluminum foil. Bake in a 350 degree oven for 45 minutes. Carefully remove foil and continue baking for 30 minutes, until potatoes are brown and tender.

- Place all the potatoes in a large pot and cover with water.
- Cover and bring to a boil.
- Reduce heat to low and cook for 20-30 minutes.
- Drain and cool.
- Place potatoes in a large bowl and add onion.
- In a small bowl combine all the remaining ingredients and stir well.
- Pour over potato mixture and toss to coat.
- Cover and refrigerate for 24 hours before serving.

- Heat oil in heavy medium saucepan over medium heat. Add onion; sauté until soft, about 4 minutes. Reduce heat to low. Add cream, cream cheese, Parmesan, and Gruyère. Whisk until smooth, about 3 minutes. Stir in nutmeg. Season with salt and pepper. Remove from heat.
- Combine potatoes, 6 cups water and salt in large saucepan. Bring to boil over high heat. Reduce heat to medium and cook until potatoes are just tender when pierced with skewer, about 6 minutes. Drain. Transfer potatoes to bowl. Add olive oil and parsley; toss to coat. Season to taste with salt and pepper. (Fondue and potatoes can be prepared 1 day ahead. Cover separately and refrigerate. Whisk fondue 5 minutes over medium heat until melted and smooth. Reheat potatoes in 350°F oven 10 minutes.)
- Place potatoes on platter. Spear each with skewer. Serve with warm fondue.

- Preheat oven to 400°F. Lightly butter 13x9x2-inch glass baking dish. Mix cheddar cheese, blue cheese and Parmesan in small bowl.
- Arrange half of potatoes in prepared baking dish, overlapping slightly. Sprinkle with teaspoon salt and 1/4 teaspoon pepper. Sprinkle onion over, then flour. Dot with 2 tablespoons butter. Sprinkle half of cheese mixture over. Top with remaining potatoes, 3/4 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons butter. Reserve remaining cheese.
- Bring milk to simmer in medium saucepan. Pour milk over potatoes (milk will not cover potatoes completely). Cover baking dish tightly with foil. Bake 45 minutes. Uncover dish (liquids in dish may look curdled); sprinkle potatoes with reserved cheese mixture. Bake uncovered until potatoes are tender and cheese is deep golden brown, about 45 minutes longer. (Can be prepared 2 hours ahead. Let stand at room temperature. Cover and rewarm in 375°F oven about 20 minutes.) Remove from oven; let stand 15 minutes before serving.
