Yield Makes about 3 1/2 cups

Number Of Ingredients 5

2 medium Golden Delicious apples (about 14 ounces)
2 medium Granny Smith apples (about 14 ounces)
2 medium Fuji apples (about 14 ounces)
1/4 cup water
1 tablespoon sugar

Steps:

  • Peel, core and thinly slice all apples. Place apples in large microwave-safe bowl. Add 1/4 cup water to bowl. Cover with plastic wrap and microwave on high 10 minutes. Stir apples. Continue to microwave, uncovered, until apples are very tender, about 5 minutes longer. Using large fork, coarsely mash apples. Mix in 1 tablespoon sugar. (Applesauce can be prepared 2 days ahead. Cover and refrigerate.)

1 tablespoon light whipped butter or light buttery spread
1/4 cup brown sugar (not packed)
1/2 of an 18.25-ounce box (about 1 1/2 cups) moist-style yellow cake mix
1 1/2 teaspoons baking powder
1/2 cup club soda
1/4 cup no-sugar-added applesauce
7 pineapple rings packed in juice, drained
7 maraschino cherries

Steps:

  • Preheat the oven to 350 degrees F. Spray a round cake pan with nonstick spray (butter flavored, if available) and set it aside.
  • To make the glaze: Put butter in a small microwave-safe bowl and microwave for about 15 seconds, just until melted. Add brown sugar and mix well. Set aside.
  • To make the cake: Combine cake mix with baking powder in a large bowl. Mix well with a hand mixer. Add club soda and applesauce, and stir until smooth. Set aside.
  • Spread glaze evenly along the bottom of the cake pan. Blot pineapple rings and cherries with paper towels to remove any excess moisture. Lay the pineapple rings in an even layer in the cake pan, and place one cherry in the center of each pineapple ring.
  • Evenly pour the batter into the cake pan over the fruit layer. Bake in the oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes.
  • Allow the cake to cool for 15 to 20 minutes, until just slightly warm. Firmly and securely place a large plate over the pan, and carefully flip so the plate is on the bottom. Gently lift the pan to release the cake. If you have trouble releasing it, pop it in the oven for a few minutes.
  • Cut into 8 slices and dig in!

4 Granny Smith and 4 Golden Delicious apples, peeled, cored, cut into 1/2-inch slices
1 cup apple cider or juice
1 lemon, juiced
1/4 cup light brown sugar
2 cinnamon sticks
1/4 teaspoon ground cinnamon
Dash nutmeg

Steps:

  • Add apples, apple cider, lemon juice, sugar, cinnamon sticks and a dash of nutmeg to a large saucepan. Bring to a boil, cover with a lid and reduce to a simmer. Let cook for 15 minutes or until apples are tender. Remove cinnamon sticks and discard.
  • Mash with a potato masher, and stir in the 1/4 teaspoon ground cinnamon and dash of nutmeg. Transfer to a serving dish and serve warm.

2 cups water
1/2 cup fresh lemon juice
3 pounds Fuji apples or other sweet-crisp apples
3 pounds Granny Smith apples or other tart apples
3 pounds Jonathan or Rome Beauty apples or other soft-textured apples
2 1/4 cups sugar
1 1/2 teaspoons coarse kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Combine 2 cups water and lemon juice in 10- to 12-quart stockpot. Peel, core, and cut apples into 3/4-inch pieces; mix pieces into lemon water as soon as apples are cut, to prevent browning. Add sugar, coarse salt, cinnamon, and allspice; stir over mediumhigh heat until sugar dissolves. Bring to boil; reduce heat, cover, and simmer until apples are soft and almost translucent, stirring frequently, about 20 minutes. Remove from heat. Using potato masher, mash apples to chunky consistency.
  • Ladle applesauce into hot clean 1-pint glass canning jars, leaving 1/2-inch space at top of jars. Remove air bubbles. Wipe jar threads and rims with damp cloth. Cover with hot lids; apply screw bands. Process jars in pot of boiling water 20 minutes. Cool jars completely. Store in cool dark place up to 1 year.

4 granny smith apples, peeled, cored and chopped
4 Red Delicious apples, peeled, cored and chopped
1 cup water
1/2 cup brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon

Steps:

  • Put water and apples in pot.
  • Bring to a boil.
  • Reduce heat to low. Simmer approx 25 minutes, or until soft -- stirring occasinally.
  • Slightly mash apples. Add sugar, cinnamon and all spice.
  • Mix well, and let simmer about 5 more minutes.
  • If you want a smoother texture sauce, pour into a blender, and Puree until desired texture.

2 (8 ounce) cans pineapple slices, drained well
7 maraschino cherries, drained and stemmed
1 cup graham cracker crumbs

3 (8 ounce) packages cream cheese, softened
¾ cup white sugar
¾ cup sour cream
2 teaspoons vanilla extract
3 eggs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix 2 tablespoons butter and brown sugar together in a 9-inch round cake pan until blended; spread mixture to evenly cover bottom of pan. Top with pineapple slices; place 1 cherry in the center of each slice.
  • Combine graham cracker crumbs, 3 tablespoons white sugar, and remaining 3 tablespoons butter in a small bowl; mix well. Press over pineapple slices.
  • Beat cream cheese and 3/4 cup white sugar in a bowl until blended. Add sour cream and vanilla extract; mix well. Add eggs, 1 at a time; mix on low speed after each addition until blended. Pour into cake pan.
  • Bake in the preheated oven until the center is almost set, 55 minutes to 1 hour.
  • Run a knife around the inside edge of pan to loosen cake. Allow to cool completely, about 30 minutes. Invert onto a serving plate; remove pan. Refrigerate for at least 3 hours.
