lime juice, squeeze of
1 dash hot sauce

Steps:

Combine all ingredients in a shaker and serve in a rocks glass with a wedge of lime.

Ingredients

3 tablespoons canola oil
1 jalapeno, chopped
1 red onion, diced
3 Roma tomatoes, diced
2 cups long-grain rice
3 ounces white wine
2 teaspoons dried oregano
1 teaspoon ground cumin
1/2 teaspoon paprika
1 teaspoon black pepper
2 cups low-sodium chicken stock
3/4 cup water
3/4 cup tomato sauce
1 teaspoon sea salt
3 green onions, diced
1/2 cup crumbled queso fresco (Mexican cheese)

Steps:

In a medium sauce add oil, jalapeno, onions and tomatoes. Saute until onions are translucent, then add rice and stir to combine. Saute rice for 3 minutes, deglaze with white wine, then add oregano, cumin, paprika, and black pepper.
Add chicken stock, water and tomato sauce, boil for 1 minute. Then cover and simmer for 25 minutes. Do not lift lid.
Season with salt, then top with green onions and queso fresco. Serve immediately.

Ingredients

4 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves
1 pinch Salt and pepper
2 tablespoons olive oil
1 (14.5 ounce) can Mexican-, Chili-, or Salsa-style stewed tomatoes, undrained
½ cup canned chicken broth
2 peppers drained canned jalapeno peppers, minced
1 (2.25 ounce) can sliced ripe olives, drained
2 tablespoons tequila
2 tablespoons chopped cilantro

Steps:

Season chicken with salt and pepper. In large skillet, heat oil. Cook chicken over medium-high heat, turning once, until golden on both sides, about 8 minutes total.
Add tomatoes in juice, chicken broth and jalapeno peppers. Cover and simmer for 5 minutes. Add olives, tequila and cilantro.
Simmer, uncovered, for 5 minutes.

Ingredients

1 lb ground beef
1 medium onion, chopped
1 lb stewed tomatoes
1 (8 ounce) can tomato sauce
1 (4 ounce) can green chilies
1 (8 ounce) package taco seasoning
1 lb cheddar cheese, grated
6 -8 medium size flour tortillas

Steps:

Brown beef and onion in pan, Drain.
Add other ingredients, except cheese.
Simmer 10 to 15 minutes.
Place 1/4 cup mixture in a 9x13 baking dish.
Place a layer of tortillas on top.
Add more mixture, then cheese.
Repeat the same until finished.
Bake at 350 for 25 minutes, until cheese is bubbling.
Optional: Before serving add last layer of tortillas spread 1 to 1 1/2 cups sour cream over mixture.
