TIJUANA KITCHEN RICE
Steps:
- In a medium sauce add oil, jalapeno, onions and tomatoes. Saute until onions are translucent, then add rice and stir to combine. Saute rice for 3 minutes, deglaze with white wine, then add oregano, cumin, paprika, and black pepper.
- Add chicken stock, water and tomato sauce, boil for 1 minute. Then cover and simmer for 25 minutes. Do not lift lid.
- Season with salt, then top with green onions and queso fresco. Serve immediately.

- Season chicken with salt and pepper. In large skillet, heat oil. Cook chicken over medium-high heat, turning once, until golden on both sides, about 8 minutes total.
- Add tomatoes in juice, chicken broth and jalapeno peppers. Cover and simmer for 5 minutes. Add olives, tequila and cilantro.
- Simmer, uncovered, for 5 minutes.

Steps:
- Brown beef and onion in pan, Drain.
- Add other ingredients, except cheese.
- Simmer 10 to 15 minutes.
- Place 1/4 cup mixture in a 9x13 baking dish.
- Place a layer of tortillas on top.
- Add more mixture, then cheese.
- Repeat the same until finished.
- Bake at 350 for 25 minutes, until cheese is bubbling.
- Optional: Before serving add last layer of tortillas spread 1 to 1 1/2 cups sour cream over mixture.
