4 pcs Tilapia (medium size, sliced and cleaned)
2 cups Cooking oil
1 tbsp Salt (to taste)
1 thumb Ginger (julienned)
2 cloves Garlic (minced)
1 pc Onion (sliced)
4 pcs Tomatoes (sliced)
1 pc Carrot (small size, sliced)
1 pc Bell Pepper (small size, sliced)
2 tbsp Brown sugar
1 tbsp Vinegar
1 tbsp Cornstarch
1 cup Water
1/2 tsp Black pepper

Steps:

  • Wash the fish and rub with salt.
  • Heat oil in a pan. Fry the fish until golden brown. Then, place in a plate after frying.
  • In the same pan, heat 1 tbsp cooking oil and sauté garlic, ginger, and onion. Then add tomatoes and stir until tomatoes are cooked.
  • Add the black pepper, water, vinegar, and sugar. Cover and simmer for 5 minutes.
  • Then, put the carrot and bell pepper. Cook for about 5 minutes.
  • Add the diluted cornstarch. Stir and cook for 5 minutes.
  • Get the fried fish and pour over the sauteed sauce.
  • Serve while hot!

1-2 lbs Tilapia (cleaned and pat dry)
salt (to taste)
flour
cooking oil
1/2 cup vinegar
1/2 cup water
2 tbsp banana ketchup (or any kind of ketchup)
1-2 tbsp sugar (or to taste)
1/2 tsp pepper
2 tsp cornstarch
2 thumb size ginger (sliced thin)
3 cloves garlic (sliced thin)
1 small carrot (sliced thin)
1 small green bell pepper (sliced thin)
1 small red bell pepper (sliced thin)
1 medium onion (sliced)

Steps:

  • Drizzle fish with a little salt and flour on both side. Heat pan and add enough cooking oil. Fry fish until brown and fully cooked. Remove fish from oil and drain excess oil. Set aside.
  • In a small bowl, combine vinegar, water, ketchup, sugar, pepper, salt to taste and cornstarch. Stir well to combine and set aside.
  • In a pan, heat around 2 tablespoon oil over medium heat. Sauté ginger and garlic until fragrant. Add carrots and cook until tender for about 2 minutes. Add bell peppers slices and cook for about a minute while stirring constantly. Add onions and do a quick stir.
  • Add sauce mixture to the pan and simmer over low heat for about 2 minutes until slightly thick while stirring constantly. Pour sauce over fried fish and serve while hot. Serve with steamed rice. Enjoy!

1/4 teaspoon salt to season fish
1 cup oil for frying
1/4 cup butter, for sauteing
3 cloves garlic, minced
1 medium onion, cut in strips
1 thumbsize ginger, jullienned
1/2 cup red and green pepper, sliced in strips
1 carrot, jullienned
1/4 teaspoon black ground pepper
1/4 teaspoon msg(optional)
1/2 tablespoon salt(adjust to your taste preference)
2 teaspoons soy sauce
1/2 cup tomato sauce
1 cup water
1/2 cup brown sugar(just add to your taste preference)

Steps:

  • COOKING PROCEDURES: 1 Season the fish with salt and fry in hot oil. 2. Heat up the pan with oil, saute the garlic, onion and ginger. 4 Put in the carrots and the red and green bell peppers. Cook for a minute. 5 Add water, vinegar and black ground pepper and bring it to a boil. Do not stir until it comes to a boil. 6 Add brown sugar and dissolved cornstarch, stir and cook until the sauce becomes thick. 7 Put the fried fish. Then cook for a 2-3 minutes. 8 Serve with rice.

1 cup oil for frying
1 (4 ounce) whole tilapia, cleaned and scaled
salt to taste
3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, cut into chunks
1 (1 inch) piece ginger, thinly sliced crosswise, or to taste
1 ¼ cups water
1 cup distilled white vinegar
5 tablespoons white sugar
salt and ground black pepper to taste
1 tablespoon cornstarch

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Pat tilapia dry with a paper towel. Cut 2 to 3 slits on either side of the fish. Sprinkle salt on top. Fry in the hot oil until browned, about 2 minutes per side.
  • Heat olive oil in a skillet over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add red bell pepper and ginger; saute until fragrant, about 2 minutes.
  • Mix water, vinegar, and sugar together in a bowl. Pour into the onion mixture in the skillet. Cover and bring to a boil. Cook until slightly reduced, about 2 minutes. Season with salt and pepper. Add cornstarch. Boil, stirring often, until sauce is thickened, about 5 minutes. Pour sauce over the fish.

2 -3 lbs red snapper, whole fish
4 tablespoons vegetable oil
1 tablespoon salt
1/4 teaspoon ground pepper
2 tablespoons soy sauce
1/2 cup apple cider vinegar or 1/2 cup white vinegar
1/4 water
1/2 cup brown sugar
1 large chopped onion
6 tablespoons minced garlic
1/2 cup ginger, julienned
1/2 cup carrot, julienned
1/2 cup red bell pepper
1/2 cup scallion, julienned (spring onions)
1 tablespoon sifted flour

Steps:

  • Clean the fish and slit it open. Let it stand for few minutes and drain well.
  • Sprinkle fish with 1 tbsp salt.
  • In a medium skillet, heat the oil and fry the fish until brown. Remove the fish from the pan and set aside.
  • In the same skillet, sauté the garlic until light brown, then sauté onion.
  • Add salt and white pepper. Stir in ginger, scallions, carrot and red bell pepper.
  • Add soy sauce, vinegar, water and sugar. Salt and pepper to taste.
  • When the mixture boils, add flour to thicken. Then, add the fish.
  • Cover the skillet and simmer for 5 minutes.

Another of my mother's favorite recipes. This is a great Panamanian recipe with lots of flavor that is easy to make! These amounts are approximate, so feel free to play around with amounts. I'd recommend 1 lb of tilapia for each person. As for the rice, my mom prefers minute white rice with this, but I prefer Jasmine. This goes wonderfully with Panamanian Tortillas (corn cake tortillas). This recipe can get smoky, so be sure there's plenty of ventilation!

2 lbs tilapia fillets
1/4 cup flour
1/4 cup cornmeal
salt and pepper, to taste
1/4 cup olive oil
1 onion, vertically sliced
1 green pepper, cut into strips
1 cup cilantro, chopped
2 garlic cloves
15 ounces stewed tomatoes or 15 ounces diced tomatoes

Steps:

  • Chop up onion, green pepper, garlic, and cilantro and set aside.
  • Mix flour, cornmeal, salt, and pepper and spread on a plate. (omit cornmeal for faster cooking time).
  • Cut up each tilapia filet into 3 or 4 strips.
  • Coat tilapia with the flour mixture.
  • In a large frying pan, add 2 or 3 tablespoons oil and then add the fish.
  • Flip over the fish when golden until both sides are cooked, adding rest of oil as needed.
  • Remove fish from pan and set aside.
  • Add onion, green pepper, garlic, and cilantro mixture and stir fry them in the remaining oil until onion is translucent.
  • Add the tomatoes and the fish, folding the sauce over the fish gently.
  • Heat through at medium temperature and serve over white rice.
