TENDER PORK SPARE RIBS

I saw a Celebrity Chef use this braising method for baby back ribs, so I decided to give it a try for pork spare ribs. I changed the seasonings and increased the cooking time and I have been very pleased with them every time. They're really tender and the meat is so flavorful that you don't have to add BBQ sauce unless you want to. My neighbor is the one who told me about the fajita seasoning, and she was right on!

1 cup brown sugar
½ cup fajita seasoning (such as Fiesta®)
2 tablespoons Hungarian sweet paprika
2 racks pork spareribs, fat trimmed
1 cup beer
3 cloves garlic, minced
1 tablespoon honey
3 tablespoons Worcestershire sauce
1 tablespoon prepared brown mustard

Steps:

  • Mix the brown sugar, fajita seasoning, and paprika in a bowl. Rub both sides of the pork spareribs with the brown sugar mixture. Place the spareribs in a 9x13-inch baking pan; cover and refrigerate overnight.
  • Preheat an oven to 250 degrees F (120 degrees C). Whisk together the beer, garlic, honey, Worcestershire sauce, and mustard in a bowl. Set aside.
  • Tear off 2 large sheets of heavy duty aluminum foil and lay them shiny-side down. Place a rack of spareribs on each sheet, meaty-side up. Tear off 2 more sheets of foil and place them on top of the ribs, shiny-side up. Begin tightly folding the edges of the foil together to create a sealed packet. Just before sealing completely, divide the beer mixture evenly into each packet. Complete the seal. Place the packets side-by-side on an 11x14-inch baking sheet.
  • Bake in the preheated oven until the ribs are very tender, 3 hours and 30 minutes to 4 hours. Carefully open each packet, and drain the drippings into a saucepan. You may only need the drippings from one packet. Set ribs aside. Simmer the drippings over medium-high heat until the sauce begins to thicken, about 5 minutes. Brush the thickened sauce over the ribs.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the ribs back into the oven and broil until the sauce is lightly caramelized, 5 to 7 minutes.

You're sure to love these! So tender and succulent! I've roasted them and BBQ'ed them and they take less time to cook on the BBQ but are just as lovely oven roasted. Just make sure you have a bowl of water with some lemon slices in it on hand and plenty of serviettes!

1 1/2 kg pork spareribs
1/2 cup tomato ketchup
1/4 cup teriyaki sauce
1/4 cup red wine
1/3 cup unsweetened pineapple juice
4 tablespoons honey
2 teaspoons light soy sauce
4 -6 garlic cloves, crushed
4 teaspoons grated fresh ginger
2 tablespoons fresh thyme, chopped (or 2 teaspoons of dried thyme)
1 pinch cayenne pepper

Steps:

  • Place ribs in large pan or cast iron skillet.
  • Cover with cold water and bring to the boil.
  • Reduce the heat and simmer for 10 minutes.
  • Combine the Marinade ingredients in a bowl and mix well.
  • Place the pork spare ribs in a large shallow glass or ceramic dish and pour over with the well mixed marinade.
  • Refrigerate for AT LEAST 4 hours or better still, overnight!
  • Place the marinated pork spare ribs on a rack in a large roasting pan and cook in oven pre-heated to 180°C for about 40 minutes until browned and tender, or grill on the BBQ.
  • During the cooking time baste the ribs frequently with the pan juices/marinade.

SMOKED PORK RIBS

If you don't own a smoker, this is a great way to do ribs on the grill. I first saw this technique done by Adam Perry Lang, who is not only a great barbecue chef but a great all-around chef. In fact, he knows more about meat than practically anybody I've met. For this recipe I use pork spareribs, but the technique works just as well with lamb ribs too, though cook times will vary. Feel free to substitute your favorite BBQ sauce.

1 tablespoon garlic salt
2 teaspoons smoked paprika
2 teaspoons toasted and ground coriander seed
Pinch kosher salt
1 tablespoon oregano
2 racks pork baby-back ribs
Juice of 1 lemon
1 tablespoon honey
1 tablespoon red wine vinegar
1 garlic clove, minced
1/2 small red onion, minced
Teaspoon fresh oregano
Teaspoon fresh thyme
1 lemon
Sea salt
1 tablespoon fresh oregano
1 tablespoon extra virgin olive oil
Drizzle of honey

Steps:

  • Mix to combine all the rub ingredients. Moisten the ribs with lemon juice and then coat all sides with the rub, making sure to distribute evenly.
  • Arrange the grill or smoker for indirect heating so the ribs will not be directly over the heat source. Using low heat and applewood chips (about half a pound), place ribs on cool part of the grill, wrap in foil, make a few incisions in the foil and smoke for 1 hour.
  • Meanwhile, whisk together all glaze ingredients.
  • After 1 hour, pour a third of the glaze on top of the ribs and seal tightly in the foil, being careful not to tear it. Do the same with remaining racks. Return ribs to the grill and cook meat-side down for 30 minutes, maintaining low heat. Occasionally check the grill to make sure it remains low. After 30 minutes, flip the foil bundles and continue cooking.
  • After 1 hour of cooking, remove the ribs from the grill and let rest in the foil for 30 minutes. Meanwhile, raise grill heat to medium-high. Cut the lemon in half and grill flesh-side down until nicely marked and slightly soft, 3 to 5 minutes.
  • When done resting, remove the ribs from the foil and place on the grill meat-side down and cook for 4 minutes. Flip and cook for another 2 minutes. Remove the ribs from the grill and garnish with the grilled lemon, sea salt, oregano and extra virgin olive oil and a little drizzle of honey.

I needed something tender and delectable--moist and melt-in-your-mouth like, that didn't require a whole lot of fuss. One pork roast and a crock pot's help later, perfection. I can't even tell you. How. Good. It. Really. Is. NOTE: When I say "boneless pork roast," it must be one of a boneless "blade/Boston/shoulder" cut. Every store labels them differently, but look for at least one of these labels. If it doesn't say that, don't bother. The roast should be well marbled, and have a decent layer (1/4-inch?) of fat on one side.

5 -6 lbs boneless pork roast
2 tablespoons vegetable oil
kosher salt, to season
pepper, to season
1 tablespoon dried thyme
3 bay leaves (fresh or dried)
1 large yellow onion, large dice
1 quart sauerkraut
1/3 cup apple cider vinegar
2 teaspoons peppercorns
1 tablespoon kosher salt
1 tablespoon juniper berries
1 quart low sodium chicken broth

Steps:

  • In a large skillet, preheat vegetable oil over medium-high heat until nearly smoking. Meanwhile, season all sides of pork roast with salt and pepper and half of the dried thyme.
  • When oil is hot enough, starting fat-side down, saute all sides of pork for three to four minutes, until golden brown.
  • Transfer pork to large crockpot, add remaining ingredients and cover.
  • Cook on high six hours, or low heat eight to ten. My crock pot has a setting where it automatically cooks on high for the first two hours, then switches to the low setting. I just leave it on this all day until I'm ready to eat in the evening, and it's always perfect. (I'm sure you could also bake it on low heat or simmer on the stove-top in a covered dutch oven; adjust cooking times accordingly.).
  • (There will be an ample amount of fat throughout meat--this is more of a pulled pork style, rather than carved. Well worth the extra time to pick it apart. You can eat the sauerkraut and onion if you like, but I usually just throw it out--it'll be pretty lifeless by the time the cooking process is over. Works well to cook it a day ahead, then reheat the prepared meat in its strained juices.).
  • Lovely served with applesauce or sauteed apples and roasted vegetables.
