2 tbsp melted butter
1 tbsp cajun seasoning
½ tsp garlic powder
½ tsp paprika
½ tsp chili powder
½ tsp seasoned salt
¾ tsp or to taste teriyaki sauce
1 pinch salt

Steps:

  • Spread pumpkin seeds in a single layer on a baking sheet lined with waxed paper. Set aside in a cool, dry place and allow to dry overnight, turning seeds once or twice during several hours of drying.
  • Preheat oven to 300 degrees F.
  • Mix melted butter, Cajun seasoning, garlic powder, paprika, chili powder, seasoned salt, and teriyaki sauce in a bowl. Toss the pumpkin seeds in the seasoned butter to coat.
  • Set seasoned pumpkin seeds aside for 5 minutes to absorb flavors. Spread seeds onto a baking sheet.
  • Bake in the preheated oven for 45 minutes to 1 hour, stirring after 30 minutes, until seeds are browned and fragrant. Remove and let cool until seeds stop making a popping noise.
  • Sprinkle with salt if desired.

Toasted pumpkin seeds are a delight when seasoned with rosemary! This is a recipe from Silver Ravenwolf's Halloween Book.

3 cups pumpkin seeds
2 quarts water
1/2 cup salt (to taste)
2 tablespoons olive oil
2 tablespoons dried rosemary

Steps:

  • Rinse pumpkin seeds.
  • Boil water. Add salt.
  • Pour seeds into boiling water.
  • Boil until seeds are soft. (They should turn brownish-gray and many will slip to the bottom of the pot.).
  • Drain the broiled seeds ion a colander, and pat seeds dry. Put in a bpwl with olive oil, salt, and the rosemary.
  • Mix lightly. Preheat your oven to 350 degrees.
  • Spread the seeds on a large cookie sheet covered with aluminum foil. Make a single layer of seeds (don't have any little piles).
  • Put seeds in oven 20-30 minutes. If the seeds turn brown, you are overcooking them. They should look white and dry. You do not need to turn theb seeds. When finished, use a spatula to slide the seeds off the foil and into a bowl. Allow to cool before little hands touch them.
