2 tablespoons red peppers, chopped
1 tablespoon onion, chopped
2 teaspoons butter
1/4 cup ham, cubed
1/4 cup cheese, shredded
2 eggs
salt, to taste
pepper, to taste
2 slices bread, toasted and buttered
1 tablespoon mayonnaise
1 teaspoon prepared horseradish

Steps:

  • Saute peppers and onions in butter until tender.
  • Add ham; heat through.
  • Beat eggs, and seasonings together.
  • Add cheese.
  • Pour over ham mixture.
  • Cook on low heat until almost set, lifting edges to let uncooked portion run underneath.
  • Turn over and cook other side.
  • Mix mayonnaise and horseradish together and spread on buttered toast.
  • Turn egg onto prepared toast and enjoy.

One of the keys to successful French toast, vegan or not, is using day-old, stale bread-fresh bread is too soft and more likely to fall apart. This recipe makes a slightly drier French toast. For a more custardy version, let the bread soak in the milk-yogurt mixture for about 2 minutes per side.

1 1/4 cups unsweetened almond milk
1/2 cup soy yogurt
2 tablespoons cornstarch
2 tablespoons sugar
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
4 tablespoons refined coconut oil, melted
One 1-pound day-old Italian-style loaf, ends discarded and loaf cut into 3/4-inch-thick slices
Warm pure maple syrup, for serving

Steps:

  • Set a baking sheet on an oven rack and preheat to 200 degrees F.
  • Blend the almond milk, soy yogurt, cornstarch, sugar, cinnamon and vanilla in a blender until combined. Transfer to a casserole dish or glass pie plate.
  • Heat a large nonstick skillet over medium heat. Add 1 tablespoon of the oil, swirling the skillet to coat the surface. Place 3 slices of bread in the milk-yogurt mixture, let soak for about 1 minute per side, then carefully lay the slices in the skillet. Cook, undisturbed, until browned and crisp, 2 to 4 minutes per side (adjust the heat as needed). Serve immediately or transfer to the rack in the oven to keep warm. Repeat with the remaining oil, bread and milk-soy mixture. Serve with maple syrup.

6 small red potatoes
4 small leeks, chopped
4 large carrots, peeled and cut into large chunks
2 medium red onions, peeled and quartered
2 red bell peppers, seeded and cut into wide strips
½ pound fresh shiitake mushrooms, stems removed
1 tablespoon olive oil, or more as needed
½ teaspoon thyme
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add potatoes, cover, and steam until tender, about 20 minutes. Drain well.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 13x9-inch baking dish.
  • Cut each potato into 2 to 3 large slices and arrange pieces at ends of the prepared baking dish. Set leeks next to potatoes, then arrange carrots, onions, red peppers, and mushrooms over and around the leeks and potatoes. Drizzle vegetables with olive oil and sprinkle with thyme, salt, and pepper.
  • Roast in the preheated oven, basting with pan juices every 15 minutes, until vegetables are tender when pierced with a fork, 45 to 60 minutes.

350 g extra firm tofu (well drained)
1 medium cooking onion, finely diced
1/2 medium green bell pepper, finely diced
1 grated carrot
2 ml turmeric
2 ml dehydrated red pepper flakes
1 pinch garlic powder
1 pinch black pepper
1 pinch sea salt
15 ml nutritional yeast flakes
1 tablespoon extra virgin olive oil
6 slices bread (I use 12 grain)

Steps:

  • In skillet with olive oil, place cooking onion on medium heat for about 5 minutes.
  • Add green bell pepper to onions, cook 5 more minutes on medium heat or until onions are translucent.
  • Take onions and pepper off heat, allow to cool.
  • In a large mixing bowl, combine cooked onion and pepper mixture, grated carrot and tofu. Tofu should have some lumps and bumps.
  • Add turmeric, dehydrated red pepper flakes, garlic powder, black pepper, sea salt and nutritional yeast flakes.
  • Mix all ingredients thoroughly.
  • Toast bread.
  • While bread is toasting put the tofu mixture into the skillet on medium heat until toast is ready.
  • Spoon tofu mixture onto toast.
  • Enjoy.
  • This recipe is great open-face as well.
