VEGAN VEGGIE CALZONE



Vegan Veggie Calzone image

The ultimate vegan calzone stuffed with veggies, spinach and plant-based cheese, made with authentic pizza dough and served with a homemade tomato sauce for dipping.

Number Of Ingredients 8

1 batch Italian pizza dough
1.25 lb sweet peppers ((or your favorite veggies & vegan meats))
1 cup baby spinach (-thinly sliced)
2-3 cups homemade marinara sauce
5 scallions (-cut into 1 inch pieces)
8 oz plant based cheese (-shredded)
sea salt + black pepper to taste
drizzle of olive oil ((optional))

Steps:

  • Make sure to prepare the pizza dough in advance according to directions in the recipe. You will only use half of it ( 4 dough balls) and you can freeze the rest for later. (If freezing it you can do this right after kneading it, no need to proof it first).
  • Rinse and slice the peppers into thin slices, discard the core and the seeds. Add a drizzle of olive oil and a pinch of sea salt and toss to coat.
  • Heat up a cast iron skillet on medium low flame and quickly saute the pepper and scallions together until nice little char marks start to form, a few minutes. Transfer them to a bowl and mix with the sliced spinach. Set aside until ready to use.
  • (If using any store bought vegan meatballs, sausages or chicken make sure to cook it first before adding it to the calzone)
  • Sprinkle some flour on a board board or kitchen counter and place the pizza dough on top. Sprinkle more flour on top and using the palm of your hand gently press each dough ball down to form a circle. Sprinkle more flour if needed so the dough doesn't stick. (do not knead the dough at this point)
  • Use a fork to gently poke the dough in a few spots so it won't puff up while cooking.
  • Spoon some of the tomato sauce over half of the dough, sprinkle with some of the vegan cheese and some of the pepper scallion mixture or your favorite fillings. Sprinkle with more cheese and gently fold over the dough to create a pocket.
  • Gently pull the bottom of the dough to fold over the top as in creating a nice seal of the pocket all around.
  • Preheat a large cast iron griddle or grill pan on medium heat and gently transfer the calzone to the hot grill. ( you should be able to slide them right off of the board you were working on or using a large spatula).
  • Cook for a few minutes on each side until nice grill marks form. Use a spatula to flip the calzone and repeat the above process until all calzone pockets are done. Allow them to cool off for a few minutes for the cheese to set before cutting into them.

1 cup warm water (100 degrees F)
1 1/4 teaspoons yeast (can use rapid rise)
1 teaspoon sugar
1/2 teaspoon salt
2 1/2-3 cups flour (can do half white and half wheat)
1 tablespoon olive oil
1 tablespoon minced garlic
1 -2 teaspoon dried Italian herb seasoning
5 ounces vegan mozzarella cheese (about a half block, I used I.M. Earthkind Vegan Gourmet Mozzarella Cheese, half a block is 5 ounces) or 5 ounces vegan mozzarella cheese, cut in 1/4 inch chunks (about a half block, I used I.M. Earthkind Vegan Gourmet Mozzarella Cheese, half a block is 5 ounces)
1 (12 1/3 ounce) package Mori-Nu firm tofu, plus
6 ounces Mori-Nu firm tofu (this is the kind that comes in the "juice box" and may be with the dry foods)
1 (10 ounce) package chopped spinach, defrosted and drained well
1/2 teaspoon garlic powder
1/4 teaspoon basil
1/2 teaspoon pizza seasoning
1/2 teaspoon italian seasoning
salt and pepper
1/3 small onion, peeled and cut into small dice
1 (8 ounce) can hunts tomato sauce with basil garlic and oregano, heated with
1/4 teaspoon sugar, to cut acidity
cooking spray or oil

Steps:

  • Mix water with yeast and sugar in a large mixing bowl, set aside for 5 minutes to let it bloom.
  • Add the garlic, oil, salt and herbs.
  • Add about 1 1/2-2 cups flour, mix well.
  • Pour onto a floured board, add remaining flour as needed, and knead for about 5 minutes (this dough is really soft).
  • Cover with the mixing bowl.
  • Let rise about 20-30 minutes or until doubled in bulk.
  • Punch dough down, knead on lightly floured board, set aside.
  • Place the tofu, drained in a bowl and blend until smooth with hand blender.
  • Add remaining ingredients and mix well.
  • Divide your pizza dough into 4 equal pieces.
  • Roll out one piece of dough and place a fourth of the filling in the middle of the pizza dough.
  • Fold dough over the filling and seal.
  • Repeat with remaining ingredients.
  • Spray the calzones with cooking spray or and place on oiled baking sheet.
  • Bake at 400 degree F until brown on bottom, spray tops of calzones with cooking spray or rub with olive oil and flip, cooking until browned on other side.
  • Serve with warmed Hunt's Tomato Basil Oregano Sauce or your favorite.
  • If you are not a vegan, I have made another variation of this recipe, here are the changes: Instead of the vegan cheese 1 cup Veggie Mozzarella Shreds or 1/2 cup Veggie Shreds and 1/2 cup Low Fat Shredded Mozzarella 1/4 cup or so Reduced Fat Parmesan These are guestimates on the measurements, I made these today with stuff around the house and Mark and I loved them.

VEGAN TOFU AND SPINACH SCRAMBLE

One 14-ounce package firm tofu, drained and cut into 1/2-inch cubes
1/2 teaspoon ground turmeric
Kosher salt and freshly ground black pepper
1/8 teaspoon ground cayenne pepper, optional
2 tablespoons extra-virgin olive oil
3 scallions, thinly sliced, green and white parts separated
5 ounces fresh spinach, chopped (about 5 packed cups)
1 to 2 teaspoons fresh lemon juice
1 cup grape tomatoes, halved
1/2 cup fresh basil, roughly chopped

Steps:

  • Combine the tofu, turmeric, 1/4 teaspoon salt, 1/2 teaspoon black pepper and cayenne, if using, in a medium bowl. Toss well to combine and set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the scallion whites and cook, stirring, until soft, about 1 minute. Add the tofu mixture and cook, stirring occasionally, until the tofu is lightly browned and resembles scrambled eggs, about 5 minutes.
  • Add the spinach, lemon juice and 1/2 teaspoon salt and stir until the spinach is wilted, about 1 minute. Add the tomatoes and scallion greens and stir until the tomatoes are just heated through and begin to soften, about 1 minute. Remove from the heat, add the basil and stir to combine. Season with salt and pepper.

1 (12 ounce) package fresh mushrooms, sliced
1 onion, chopped
1 (28 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes
1 tablespoon Italian seasoning
1 (8 ounce) package whole wheat lasagna noodles, dry
1 (16 ounce) package frozen chopped spinach, thawed and drained
1 (16 ounce) package soft tofu
1 (16 ounce) package firm tofu
¼ cup unsweetened almond milk
¼ cup lemon juice, or to taste
½ teaspoon garlic powder

Steps:

  • Heat a skillet over medium-high heat. Saute mushrooms and onion until soft. Add tomato sauce, diced tomatoes, and Italian seasoning. Let simmer until sauce is thickened and flavors blend, at least 1 hour.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Squeeze as much water out of the spinach as possible.
  • Place soft tofu, firm tofu, almond milk, lemon juice, and garlic powder in a blender or food processor. Blend into a ricotta-like consistency. Transfer to a large bowl and stir in spinach.
  • Cover the bottom of a 9x13-inch baking pan with a thin layer of sauce, topped with a layer of lasagna noodles and 1/2 the tofu mixture. Repeat with remaining sauce, noodles, and tofu, ending with a layer of noodles and some sauce on top. Cover with aluminum foil.
  • Bake in the preheated oven until top of lasagna is hot and bubbly, 40 to 50 minutes.

You can serve this simple stir-fry with grains or noodles, or (my preference) use it as a filling for a whole wheat pita pocket.

1 tablespoon canola oil
1/2 pound tofu, cut in small dice
1 large garlic clove, minced
1 teaspoon grated or minced fresh ginger
1/4 teaspoon red chili flakes
Soy sauce to taste
1 6-ounce bag baby spinach, rinsed
2 tablespoons toasted sesame seeds
1 teaspoon sesame oil

Steps:

  • Heat the canola oil over medium-high heat in a large nonstick skillet or wok, and add the tofu. Stir-fry until the tofu is lightly colored, three to five minutes, and add the garlic, ginger and chili flakes. Cook, stirring, until fragrant, about one minute, and add soy sauce to taste. Add the spinach and stir-fry until the spinach wilts, about one minute. Stir in the sesame seeds, and add more soy sauce to taste. Remove from the heat.
  • Using tongs, transfer the spinach and tofu mixture to a serving bowl, leaving the liquid behind in the pan or wok. Drizzle with the sesame oil, and add more soy sauce as desired. Serve with rice or other grains, or noodles. You may also use it as a filling for whole wheat pita bread.

Raghavan Iyer, author of "660 Curries," describes the Indian cheese paneer as "fresh, firm and chewy" and "not unlike a block of extra-firm tofu," which you could substitute for paneer in a pinch. Tofu takes the place of paneer in this lighter version of saag paneer, a classic Indian dish made with fresh spinach sautéed in plenty of ginger, cumin, fennel seeds, chiles, coriander and turmeric. Here, seared tofu and yogurt are stirred in at the end, making it a creamy, satisfying, almost-vegan meal that's wonderful served with naan or over rice.

3/4 pound firm tofu, cut into 1-inch cubes
2 tablespoons canola oil
1/2 cup coarsely chopped shallot or red onion
4 lengthwise slices peeled fresh ginger (2 inches long, 1 inch wide, 1/8 inch thick), coarsely chopped
1 teaspoon cumin seeds
1/2 teaspoon fennel seeds
2 whole dried red chilies, like Thai, cayenne or arbol
1 tablespoon coriander seeds, ground
Salt to taste
1/4 teaspoon cayenne
1/4 teaspoon ground turmeric
1 1/2 pounds fresh spinach, stems trimmed at the end and washed in 2 changes of water, or 12 ounces baby spinach, rinsed
1/2 cup drained yogurt
1/4 teaspoon cornstarch

Steps:

  • Drain the tofu on paper towels. Heat 1 tablespoon of the oil over medium-high heat in a wok or a large, heavy lidded skillet and add the tofu. Stir-fry until golden brown and remove from the heat.
  • Combine the shallot or onion and the ginger in a food processor or mini-chop and blend until finely minced, almost a paste.
  • Heat the remaining oil over medium-high heat in a wok or skillet and add the cumin seeds, fennel seeds and whole chiles. Cook, stirring, for about 15 seconds, or until the spices are fragrant and reddish-brown. Add the onion and ginger and stir-fry until it is lightly browned, about 3 minutes. Add the coriander, salt, cayenne and turmeric, stir for about 10 seconds and add the spinach in batches, adding the next batch after the first batch wilts and stirring and scraping the bottom of the pan to deglaze.
  • Stir in the tofu, cover, reduce the heat to medium-low and simmer, stirring occasionally, for 2 to 3 minutes, until the spinach is uniformly wilted and the tofu is warmed through.
  • Whisk the cornstarch into the yogurt. Remove the pan from the heat, remove the chilies, and stir in the yogurt. Taste, adjust salt and serve with rice or other grains.
