Giada De Laurentiis' take on Fettuccine Alfredo, from Everyday Italian on Food Network, gets added flavor from lemon and nutmeg.

18 ounces fresh fettuccine
2 1/2 cups heavy cream
1/2 cup fresh lemon juice
12 tablespoons unsalted butter
2 cups grated Parmesan
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

Kosher salt
1 pound fettuccine
1/4 cup extra-virgin olive oil
8 ounces cremini mushrooms, trimmed and sliced
12 ounces Brussels sprouts, trimmed, leaves removed, inner parts finely shredded
4 scallions, chopped
1/4 teaspoon crushed red pepper flakes
1/3 cup tomato paste
3 cloves garlic, thinly sliced
1 cup oat milk
Torn fresh basil, to garnish

Steps:

  • Bring a large pot of salted water to a boil for pasta. Cook the pasta until al dente according to the package directions, then reserve 2 cups of the pasta water and drain.
  • Meanwhile, heat 2 tablespoons of the oil in a large skillet over medium-high heat. When the oil is hot, scatter in the mushrooms. Cook, without stirring, until browned on the underside, 1 to 2 minutes. Stir and continue to cook until well browned, about 2 minutes more. Add the Brussels sprouts and scallions. Season with salt and the red pepper flakes. Cook and toss until the leaves are wilted but still bright green, about 3 minutes.
  • Add another 1 tablespoon oil to the skillet. Make a space in the middle and add the tomato paste and sliced garlic. Cook and stir until sizzling, about 1 minute. Add 1 cup of the pasta water and bring to a rapid simmer. Cook until the vegetables are tender and the sauce has thickened, about 3 minutes. Add the oat milk and remaining 1 tablespoon oil, bring to a simmer and stir to combine. Toss to coat the pasta with the sauce, adding the remaining pasta water, as needed, if it seems dry. (You may not need all of the pasta water.) Serve with torn basil.

12 ounces soft silken tofu, drained
1 tablespoon olive oil
1 tablespoon onion powder
1/4 cup parmesan cheese, grated

Steps:

  • In a large pot of boiling water cook pasta until just tender, approximately 5-7 minutes.
  • Place drained tofu, garlic, both cheeses, olive oil, and onion powder into the bowl of a food processor or blender. Blend until smooth.
  • In a medium saucepan, pour in soy mixture and warm over medium heat, stirring occasionally. Drain pasta, place on platter or bowl and toss with warmed alfredo sauce.

Fettuccine Alfredo is our favorite quick 30 minute meal! This easy dinner is kid approved, college student approved and mom approved. Dare we say better than Olive Garden's Fettuccine Alfredo? Yes we do!

8 ounces of Fettuccine noodles
1 teaspoon salt
1 Tablespoon oil
2 Tablespoons Butter
2 Tablespoons garlic paste or 4 cloves of minced garlic
2 cups heavy cream
1 1/2 cup + 1/2 cup shredded Parmesan cheese (not powdered)

Steps:

  • In a pot, add noodles, salt, oil and water and cook according to package directions.
  • In a deep skillet, add butter. Cook over medium-Low to Medium heat until butter is melted.
  • Add garlic and cook for 2 minutes or until fragrant.
  • Add heavy cream and mix well. Bring mixture to a light simmer and cook for approximately 8 minutes or until mixture cooks down until half amount.
  • Remove cream mixture from burner and add 1 1/2 cups shredded Parmesan cheese (not powder). Stir until cheese melts completely.
  • Salt & pepper according to tastes.
  • Serve over noodles, top with extra Parmesan cheese.

Since going low carb, I'm always on the look out for something new that isn't going to blow my diet. I used some non-dairy products to lower the cholesterol as well. I did use some Romano cheese instead of the Parmesan. I also added a cut up piece of cooked turkey bacon to my dish. Having found these Shirataki low carb noodles was a God-send. I got the recipe from the back of the Tofu Shirataki package. This product has no cholesterol, sugar or gluten and is Vegan to boot, now I can have my noodles and eat them too.

2 tablespoons fat free cream cheese
2 teaspoons reduced-fat parmesan cheese
1 teaspoon fat free sour cream

Steps:

  • Open the bag of tofu noodles and drain, then rinse them thoroughly.
  • Microwave for one minute, then dry well. Add the cream cheese, Parmesan and sour cream. Mix well.
  • Return to the microwave for one more minute, then mix again. Add salt and pepper and eat!

A lower cal/fat version of the classic creamy noodle dish, using my favorite tofu noodles! You can also use regular noodles with the sauce of course. This makes enough sauce to cover an added meat or vegetable.

8 ounces tofu shirataki noodles, Fettuccine shape
1/4 cup fat-free ricotta cheese
2 tablespoons fat free cream cheese
1 tablespoon fat-free half-and-half
1 tablespoon reduced fat margarine, softened
2 teaspoons grated parmesan cheese
1 teaspoon minced garlic
1/8 teaspoon salt (or more to taste) or 1/8 teaspoon garlic salt (or more to taste)
1/4 teaspoon pepper (or more to taste)
cooked meat (optional) or broccoli (optional)

Steps:

  • Drain tofu noodles. Using a scissors, cut them into 3-4" pieces. Parboil for 2-3 minutes to remove the "Shirataki" aroma from the noodles.
  • Combine ricotta, cream cheese, half and half, margarine, parmesan, salt and pepper and mix slightly.
  • Spray treat a small non-stick skillet with cooking spray. Over medium heat, add the garlic and saute for 2-3 minutes, until it becomes fragrant.
  • Add the tofu noodles and heat through, stirring. Add pre-cooked meat or veggie here, if desired, and heat through.
  • Reduce heat to low-medium. Make a reservoir in the center of the pan with the noodles surrounding. Add the sauce mixture and let it soften. Mix it up and stir it into the noodles.
  • Heat through and serve!
