Very easy to make, and very yummy! This was a big hit with my boyfriend, even though he's a steak and potatoes kind of guy. I took this from Diana Rattray at About.com: Your guide to Southern Cuisine, and substituted tomatoes for mushrooms.

1 refrigerated pie shell (9-inch)
1 (10 ounce) package frozen chopped broccoli
1/2 fresh tomato, chopped
1 cup milk
3 eggs
2 tablespoons margarine, melted
1 tablespoon flour
1 teaspoon salt
1/2-1 teaspoon pepper
1 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 375 degrees.
  • Bake pie crust about 10 minutes or until bottom is slightly brown. Let cool.
  • Cook broccoli until tender (this can be done in the microwave); drain well.
  • Combine milk, beaten eggs, margarine, flour, salt, pepper and 3/4 cup cheese; stir until well blended.
  • Sprinkle remaining 1/4 cup of cheese over crust.
  • Layer broccoli and tomato on cheese.
  • Pour milk and egg mixture over all.
  • Bake at 375° for 35 to 45 minutes or until a knife inserted in center comes out clean.

4 c chopped broccoli

Steps:

  • 1. Prick pie crust and bake at 400°F for 12 min 2. Saute onion and broccoli in butter and broth until tender. 3. Beat milk and eggs. Add salt, pepper, nutmeg, and Swiss cheese, then add broccoli and onion. 4. Combine Parmesan cheese and bread crumbs in shallow bowl. 5. Sprinkle 1/3 of crumb mixture into pie crust, then dip tomato slices in the remaining mixture. 6. Arrange half of tomato slices in bottom of crust, then pour egg mixture over. Add remaining tomatoes on top and sprinkle with remaining crumb mixture. 7. Bake at 325°F for 1 hr or until knife comes out clean. Cool 20 min before serving

Steps:

2 large potatoes, peeled
2 cups chopped fresh broccoli
¼ cup milk
¼ teaspoon salt
1 tablespoon olive oil
½ onion, chopped
1 cup shredded Cheddar cheese
3 eggs
1 cup milk
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain. Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and set aside.
  • Mash the potatoes with milk and salt. Brush a deep 9 inch pie dish with olive oil and press the potatoes in. Brush with remaining olive oil. Bake in preheated oven for 30 minutes or until lightly browned.
  • Arrange onions, broccoli and cheese in the potato crust. Whisk together the eggs, milk, salt, pepper and nutmeg. Pour over broccoli and cheese.

1 tablespoon unsalted butter

3/4 pound broccoli florets, steamed until crisp-tender
1 cup grated sharp cheddar (4 ounces)

Steps:

  • Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.
  • Meanwhile, in a large skillet, melt butter over medium-high. Add onion, season with salt and pepper, and cook until light golden, 8 to 10 minutes. In a medium bowl, whisk together eggs and cream. Dough for single-crust deep-dish pie
1 cup chopped onion
2 tablespoons butter
4 large tomatoes, peeled, seeded, chopped and drained
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2 cups Monterey Jack cheese, divided
4 large eggs, room temperature
1-1/2 cups half-and-half cream

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. A taste of summer, this quiche is full of Italian flavours and is perfect for dinner in the garden

300g cherry tomato
drizzle olive oil
50g parmesan (or vegetarian alternative), grated
2 eggs
284ml pot double cream
handful basil leaves, shredded, plus a few small ones left whole for scattering
280g plain flour, plus extra for dusting
140g cold butter, cut into pieces

Steps:

  • To make the pastry, tip the flour and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 8 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 2 days. The pastry can also be frozen for up to a month.
  • Roll out the pastry on a lightly floured surface to a round about 5cm larger than a 25cm tin. Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the tin. Chill in the fridge or freezer for 20 mins. Heat oven to 200C/fan 180C/gas 6.
  • In a small roasting tin, drizzle the tomatoes with olive oil and season with salt and pepper. Put the tomatoes in a low shelf of the oven.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • When you remove the tart case from the oven, take out the tomatoes, too.
  • While the tart is cooking, beat the eggs in a large bowl. Gradually add the cream, then stir in the basil and season. When the case is ready, sprinkle half the cheese over the base, scatter over the tomatoes, pour over the cream mix, then finally scatter over the rest of the cheese. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, then remove from the tin. Scatter over the remaining basil and serve in slices.
