CHEF JOHN'S TOMATO TART

One of these days Michele and I will travel to the south of France, where we'll eat this amazing tomato tart at least once a day. It's going to be hot, since we'll have to go in the middle of summer to enjoy best possible tomatoes, but that's fine, as long as there's chilled rosé. One layer of tomato is plenty, since more than that will make for an overly wet tart, which means your pastry will not stay crispy.

Number Of Ingredients 10

1 sheet frozen puff pastry, thawed and cut into quarters
2 ½ tablespoons Dijon mustard
1 large ripe tomato, sliced into 1/4-inch rounds
salt and freshly ground black pepper to taste
3 pinches herbes de Provence
1 tablespoon freshly grated Parmigiano-Reggiano cheese
2 tablespoons extra-virgin olive oil, divided
1 pinch chopped fresh oregano
1 pinch chopped fresh parsley
1 pinch chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place 2 pieces of puff pastry onto a silicone-lined baking sheet. Press the short seam of 1 piece onto the other to form the rectangular base of the tart. Cut seams off the other 2 pieces of puff pastry and press them into the edges of the base to act as the border.
  • Freeze dough until firm, about 10 minutes.
  • Score border with a knife, making shallow cuts 1/4-inch apart. Press the bottom of a fork onto the seam in the middle and poke holes all over the base.
  • Bake tart shell until lightly golden and partially puffed, about 10 minutes. Press down on the base using the bottom of a fork. Avoid pressing border. Let cool for 10 minutes.
  • Spread mustard over the inside of the tart. Arrange tomato slices into a single layer on top and cut a few slices in half to fill in the gaps. Season with salt and pepper. Generously sprinkle herbes de Provence on top. Add Parmigiano-Reggiano cheese and drizzle most of the olive oil on top.
  • Bake in the preheated oven until pastry is well browned and crispy, 25 to 30 minutes. Cool to room temperature on the baking sheet or transfer to a wire rack using 2 spatulas. Drizzle remaining olive oil over the tart and sprinkle fresh oregano, parsley, and thyme on top.

1 1/2 cups flour
6 tablespoons cold unsalted butter, cut into 1/2-inch pieces
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons add more as needed extra virgin olive oil
1 tablespoon water
1 tablespoon Dijon mustard
1/2 cup grated gruyere cheese
4 plum tomatoes, cut into 1/2-inch slices and seeds removed
6 ounces camembert cheese, sliced into 1/8-inch strips
1/2 cup extra virgin olive oil
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1 teaspoon fresh rosemary, finely chopped
1 tablespoon fresh thyme leave
1 small bay leaf, finely crumbled
2 garlic cloves, minced

Steps:

  • To make the tart dough:
  • Using a pastry blender(or 2 knives), mix the flour, butter, salt, and pepper until mixture resembles coarse meal.
  • Using a fork, mix in 2 tablespoons of the oil and the water just until the bottom of the mixture begins to cling together. If necessary, add an additional tablespoon of oil.
  • Gather the dough into a ball, flatten into a disk, wrap in plastic wrap, and chill for 30 minutes.
  • Preheat oven to 375 degrees F.
  • Roll out the chilled dough into a 14-inch circle and place it into a tart pan; set aside.
  • Spread the mustard over the bottom of the tart shell. Sprinkle the Gruyère evenly over the mustard and alternately place the tomato and Camembert over the Gruyère.
  • In a small bowl, mix the remaining 1/2 cup of extra-virgin olive oil, all of the herbs, and the garlic together and brush two-thirds of the mixture over the tart. Bake on the middle shelf of the oven for 35 minutes.
  • Remove the tart and brush it with the remaining oil. Serve warm. Enjoy!

  • Mix together the olive oil, basil, parsley, thyme and garlic in a small bowl. Brush two-thirds of the mixture over the tart. Remove the tart and cool briefly before serving. Serve warm with the remaining herb oil.

1 17.3-ounce package frozen puff pastry (2 sheets), thawed
2 tablespoons (1/4 stick) butter
4 leeks (white and pale green parts only), sliced (about 4 cups)
1/4 cup water
2/3 cup whipping cream
4 ounces Camembert cheese, cut into 1/2-inch pieces
1 large egg
Pinch of cayenne pepper
Pinch of ground nutmeg
1/4 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Roll out each pastry sheet on lightly floured surface to 12-inch square. Stack squares and roll to 15-inch square. Using 14-inch pizza pan as guide, cut stacked dough into 14-inch round. Crimp edge of dough to form 1/4-inch rim. Transfer to pizza pan or baking sheet. Freeze 10 minutes.
  • Melt butter in heavy large skillet over medium heat. Add leeks and 1/4 cup water; cook until leeks are tender, about 15 minutes. Season leeks with salt; set aside to cool. Bring cream to simmer in medium saucepan over medium heat. Reduce heat to low; add Camembert and stir until melted. Remove from heat and cool 5 minutes. Whisk in egg, cayenne, and nutmeg. Set custard aside.
  • Sprinkle Parmesan over crust. Spread leeks over. Drizzle custard over. Bake until bottom is golden, about 20 minutes. Transfer to rack; cool 10 minutes. Serve warm or at room temperature.

This is a typical Norman recipe, a way to use up the little bits of cheese that somehow manage to end up on a cheese platter. It is delicious.

4 large eggs
3/4 cup whole milk
Sea salt
One 10-1/2 inch tart shell, pre-baked
1 Camembert cheese weighing about 9 ounces, cut into 1/4-inch thick slices

Steps:

  • 1. Preheat the oven to 450 degrees F (230C).
  • 2. In a medium-sized mixing bowl, whisk together the eggs and the milk. Season generously with salt and pepper.
  • 3. Lay the slices of cheese evenly over the bottom of the pastry shell. Pour the egg mixture over the cheese, and bake in the center of the oven until golden and puffed, 25 to 30 minutes.
  • 4. Remove from the oven, separate the tart from the mold, and transfer it to a serving platter. Serve immediately.

Reduce the temperature to 180°C/fan160°C/gas 4. Spread the mustard over the base of the tart, then layer over the tomatoes, Camembert and goat’s cheese. In a jug, whisk the egg, yolk and crème fraîche together, stir in half the roughly chopped rosemary leaves, season well and pour evenly over the tart. Sprinkle with the remaining rosemary.
