½ cup balsamic vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard, or more to taste
1 clove garlic, or more to taste, minced
salt and freshly ground pepper to taste
4 large skinless, boneless chicken breast halves
1 pint cherry tomatoes, halved
1 lemon, zested and juiced

Steps:

  • Mix balsamic vinegar, olive oil, mustard, and garlic together in an oven-safe baking dish; season with salt and pepper. Place the chicken breasts in the vinegar mixture.
  • Marinate chicken in the refrigerator for at least 4 hours.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Roast chicken in the preheated oven for about 30 minutes. Add tomatoes to the baking dish and continue cooking until the chicken is no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Sprinkle lemon zest and drizzle lemon juice over the chicken.

2 tablespoons olive oil, divided
2 cups grape tomatoes
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt

Steps:

  • Preheat oven to 400°. In a small bowl, mix honey and 1 tablespoon oil. Add tomatoes and toss to coat. Transfer to a greased 15x10x1-in. baking pan. Bake 5-7 minutes or until softened., Pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. In a large skillet, heat remaining oil over medium heat. 2 medium carrots, chopped
1/2 cup thinly sliced shallots
2 pounds bone-in chicken thighs, skin removed
1 tablespoon all-purpose flour
1/2 cup reduced-sodium chicken broth
1 can (14-1/2 ounces) petite diced tomatoes, undrained
1/4 cup balsamic vinegar
1 tablespoon olive oil
2 garlic cloves, minced
1 bay leaf
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
Hot cooked orzo

Steps:

  • Place carrots and shallots in a 3- or 4-qt. slow cooker; top with chicken. In a bowl, whisk flour and broth until smooth; stir in tomatoes, vinegar, oil, garlic and seasonings. Pour over chicken. Cook, covered, on low until chicken and carrots are tender, 6-8 hours., Remove chicken; cool slightly. Discard bay leaf and, if desired, skim fat from carrot mixture., Remove chicken from bones; shred slightly with two forks. Return to slow cooker and heat through. Serve with orzo. Chicken is always a weeknight winner. It's satisfying, speedy, and so versatile, which is why our chefs are always brainstorming new ways to take it to the next level. This week, they went all out by coating cutlets in Italian herbs, then searing for an eye-catching crust and roasting with a blanket of mozzarella until the meat is tender and the cheese is melty. It's all perched atop twirly garlicky spaghetti, then spooned with a warm balsamic tomato topping that's laced with fresh parsley and chives. You'd be chicken not to try it.

1 Green Herb Blend
10 Chicken Cutlets
1 Italian Seasoning
½ Mozzarella Cheese
6 Spaghetti
5 Balsamic Vinegar
1 Garlic
2 Cooking Oil
¼ Sugar
4 Butter
Kosher Salt
Pepper

Steps:

  • • Adjust rack to top position and preheat oven to 425 degrees. Bring a large pot of salted water to a boil. Wash and dry produce. • Finely dice tomato. Thinly slice chives. Pick parsley leaves from stems; finely chop leaves. Peel and mince garlic.
  • • Pat chicken* dry with paper towels. Season with 1 tsp Italian Seasoning (2 tsp for 4 servings), salt, and pepper. (You'll use the remaining Italian Seasoning later.) • Heat a drizzle of oil in a medium pan over medium-high heat. Add chicken and cook until browned, 2-3 minutes per side. • Transfer chicken to a baking sheet. Top with half the mozzarella (save the rest for serving). • Roast on top rack until chicken is cooked through and cheese melts, 9-11 minutes.
  • • Once water is boiling, add spaghetti to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. • Reserve ½ cup pasta cooking water, then drain. Keep empty pot handy for step 5.
  • • While pasta cooks, heat a drizzle of oil in pan used for chicken over medium-high heat. Add tomato and remaining Italian Seasoning. Cook, stirring, until slightly softened, 1-2 minutes. • Stir in vinegar and ¼ tsp sugar (½ tsp for 4 servings). Simmer until mixture is slightly thickened, 1 minute. • Remove pan from heat and stir in 1 TBSP butter (2 TBSP for 4) until melted. Stir in chives and chopped parsley; season with salt and pepper. Turn off heat.
  • • Melt 2 TBSP butter (4 TBSP for 4 servings) in pot used for pasta over low heat. Stir in garlic; cook until fragrant, 30 seconds. • Add drained spaghetti, 2 TBSP reserved pasta cooking water (4 TBSP for 4), and 1 TBSP butter. Toss to thoroughly combine. • Season generously with salt and pepper.
  • • Slice chicken crosswise if desired. • Divide spaghetti between bowls and top with chicken. Spoon balsamic tomato over chicken. Sprinkle with remaining mozzarella and serve.

4 (6 ounce) chicken breasts
3 garlic cloves, minced
1/2 onion, diced
2 cups fresh tomatoes, diced
1/4 cup balsamic vinegar
1/4 cup white wine
4 cups spinach, washed and dried
1 teaspoon basil, dried
extra virgin olive oil, for pan
salt and pepper, to taste

Steps:

  • Heat a large skillet and coat the bottom with just enough olive oil (about 2 Tbsp).
  • Saute garlic, dried basil, and onion until fragrant.
  • Flatten chicken breasts to 1/2 inch thick. Sprinkle with salt and pepper, sesar each breast side for about 6 minutes or until done.
  • When you have about 5 minutes left, add the tomatoes, vinegar and wine.
  • Allow to cook down for last 5 minutes.
  • Place a cup of spinach onto a plate, followed by the tomato reduction and then top off with the chicken.
  • Alternatively, toss spinach in the pan and stir for a minute or two, and serve skillet contents on top of egg noodles (our favorite way to eat it!).

2/3 cup balsamic vinegar
1/4 cup olive oil
2 teaspoons minced garlic

5 lbs chicken thighs, and drumsticks
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees.
  • To make the sauce: In a small bowl, whisk together the tomato paste, balsamic vinegar, olive oil, garlic, sugar, salt and pepper. Set aside.
  • Season the chicken with salt and pepper and place on two, rimmed baking sheets. Bake for 30 minutes.
