LEEK AND TOMATO GRATIN

Leek and Tomato Gratin image

Provided by Mark Bittman

Categories     easy, side dish

Time 1h

Yield 4 servings

Number Of Ingredients 6

2 pounds leeks, preferably slender
1 pound plum tomatoes
1/4 cup olive oil
Salt and pepper
Grated Parmesan, optional
Chopped parsley, optional

Steps:

  • Heat the oven to 350. Trim the leeks of the hard green parts and outer skin, and wash them well. If they're fat, quarter them the long way. Chop the tomatoes and put them in a gratin dish long enough to hold the leeks but narrow enough so that everything is snug. Add the oil and nestle the leeks in there; sprinkle with salt and pepper.
  • Bake, checking and stirring occasionally, until the tomatoes become saucy and the leeks are very, very tender, about an hour. If you like, sprinkle with Parmesan and raise the heat until the cheese melts and browns a bit. Otherwise, sprinkle with chopped parsley and serve hot or warm.

VEGAN LEEK AND TOMATO TART

Vegan Leek and Tomato Tart image

This Puff Pastry Vegan Leek and Tomato Tart is dairy-free, easy to make and absolutely delicious. It's made in less than 30 minutes. Perfect for a healthy lunch or dinner!

Provided by Natalia | Simple Green Recipes

Categories     Savory

Time 25m

Number Of Ingredients 8

1 cup virgin olive oil
1 dry red chili
1 sheet vegan Puff Pastry
1 cup vegan cream cheese
2 medium leeks, sliced
2 cups Cherry Tomatoes, halved
Salt and pepper to taste
Thyme to taste

Steps:

  • Preheat oven to 180ºC/350ºF. Line a baking sheet with baking paper and set aside.
  • Prepare the Spicy Chilli Oil by placing the oil and the dry red chili in a small saucepan, and bring to boil for one minute. After that, remove from heat and let cool to room temperature. Store in an airtight bottle or jar.
  • Unfold the puff pastry and place it onto prepared baking sheet.
  • Use a sharp knife to score the perimeter of the dough 1-inch from the edge, making sure not to cut all the way through the dough. Prick pastry in a few places with a fork inside the scored rectangle so that the center of the pastry does not puff in the oven.
  • Spread the cream cheese on the pastry, arrange the sliced leeks and the halved tomatoes over the cheese. Drizzle everything with spicy chili oil, around 2 tablespoons, and sprinkle with salt and pepper.
  • Bake in oven for 15 minutes or until the edges of pastry are browned, puffed, and crisp. Let tart cool 10 minutes before cutting into pieces.

TOMATO AND GOAT CHEESE TART

Tomato and Goat Cheese Tart image

Serve this savory tart as a side dish or cut into little squares as an hors d'oeuvre. A layer of sour cream and mustard topped with sauteed leeks prevents the crust from getting soggy under juicy tomatoes.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 55m

Yield Makes one 12-inch tart

Number Of Ingredients 10

All-purpose flour, for rolling
1 sheet frozen puff pastry, thawed
1 tablespoon sour cream
1 teaspoon grainy mustard
Coarse salt and ground pepper
2 large leeks, white and light-green parts only
1 tablespoon unsalted butter
3/4 pound grape or cherry tomatoes, halved if large, or plum or beefsteak tomatoes, sliced 1/4 inch thick, or a combination
2 ounces fresh goat cheese, crumbled
2 teaspoons fresh thyme or basil leaves

Steps:

  • Preheat oven to 400 degrees. On a lightly floured work surface, roll out puff pastry to a 12-inch square; transfer to a parchment-lined baking sheet. In a small bowl, stir together sour cream and mustard and season with salt and pepper. Spread sour cream mixture evenly over pastry. Fold over 1/2-inch border on all sides and press edges to seal. Refrigerate 10 minutes.
  • Meanwhile, halve leeks lengthwise; rinse thoroughly, pat dry, and slice 1/4-inch thick. In a large skillet, melt butter over medium-high. Add leeks, season with salt and pepper, and cook, stirring frequently, until soft, 3 minutes. Reduce heat to medium and cook, stirring frequently, until leeks are very soft, 5 minutes. Arrange leeks evenly over sour cream mixture on pastry. Top with tomatoes and season with salt and pepper. Bake until pastry is golden brown and crisp, 25 minutes. Let cool slightly. Top with goat cheese and herbs before cutting into squares. Serve warm or at room temperature.

MINI LEEK TARTS

Mini Leek Tarts image

I decided to make traditional leek tart in a slightly non traditional way, few mini tarts instead of one, big round tart. I made it that way so my other half would eat it too. He's not much of a veggie guy so I mixed in some ham to his portion. That way I had my vegetarian leek tarts and he had ham and leek ones.

Provided by Be Nutritious

Categories     Cheese

Time 50m

Yield 9 mini tarts, 3-4 serving(s)

Number Of Ingredients 7

1 sheet of store bought puff pastry (I used Pepperidge Farm)
1 large leek (or 2 small)
1 cup half-and-half
1 cup swiss cheese
1 egg, beaten slightly
salt and pepper
1 tablespoon butter

Steps:

  • Chop of the green part from leek and cut lengthwise. Slice finely and in a sieve run under cold running water to clean from the soil dirt.
  • On a skillet melt the butter and add leeks. Add salt, pepper and sweat few minutes until soft.
  • In a bowl combine half & half, egg and shredded cheese. Add salt pepper and mix together. Add leek and stir the mixture around.
  • Roll out the puff pastry and cut out nine uniform squares. Place each square in the muffin pan like on a picture.
  • Spoon the mixture into each tart and bake in the oven preheated to 400ËšF for 30-40 min until the edges are nicely brown. Let cool slightly and transfer each tart to a plate.

  • Place butter, egg, water and dash salt in food processor work bowl fitted with metal blade. Pulse until butter is coarsely chopped. Spoon flour evenly over butter. Process just until dough is crumbly but not in ball (over-processing will toughen dough). Transfer dough to large plastic food bag. Work through bag to gather dough into ball, then flatten into disk. Place in another food bag, then refrigerate at least 2 hours or up to 2 days. (Dough may also be frozen up to 1 month; thaw slowly in refrigerator.)
  • Let chilled dough rest at room temperature 10 minutes before rolling. Roll dough on floured surface into circle about 1/8 inch thick. Transfer to 11-inch tart pan with removable bottom. Press into place without stretching dough. Trim pastry edge for 1-inch overhang. Reserve any pastry scraps for patching later. Fold overhang inside to make sides doubly thick. Press sides of dough firmly into place, pushing crust up 1/4 inch above edge of pan to allow for any shrinkage during baking. Cover loosely with plastic wrap and refrigerate until dough is firm, about 1 hour. Line shell with parchment paper or foil; fill with dried beans.
  • Set tart pan on baking sheet and bake on lower rack at 400 degrees until dough is starting to set, about 12 minutes. Carefully lift out paper and beans; continue to bake until lightly browned, about 12 minutes more. Patch any cracks with thin patches of reserved dough; it is not necessary to bake patches. Crust can be filled while still warm from oven, then baked as directed.
