1/2 lb onion, chopped
2 teaspoons oregano
1 teaspoon minced garlic
2 teaspoons basil
1 tablespoon sugar
1 teaspoon cayenne pepper

Steps:

  • Brown ground turkey with chopped onions until meat is no longer pink, and juices run clear.
  • Drain the excess juice.
  • Mix remaining ingredients in a crock pot and stir well.
  • Add turkey and onions to mixture and stir again.
  • Simmer in covered crock pot on low for approx 6 hours, stirring occasionally.

1/2 cup chopped green onions
2 garlic cloves, minced

Number Of Ingredients 15

1 onion, peeled
1 celery stalk
2 tablespoons garlic flavoured oil
1 teaspoon dried thyme
2 x 14 ounce cans diced plus approx. 3 1/3 cups (2 full cans) water
1 teaspoon sugar
1 teaspoon kosher salt flakes or 1/2 teaspoon table salt
Pepper, to taste
1 pound ground turkey
1 egg
3 tablespoons breadcrumbs
3 tablespoons grated Parmesan
2 tablespoons of finely chopped onion and celery (from the tomato sauce ingredients above)
1 teaspoon Worcestershire sauce (such as Lea and Perrins)
1/2 teaspoon dried thyme

Steps:

  • Put the peeled onion and celery into a processor and blitz to a mush. Or you can chop as finely as humanly possible by hand. Reserve 2 tablespoons for the meatball mixture.
  • Warm the garlic flavoured oil in a heavy saucepan or Dutch oven, add the onion and celery mixture, along with the thyme, and cook at moderate to low heat, stirring every now and again, for about 10 minutes.
  • Add the cans of tomato, filling up each empty can with water to add to the pan. Season with the sugar, salt and pepper, stir and then leave to come to a bubble, and then turn down to let it simmer gently while you get on with the meatballs.
  • Put all the ingredients for the meatballs, including the reserved chopped onion and celery, and salt according to preference, into a large bowl and mix together, gently, with your hands, wearing disposable vinyl gloves if you feel so inclined. Don't over-mix, as that will make the meatballs dense-textured and heavy.
  • When all the meatball ingredients are not too officiously amalgamated, start rolling. The easiest way really to do this is to pinch out an amount about the size of a generously heaped teaspoon and roll into a bowl between the palms of your hands. Put the meatballs on a baking tray, lined with baking parchment or greaseproof paper, as you go. You should get about 50 little meatballs.
  • Drop these gently into the simmering sauce; I try and let these fall in concentric circles working around the pan from the outside edge inwards, in only the vaguest of fashions.
  • Let the meatballs cook for 30 minutes, until cooked through. Serve with rice or pasta or however you so please.

¼ cup olive oil
½ white onion, chopped
1 tomato, chopped

  • Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
  • Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.

4 fillets of turkey steaks, about 1 1/4 pounds
Salt to taste if desired
Freshly ground pepper to taste
3 red, ripe tomatoes, about 1 pound
3 tablespoons olive oil
1/4 pound mushrooms, thinly sliced, about 2 cups
2 teaspoons finely minced garlic
1/2 teaspoon chopped dried rosemary
1/4 cup dry white wine
3 tablespoons butter
2 tablespoons finely chopped basil or parsley
2 tablespoons flour
Juice of 1/2 lemon
1/4 cup finely chopped parsley

Steps:

  • Sprinkle turkey pieces on both sides with salt and pepper and set aside.
  • Core, peel and seed tomatoes. Cut into small cubes. There should be about two cups.
  • Heat two tablespoons of the oil in a saucepan and add mushrooms. Cook, stirring, until mushrooms give up their liquid. Cook further until liquid evaporates. Add garlic and rosemary and stir. Add wine and cook about one minute.
  • Add tomato, salt and pepper and cook five minutes. Add two tablespoons of the butter and the basil or parsley and stir. There should be about 2 1/4 cups.
  • Meanwhile, coat turkey pieces with flour and shake off excess.
  • Heat remaining oil and butter in a skillet large enough to hold the pieces in one layer. Put the slices in the skillet and cook on one side until golden brown, about 3 to 4 minutes. Turn slices and continue cooking about 4 to 5 minutes. Sprinkle with lemon juice.
  • Spoon tomato sauce over a warm or hot serving dish and top with the turkey slices. Serve sprinkled with parsley.

3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
2 (28-ounce) cans peeled whole tomatoes, crushed by hand and juices reserved
1 can tomato paste
Salt
Whole basil leaves, for garnish
Grated Parmesan, (optional)
1 pound ground turkey meat

Steps:

  • In a 3-quart saucepan, heat the olive oil over medium heat. Add the garlic and half the onions, and cook until soft and light golden brown, about 8 to 10 minutes. Add the thyme and carrot, and cook 5 minutes more, until the carrot is quite soft. Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes until as thick as hot cereal. Season with salt and serve. Saute onions until light golden brown in olive oil over medium heat and then add the ground turkey, add salt and pepper to taste. Once the ground turkey is cooked add to the sauce When ready to use, the cooked pasta should be added to a saucepan with the appropriate amount of sauce. Garnish with basil leaves and cheese, if using. Produces enough sauce for one medium sized lasagna. This sauce holds 1 week in the refrigerator or up to 6 months in the freezer.

1 (28 ounce) can crushed tomatoes

1/2 cup grated Parmesan cheese, more for serving, if desired
1/2 cup panko or other plain dried bread crumbs
1/4 cup minced onion
1/4 cup chopped chives or basil
2 garlic cloves, grated on a microplane or minced

Steps:

  • In a large bowl, combine cheese, bread crumbs, onion, chives, garlic, salt, pepper, oregano and red pepper flakes, if using, and mix well. Return meatballs and their juices to pan, shake pan to cover the meatballs with sauce, and lower heat. Partly cover pan and simmer until the meatballs are cooked through, 15 to 20 minutes.
  • Serve hot, drizzled with more olive oil and sprinkled with more cheese, if you like.
