1 cup dark beer
3 pounds bone-in Boston butt, cut into country style ribs
1 teaspoon garlic powder
1 teaspoon crushed red pepper
1/2 teaspoon red and black pepper blend
1 teaspoon Hungarian paprika
1/2 teaspoon chili powder
1/2 teaspoon salt
1 tablespoon brown sugar
2 sweet banana peppers
1 cup dark beer
1/4 cup brown sugar
1 teaspoon crushed red pepper flakes
1 teaspoon chipotle hot sauce (recommended: Tabasco)
3 tablespoons Worcestershire sauce
4 tablespoons hot sauce (recommended: Texas Pete)
2 tablespoons white balsamic vinegar
1 1/2 cups cider vinegar
1 teaspoon spicy brown mustard
1 1/2 tablespoons tomato paste
1 1/2 cups beef broth
1 tablespoon ground cinnamon
1 tablespoon brown sugar
1 pineapple, peeled and cut into 1-inch thick slices
1 cup shredded cabbage
1 scallion, chopped
1/4 red onion thinly sliced and chopped
1 poblano pepper
1 jalapeno pepper
3 Fresno chilis or red jalapenos
1/3 cup dark beer
1 tablespoon balsamic vinegar
1 pound applewood smoked bacon
5 kaiser rolls

Steps:

  • Preheat oven to 325 degrees F.
  • Pour beer in bottom of baking pan.
  • Put grate on top (high enough to keep pork off the beer). Mix all spices together and rub over all of pork. Bake, covered, for 2 1/2 hours (or until pork is falling off the bone). Once cooked shred to make pulled pork (make sure to discard fat).
  • Banana peppers:
  • Roast on grill then remove skin and seeds. Chop fine and mix with pulled pork.
  • Barbeque sauce:
  • Pour beer into a saucepan. Add brown sugar and crushed red pepper flakes.
  • Cook over medium-high heat until it reduces down to about 1/2 cup (stirring regularly). Once reduced add all the other ingredients except beef broth. Stir until well combined (no lumps). Then slowly pour in beef broth. Simmer for 20 minutes.
  • Mix barbeque sauce with finished pulled pork
  • Mix cinnamon and brown sugar. Rub onto pineapple slices. Grill slices about 2 minutes on each side on medium heat (want to get grill marks). Chop fine and reserve.
  • Slaw:
  • In a large bowl toss together the cabbage, scallion, onion, and peppers. In separate bowl whisk together beer, vinegar and brown sugar. Pour mixture over cabbage and peppers and toss (let sit 30 minutes prior to serving).
  • Cook bacon in oven or flat-top panini press until crisp. Flip half way through to be crisp on both sides (dry on paper towels). Set aside.
  • To serve:
  • Cut rolls in half. On bottom put barbeque covered pulled pork (a nice generous portion).
  • Then add 1 tablespoon of pineapple and 3 slices of crumbled bacon. Then add 2 tablespoons of slaw. Put top of roll back on and serve.

2 pounds (in 1 piece) 3 layer pork belly, sliced into long thin strips like bacon
1 tablespoon rice wine (or white wine if rice is unavailable)
1 teaspoon sugar
1 medium onion, sliced thinly (1/2 cup)
3 cloves garlic, sliced thinly
1-inch fresh ginger, sliced thinly
2 scallions, sliced thinly
1 tablespoon hot red chili powder (gochu garu)
1/2 teaspoon toasted sesame seeds, crushed
1 sweet red pepper, halved, seeded and cut into 8 equal pieces
1 tablespoon korean sesame oil
2 tablespoons soy sauce
1/2 teaspoon white pepper

Steps:

  • Put the pork slices in a large mixing bowl. Add the wine and sugar and mix well. Add the onion, garlic, ginger, scallions, chili powder, sesame seeds, sweet pepper, sesame oil, soy sauce, and white pepper. Mix everything together and let the mixture stand at room temperature for 1 hour.
  • Ideally, one should broil the pork slices over charcoal but in the absence of that, a gas or electric broiler will do. Barbecue for several minutes until either medium or well done. Serve with rice.
  • Suggested drink: OB Beer, Jin Ro Beer, Cloudy Sake.

2 ½ pounds pork shoulder
½ cup chopped onion
1 clove garlic, minced
¼ cup brown sugar
1 teaspoon dry mustard
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups ketchup
¼ cup Worcestershire sauce

Steps:

  • Cut boneless pork shoulder crosswise into 1/4 inch slices. Partially freezing it will make slicing easier.
  • In the slow cooker, combine sliced pork, onion, garlic, brown sugar, dry mustard, salt, pepper, ketchup, and Worcestershire sauce; mix well, and cover. Cook on Low, stirring occasionally, for 6 to 8 hours or until the meat is tender.
  • OR : In a Dutch oven or large saucepan, combine pork, onion, garlic, brown sugar, dry mustard, salt, pepper, ketchup, and Worcestershire sauce; mix well. Bring to a boil, reduce heat, and cover. Simmer, stirring occasionally, for 2 1/2 to 3 hours or until pork is tender.
