FRESH TOMATO AND CARAMELIZED ONION JAM RECIPE



Fresh Tomato and Caramelized Onion Jam Recipe image

The bright sweet and tart flavor of in-season tomatoes are preserved in this jam to keep that deliciousness coming into the fall.

3/4 pounds yellow onions (about 2 medium), finely sliced
1 tablespoon butter
1 1/2 pounds roma tomatoes (about 6 medium), peeled, cored, seeded, and finely chopped
1/2 cup white sugar
1/4 cup light brown sugar
2 tablespoons juice from 1 lemon
2 tablespoon apple cider vinegar
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Steps:

  • Melt butter in a 3-quart stainless-steel saucepan or saucier or a 4- or 5-quart enameled Dutch oven over high heat. Add onions and cook, stirring frequently, until bottom of saucepan is glazed in a pale brown fond, about 5 minutes. Add 2 tablespoons water and scrape up fond with wooden spoon. Continue to cook, stirring frequently, until fond has built up again, about 2 minutes longer. Add 2 more tablespoons water and scrape up browned bits. Repeat cooking, adding water, and scraping until onions are completely softened and a deep, dark brown, about 15 minutes total.
  • Add tomatoes, white sugar, brown sugar, lemon juice, vinegar, salt, and red pepper flakes in with the onions; stir to combine. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, until tomatoes have broken down and jam has thickened and developed a jammy consistency, 1 to 1 1/2 hours. Remove from heat. Transfer jam to an airtight container and store in refrigerator for up to 2 weeks.

Linguine with Caramelized Onions and Angry Tomato Sauce image

2 tablespoons extra-virgin olive oil
1 tablespoon butter
1 large red onion, thinly sliced (1 1/2 cups)
1/2 lb thick-sliced pancetta or bacon, cut into 1/4-inch pieces
1 large clove garlic, finely chopped
1 tablespoon tomato paste
1/4 cup oil-packed sun-dried tomatoes, drained and chopped
1 can (28 oz) crushed tomatoes, undrained
1 teaspoon dried oregano leaves
1/4 teaspoon crushed red pepper flakes
1 tablespoon salt, if desired
1 lb uncooked linguine
1/2 cup freshly grated Parmesan cheese

Steps:

  • Fill large pot with 5 quarts water; heat to boiling over high heat.
  • Meanwhile, in 12-inch skillet, heat oil and butter over medium heat. When butter stops sizzling, add onion and cook 15 minutes, stirring occasionally, until onion is soft and golden brown. Scatter in pancetta and cook 5 minutes longer or until brown and crisp. Add garlic and cook about 30 seconds or until fragrant.
  • Use spatula to clear a spot in center of skillet. Add tomato paste and smear it on skillet bottom. Immediately scrape tomato paste off skillet. Paste should become even darker red, maybe even browned. If not, repeat until you see a color change. Stir tomato paste into onion mixture.
  • Add sun-dried tomatoes and crushed tomatoes to skillet. Scrape bottom of skillet to dislodge any stuck bits. Stir in oregano and red pepper. Heat to a simmer and reduce heat to low, stirring occasionally, while you prepare pasta.
  • When water in pot oven is boiling, add salt if desired. When water returns to a boil, add linguine. Stir immediately to make sure it doesn't stick to itself or pan. Boil linguine 8 to 10 minutes or until cooked through but still slightly firm. Drain in colander. There is no need to shake off excess moisture.
  • Return linguine to pot and stir in sauce. Cook over medium heat 2 minutes, stirring occasionally, until sauce thickens slightly. Sprinkle with cheese; stir to combine. Serve with additional cheese if desired.

Served this the other day on some "stacked" oven-baked ribeye. This is a spicy tomato/onion recipe that is a cross between a jam, and a chutney. At least that is how I interrupt it. It is awesome as a topping on a good beef steak, a juicy pork chop. How about serving it with cream cheese on crackers, or toast points as an hors d'oeuvres, or appetizer. 2 tablespoon(s) coconut sugar
1 tablespoon(s) chili powder, hot, or mild, your choice
2 teaspoon(s) ground cumin

1 - 2 tablespoon(s) balsamic vinegar

Steps:

  • PREP/PREPARE
  • Gather your ingredients (mise en place).
  • Thinly cut the onions into halfmoons, and caramelize. Use your own method, or the above recipe link.
  • When the onions are fully caramelized, add the coconut sugar, chili powder, cumin, cayenne, and balsamic vinegar.
  • Stir at a simmer, for 2 minutes.
  • Finally, add the apple-cider vinegar, and fire-roasted tomatoes; including the juices from the can.
  • Continue to simmer, and cook, stirring frequently, until it reduces, and thickens, about 10 - 12 minutes (depending on the heat of your pan).
  • Allow to cool, then store in the refrigerator, using a non-reactive container with a tight-fitting lid.
  • Chef's Note: Bring to room temperature before using.
  • PLATE/PRESENT
  • Place on crackers with some cream cheese, and serve as an appetizer, or use as a topping for beef or pork. Enjoy.
  • Keep the faith, and keep cooking.
