I found the original recipe for this on the Disney Family Fun site and changed it up a bit to add some more Asian inspired flavor. The original was featured as a dish that cost under $1.50 a serving and adding the additional ingredients doesn't increase the cost by much! It's still quick, easy, cheap and tastes great!

1 lb frozen cheese tortellini
1 cup edamame, shelled
1 cup red pepper, diced
1 lb smoked sausage (I use kielbasa)
1/4 cup low-fat Italian salad dressing
1/2 teaspoon ground ginger
1/4 cup low-sodium teriyaki sauce

Steps:

  • Set 6 quarts of salted water to boil in a large pot.
  • Meanwhile, chop red pepper and slice the smoked sausage into 1/4 inch-thick rounds.
  • Stir-fry red pepper and sausage together until heated through -- about 5 minutes.
  • Add tortellini to boiling water and cook for 5 minutes.
  • Add edamame to water and boil for another 2 minutes. Drain tortellini and edamame well.
  • Mix Italian dressing, ginger and teriyaki sauce.
  • Toss everything together with the Italian dressing mixture and heat through one final time.

1 (14 ounce) package Hillshire Farm® Smoked Sausage, diagonally cut into 1/4-inch slices
3 cloves garlic, minced
1 medium onion, 1/2-inch dice
1 green bell pepper, sliced
1 (12 ounce) package fresh cheese tortellini, cooked according to package directions
1 teaspoon dried oregano
1 (24 ounce) jar marinara sauce
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a large 12-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until brown. Add garlic, onion and bell pepper. Lower heat to medium and stir until vegetables are soft, about 5 minutes.
  • Stir in cooked tortellini, oregano, marinara sauce and one cup of cheese. Top with remaining cheese. Bake in the oven for about 10 minutes until cheese is melted and bubbly.

1 lb frozen cheese tortellini
1 cup frozen shelled edamame
1 cup diced red pepper
1 lb smoked sausage
1/2 cup Italian dressing

Steps:

  • Set 6 quarts of salted water to boil in a large pot.
  • Meanwhile, chop red pepper and slice the smoked sausage into 1/4 inch-thick rounds.
  • Stir-fry red pepper and sausage together until heated through -- about 5 minutes.
  • Add tortellini to boiling water and cook for 5 minutes.
  • Add edamame to water and boil for another 2 minutes. Drain tortellini and edamame well.
  • Toss everything together with the Italian dressing and heat through one final time.

12 ounces sweet Italian sausage links
1 cup water
1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
¼ cup tomato paste
¼ cup dry red wine
1 teaspoon dried oregano
¼ teaspoon crushed red pepper
2 tablespoons chopped fresh parsley
1 green bell pepper, diced
1 (16 ounce) package fresh tortellini

Steps:

  • Combine sausage links and water in a large skillet and bring to a boil, about 5 minutes. Cover, reduce heat, and simmer until juices run clear, about 15 minutes. Drain off water and cook links in the skillet, stirring frequently, until browned, 2 to 4 minutes more. Remove from skillet, allow to cool, and cut into 1/2-inch diagonal slices. Wipe skillet clean using a paper towel.
  • Place skillet over medium heat and add olive oil. Add onion to hot oil and cook until tender but not brown, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in tomatoes, tomato paste, wine, oregano, and red pepper. Add cooked sausage and bell pepper to the skillet. Bring to a boil, about 5 minutes. Reduce heat and cover. Simmer to desired thickness, about 20 minutes.
  • Meanwhile, bring 4 quarts of water to a boil in a saucepan, about 5 minutes. Add tortellini, reduce heat slightly and boil until pasta is tender but still firm to the bite, 5 to 10 minutes. Drain and return pasta to the warm saucepan. Stir parsley into the sausage mixture, pour over pasta, and serve immediately.
