PATACONES OR TOSTONES
Steps:
- Peel the plantains, the easiest way to peel a green plantain is to make the lengthwise cut on one of the angles, the cut should be skin deep without touching the actual flesh of the plantain, then use the knife to raise the skin and peel it off.
- Cut the plantains into thick slices, you can make straight cuts or slightly diagonal cuts.
- Heat the oil over medium high heat in a frying pan - use enough oil to almost cover the plantain slices - or a deep fryer, temperature should be about 350 F, fry the plantains until they start to get yellow, but not golden.
- Remove the plantains and place on paper towels to drain the oil.
- Use the bottom of a glass (or small bowl or a wood pestle) to smash and flatten the plantains, do this gently to keep the slices from breaking, a few cracks is ok as long as the whole slice remains in one piece. It is best to do this when they are still warm.
- Sprinkle the plantain slices with salt and other seasonings (if using the raw garlic rub it on the slices).
- Reheat the oil, temperature should be about 375 F and fry the plantains until golden on each side, about 1-2 minutes per side.
- Remove from the oil, drain again on paper towels, and add additional seasoning if needed.
- Serve warm as a side dish or as an appetizer with dipping sauces.
- Peel the green plantains, cut in half and place in pot with sufficient water to cover them.
- Bring the water to a boil and boil for about 25-35 minutes or until tender.
- Remove from the heat but the leave the plantains in the water.
- Cut the plantains in thick slices and gently flatten - as much as possible without cracking - with a wood mortar and pestle or the bottom of a glass.
- Sprinkle the flattened plantain slices with salt and seasonings.
- Heat the oil in large frying pan over high heat and cook the plantains until golden, about 2 minutes on each side.
- Transfer to a paper towel to drain the oil.
- Add additional salt and seasonings if needed and serve warm with dipping sauces or as a side dish.
AIR FRYER TOSTONES
Tostones are made with green (unripe) plantains and are a very popular side dish in many Caribbean and South American countries. The traditional method is to twice-fry the plantains in oil, but this air-fried version of my Puerto Rican family's recipe is much lighter as it uses olive oil spray instead of deep-frying.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
- Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
- Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
- Remove the tostones from the salted water and pat dry with a paper towel.
- Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.
TOSTONES (GREEN PLANTAIN CHIPS)

- Cut the tips off the plantains. Score the plantains lengthwise on both sides and place in a bowl. Cover with boiling water. Let sit for 10 minutes. Peel, using a small sharp knife, and slice into 1/2inch slices.
- Heat the oil to rippling in a large frying pan over medium heat. Cook the plantains for 10 minutes. Remove the plantain slices from the oil (reserving the oil) and place in one layer on a tea towel or several layers of absorbent paper on a counter top. Turn to remove excess oil. Using bunchedup absorbent paper or another tea towel, press down on each slice. Heat the reserved oil to 375 degrees and fry the plantains until crisp and golden. Season with garlic powder and salt.
FRIED TOSTONES (FRIED PLAINTAINS CHIPS)
My mom is Panamanian, so while being a child she made these for breakfast or dinner. I have to say this is my all time favorite type of food to eat! You can make these for any type of meal!

Steps:
- 1. You want to use a knife to open a plantain. 1st cut off the ends. Then, on the OUTER curve of the plantain, slice vertically down the skin. From that incision pull away the skin. (Should take bout 5 minutes)
- 2. Cut the plantain into 1-inch circles. Add the peanut oil to a skillet and raise heat to HIGH. (You want to get the oil hot pretty fast).
- 3. Put in as many plantains to the skillet till it's filled. Flip over plantains every 1-2 minutes until the pale yellow color turns a light gold. Turn down heat to MEDIUM, and remove the skillet from the heat. Remove plantains and place them on a plate. Use a glass cup or "Plantain Smasher" to smush the plantains into chips. Continue this step until all plantains are smushed.
- 4. Place skillet back to the heat and turn it back to HIGH. Add the chips to the oil again. Turn over chips every 3-4 minutes. (This will let the plantain fully cook).
- 5. Remove plantains and place on plate, sprinkle salt while they are still hot. You can add this dish to any Hispanic meal or any meal in general. Using peanut oil makes it a bit more healthier.
