BEST PENNSYLVANIA DUTCH CHICKEN CORN SOUP
This is a classic favorite! A Pennsylvania Dutch chicken corn soup - complete with rivels (for anyone who doesn't know what rivels are, they are little dumplings). Garnish with chopped fresh parsley.

Steps:
- In a large pot over medium heat, combine chicken, water, onions, celery, salt, nutmeg and pepper. Bring to a boil, then reduce heat and simmer 2 hours, adding water as needed, until chicken is very tender. Remove the chicken from the soup. Refrigerate chicken and soup.
- When fat solidifies on surface of soup, remove from refrigerator and remove fat. Remaining soup should equal about 2 1/2 quarts.
- Remove corn from cobs by splitting kernels lengthwise with a sharp knife and scraping corn from cob. Combine soup and corn in a large pot over medium heat and bring to a boil. Reduce heat and simmer until corn is tender, 10 to 15 minutes.
- Meanwhile, place two of the eggs in a small saucepan and cover with cold water. Bring to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. Set aside.
- Chop cooled chicken meat and add to soup.
- In a medium bowl, beat remaining egg until light in color. Beat in flour and milk until smooth. Drop batter by partial spoonfuls into hot broth to make small (1/4 -1/2 inch round) dumplings. Cook, stirring constantly, for 2 to 5 minutes, until dumplings hold their shape and float to the surface. Stir in reserved cooked egg.

TRANSYLVANIAN CHICKEN SOUR SOUP
From my Romanian collection of Sour Soups. In some parts of Transylvania,sour soups are being seasoned with vinegar,everyone adds to its bowl. I omit the vinegar from the recipe,but try it if you want see what's it like. I usually make it with chicken thights,but any parts that can go in it,except breast. Here leftover parts from the chicken are sold specially for soups: wings,backs,necks,sometimes heads and feet(remove after boiling). If celery root is not available,the stalks will do just fine. That's what I do,anyway. When I don't have time for dicing,I just throw everything in the food processor and grate them.

- Boil the chicken. Remove the foam.
- Add the carrot,celery,onion and red pepper.
- When the veggies are soft,add the tomatoes.
- 10 minutes,before removing from the stove add the bacon and parsley.
- Remove and serve hot.
- If feeling brave,season your bowl of soup with vinegar.

- Cut the meat up in pieces and boil it in 2-3 liters of water with the onion and salt.
- Remove foam.
- In a separate bowl, beat the egg yolks with the sour cream and add one laddle of soup, little by little.
- Add the egg mixture to the soup.
- Remove from the stove and add the chopped parsley.
- Season with lemon juice.
- Serve hot.

Steps:
- Wash the sauerkraut thoroughly under cold running water, then soak it in cold water for 10 to 20 minutes to reduce its sourness. Strain well, pressing out all the water.
- Melt the butter in a 5-quart casserole and add the onion. Cook over medium heat, stirring occasionally, until lightly colored, 6 to 8 minutes. Add the garlic, season with salt and cook a minute or two longer. Stir in the paprika, pour in 1/2 cup of the broth and bring to a boil. Add the pork cubes.
- Spread the sauerkraut over the pork and sprinkle it with the caraway seeds. In a small bowl, combine the tomato purée and the rest of the broth and pour the mixture over the sauerkraut. Bring the liquid to a boil once more, then reduce the heat to its lowest point. Season the cooking liquid with a pinch of salt, cover the casserole tightly and simmer for 1 hour. Check occasionally to make sure the liquid has not cooked away. Add a little stock or water if needed; the sauerkraut should be moist.
- When the pork is tender, combine the creams in a mixing bowl. Beat the flour into the creams with a whisk, then carefully stir this mixture into the casserole. Simmer for 10 minutes longer. Season with salt to taste. Serve in large, wide bowls, accompanied by a side of sour cream.
