ASPARAGUS AND BEET TART

Asparagus and Beet Tart image

Provided by Food Network Kitchen

Categories     main-dish

Time 2h15m

Yield 6 to 8 servings

Number Of Ingredients 11

3 small beets
2 tablespoons unsalted butter
1 onion, halved and thinly sliced
2 teaspoons chopped fresh lemon thyme (or regular thyme)
Kosher salt and freshly ground pepper
1 sheet frozen puff pastry (half a 17-ounce package), thawed
1 large egg, lightly beaten
1/2 bunch thin asparagus, trimmed and cut into 3-inch pieces
2 tablespoons extra-virgin olive oil
2 ounces goat cheese, crumbled
1 tablespoon chopped fresh chives

Steps:

  • Preheat the oven to 425 degrees F. Put the beets in a small baking dish and add about 1/2 inch water. Cover with foil and bake until the beets are easily pierced with the tip of a knife, 1 to 1 1/2 hours. Transfer the beets to a plate and let cool. Wipe off the skins with a paper towel and slice into small wedges; set aside.
  • Meanwhile, heat the butter in a medium skillet over medium heat. Add the onion, 2 tablespoons water, 1 teaspoon thyme, a big pinch of salt and a few grinds of pepper and cook, stirring occasionally, until the onion is tender and caramelized, 20 to 25 minutes. (Add 1 to 2 teaspoons more water to the skillet, if needed.) Transfer the onion mixture to a food processor and puree until smooth. Let cool.
  • Roll out the puff pastry into a 9-by-11-inch rectangle on a sheet of parchment paper. Transfer the dough on the parchment to a baking sheet. Score a 1-inch border around the edge of the dough with a paring knife. Brush the border with the beaten egg. Spread the onion puree inside the border.
  • Combine the beets, asparagus, olive oil, the remaining 1 teaspoon thyme, 1/2 teaspoon salt and a few grinds of pepper in a bowl and toss to coat. Arrange on top of the onion puree.
  • Bake the tart until the dough is well browned and the asparagus is tender, 30 to 35 minutes. Scatter the goat cheese and chives on top. Serve warm or at room temperature.

BEETS AND ASPARAGUS WITH LEMON MAYONNAISE

Beets and Asparagus with Lemon Mayonnaise image

Since the mayonnaise contains raw eggs, use it the day it is made.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 9

2 bunches small beets (about 1 1/2 pounds), scrubbed and trimmed of all but 1 inch of stems
Coarse salt
2 bunches asparagus (about 1 pound), tough ends trimmed
1 large egg yolk, room temperature
2 teaspoons Dijon mustard
2 to 3 tablespoons freshly squeezed lemon juice (about 2 lemons)
3/4 cup olive oil
1/4 cup canola oil
Freshly ground pepper

Steps:

  • Place the beets in a large saucepan, and fill with enough cold water to cover by 2 inches. Add salt, and bring to a boil. Reduce heat, and simmer until the beets are tender when pierced with a fork, about 20 minutes. Drain, and let stand until cool enough to handle. Carefully rub off the beet skins using a paper towel, and set cooked beets aside.
  • Prepare an ice bath, and set aside. Fill saucepan halfway with water, and bring to a boil. Add salt and the asparagus, and cook until the asparagus is bright green and tender enough to bend without breaking, about 4 minutes. Using a slotted spoon or tongs, carefully transfer the asparagus to the ice bath to stop cooking. Drain immediately, and pat asparagus dry. Set aside.
  • In a blender, combine the egg yolk, mustard, and lemon juice. With blender running, add the olive oil and then canola oil in a slow, steady stream until mixture emulsifies and forms a thick mayonnaise. Season with salt and pepper. Transfer to an airtight container, and refrigerate for at least 1 hour. Mayonnaise will thicken when refrigerated. Serve chilled with the beets and asparagus, for dipping.

GREEN BEAN AND ASPARAGUS SALAD

Green Bean and Asparagus Salad image

Very tasty salad of roasted asparagus and green beans. I got the inspiration when I was indecisive about choosing between the two vegetables for a side dish. Roasting the vegetables brings out their great flavor and the addition of cherry tomatoes, onion, and fresh parsley give it a lovely color.

MY FAVORITE BEET SALAD

My Favorite Beet Salad image

Fresh roasted beets over a bed of baby spinach with tomatoes, avocados, onions and feta cheese drizzled with a balsamic dressing. You can cut this recipe in half for 4 servings, though it so good the next day too that I always make plenty.

Provided by monkeydoo3

Categories     Salad     Vegetable Salad Recipes     Beet Salad Recipes

Time 1h30m

Yield 8

Number Of Ingredients 11

6 large beets, trimmed
¼ cup extra virgin olive oil
salt and ground black pepper to taste
1 (8 ounce) package baby spinach leaves
2 tomatoes, cut into bite-sized pieces
2 avocados - peeled, pitted, and cut into bite-sized pieces
½ red onion, chopped, or to taste
1 (4 ounce) container crumbled feta cheese
½ cup balsamic vinegar
½ cup extra-virgin olive oil
1 tablespoon Dijon mustard, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the beets into a large bowl, and drizzle with 1/4 cup olive oil, salt, and black pepper. Lay out 2 large squares of aluminum foil on a work surface, and place 3 beets onto the center of each sheet. Fold the aluminum foil into 2 envelopes, sealing the beets into the packets; place the packets into a baking dish.
  • Bake in the preheated oven until tender, 1 to 1 1/2 hours. Check for tenderness after 1 hour by piercing a beet with a fork. Open the foil, and allow the beets to cool until they can be handled; peel, and slice.

  • Whisk together balsamic vinegar, 1/2 cup of olive oil, and Dijon mustard until smooth; pour over the salad to serve.

ROASTED BEET AND ASPARAGUS SALAD

Roasted Beet and Asparagus Salad image

I had something like this today at a place called Tria in Birmingham, so I've been looking for similar recipes all afternoon. This one sounds good. From bigoven.com

Provided by Sayster

Categories     Vegetable

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 23

2 large red beets
1 1/2 tablespoons olive oil
3 tablespoons blood orange oil
3 tablespoons chopped fresh cilantro
1 bunch fresh asparagus
1 orange, zest of
1/2 teaspoon cardamom seed
1 cinnamon stick
1/2 teaspoon allspice berry
3 cloves
3 tablespoons sugar
1 teaspoon salt
1/3 cup slivered almonds
1 tablespoon olive oil
1 egg yolk
1 1/2 tablespoons Dijon mustard
1/2 cup champagne vinegar
1 cup olive oil
3 tablespoons parsley, fresh, chopped
3 tablespoons chives, fresh, chopped
1 tablespoon shallot, minced
1 ounce greens
4 ounces blue cheese

Steps:

  • The Beets: Wash and dry the beets well. Rub them with the 1 1/2 Tablespoons of olive oil. Place them in a baking pan with 1 ounce of water. Cover the pan with aluminum foil and bake in a preheated 375 degree oven for 40 minutes to 1 hour & 15 minutes or until they are fork tender. Allow the beets to cool. Peel off the outer skin and small dice. This should yield about 3 cups. Place the diced beets, blood orange oil and cilantro in a bowl and toss. Season to taste with salt and fresh ground pepper. Reserve in the refrigerator.
  • The Asparagus: While the beets are roasting, blanch the asparagus in salted boiling water for about 3 minutes until it is tender and bright green.
  • Shock the asparagus in ice water for about 3-5 minutes or until it is cold throughout . Dry the asparagus and chop it into a small dice. This should yield about 3 cups. Reserve in the refrigerator.
  • The Dijon Vinaigrette: While the beets are roasting or a couple of days in advance, combine the egg yolk, Dijon, and vinegar in a bowl. With a wire wisk, mix the ingredients well. Slowly in a steady stream, drizzle in the oil to form and emulsion. Add the parsley, chives and shallots. Mix well and season to taste with salt and fresh ground pepper. Reserve in the refrigerator.
  • The Moroccan Spice & Almonds: While the beets are roasting, or 1 day before, remove the zest from 1 orange and place in a small oven proof container in the oven to dry out, watching constantly as not to burn it.
  • Once the zest is dry allow it to cool. In a coffee grinder, add the cardamom, broken cinnamon stick, allspice & cloves and grind until fine.
  • Pour the spices into a small bowl. Grind the dry orange rind in the same fashion and add it to the other spices. Add the sugar and salt and mix well with a fork. Reserve in an airtight container.
  • Toast the almonds in a dry saute pan over medium heat on the stove until lightly golden brown. Drizzle the 1 Tablespoon of oil on the almonds and continue to toast for another 30 seconds. Pull the almonds off the heat and pour them evenly onto a cookie sheet. Sprinkle the almonds with about 1 - 1 1/2 Tablespoons of the Moroccan spice and continue to toast in the oven for approximately 1 - 2 minutes or until golden brown. Remove from the oven and cool completely. Reserve.
  • To Build the Dish: Remove the beets, asparagus, vinaigrette & cheese from the refrigerator 1/2 an hour before serving. Add about 2 - 3 ounces of the Dijon vinaigrette to the asparagus and toss well. Season to taste with salt & pepper. In a round mold or free style, divide the asparagus onto the center of 6 plates. Add a layer of the dressed asparagus on top of the beets. (If you are using a mold, you will need to layer the beets and then the asparagus onto one plate before removing the mold and repeating onto the second plate and so forth.) Toss the field greens in some of the blood orange oil and place some of them onto the asparagus. Place 1 piece of Maytag blue cheese on top of the greens. Sprinkle each plate with the almonds. Garnish each plate with drizzles of Dijon vinaigrette, blood orange oil and chopped chives.

CHILLED BEETS AND ASPARAGUS WITH GARLIC CHIVE BLOSSOMS

Chilled Beets and Asparagus with Garlic Chive Blossoms image

Provided by Food Network

Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 9

2 bunches baby beets, peeled and quartered
1 bunch asparagus, trimmed and cut on the bias
1 cup water
1/2 cup orange blossom water
1 1/2 cups sugar
1 tablespoon fresh lemon juice
1 bunch garlic chives with blossoms, roughly chopped
4 ounces goat cheese
About 8 cups cleaned mixed greens, for serving

Steps:

  • First, a note on beets: they'll stain anything! Make sure you wear gloves as you're peeling the beets unless you want your hands to be an attractive magenta color!
  • Place the quartered beets in a large saucepan and cover with cold water. Place over medium high heat and bring to a boil. Immediately lower the heat to medium and let the beets cook for about 20 minutes or just until fork tender. Drain the beets and run them under cold water. Drain and set aside. As you're doing this, get another pot of water boiling and drop the prepped asparagus into it for just 2 minutes. Drain the asparagus and run it under cold water immediately. This is called blanching. Drain and add to the beets.
  • In yet another saucepan, add the water, orange blossom water, sugar and lemon juice. Bring to a boil, reduce the heat to medium and simmer until the glaze has reduced by half and has thickened slightly. Toss with the vegetables, and add the roughly chopped garlic chives. Top with the chive blossoms and crumbled goat cheese and serve as a first course on a bed of mixed greens.

Tom Kime's colourful salad is a great vegetarian option for summer entertaining

Provided by Tom Kime

Categories     Dinner, Lunch, Side dish

Time 1h

Number Of Ingredients 11

a large handful of fresh oregano or marjoram leaves
1 garlic clove
juice of 1½ lemons
4 tbsp extra-virgin olive oil
250g bunch asparagus , cut into 3cm/1¼in lengths
2 x 250g packs boiled fresh beetroot , cut into quarters
zest of 1 lemon
2 spring onions , finely sliced
85g bag watercress , large stalks removed
10 green and 10 purple basil leaves (or 20 of one colour)
400g feta or goat's cheese

Steps:

  • The day before: make the dressing. Put the oregano or marjoram, a pinch of salt and the garlic into a food processor and pulse to a paste. Add the lemon juice and whizz until smooth. Stir in the olive oil and season - it should be sharp and a bit salty.Cover and chill.
  • Two hours before serving: bring a pan of salted water to the boil, add the asparagus and cook for 3 minutes. Drain and cool under the cold tap. Cover and keep cool.
  • Put the beetroot in a large bowl and toss with twothirds of the dressing. Add the lemon zest and spring onions, cover and keep at cool room temperature with the remaining dressing.
  • To serve: add the watercress to the beetroot and tear in the basil. Toss in the asparagus and season with freshly ground black pepper. Taste before adding salt as the cheese is quite salty.Mix lightly, so you don't dye everything pink, then pile into a serving dish. Crumble over the cheese and pour the remaining dressing on top.

SHAVED ASPARAGUS AND RADISH SALAD

Shaved Asparagus and Radish Salad image

An easy salad to put together, this is a celebration of the first asparagus of the season, which is sweet enough to eat raw. Omit the anchovy in the dressing if you wish, but it's there to provide a boost of flavor, not to taste fishy. Any type of radish will work but, for a really vibrant salad, look for the many colorful varieties of daikon radish available at many farmers' markets.

Provided by David Tanis

Categories     dinner, lunch, salads and dressings, vegetables, appetizer, side dish

Time 15m

Yield 6 servings

Number Of Ingredients 7

3 tablespoons fruity, flavorful extra-virgin olive oil
Zest of 1 lemon
2 tablespoons lemon juice
4 anchovy fillets, rinsed, blotted and roughly chopped
Salt and pepper
1 pound asparagus, medium-thick spears if possible
1 cup thinly sliced daikon radish or other radish, preferably a mixture of colors (or more to taste)

Steps:

  • In a small bowl, whisk together olive oil, lemon zest, lemon juice and anchovy. Season the dressing with salt and pepper.
  • Snap off and discard the tough end of each asparagus spear. Using a sharp knife, slice asparagus lengthwise into ribbons. For skinny asparagus, just halve lengthwise.
  • Place sliced asparagus in a large salad bowl. Toss with salt and pepper, then add the dressing and toss to coat.
  • For each serving, place a handful of dressed asparagus on a plate. Surround with slices of colorful radish, and tuck a few more slices among the asparagus ribbons. Sprinkle radishes lightly with salt.

TRIA MARKET'S BEET AND ASPARAGUS SALAD

Tria Market's Beet and Asparagus Salad image

This is a super popular salad at a local restaurant. I've looked for the recipe for ages, and an al.com blog finally posted it! It is VERY easy, it just looks like it takes longer than it does because of the roastinga nd blanching. Prep time is mostly letting the beets roast and letting the salad stand.

Provided by Sayster

Categories     Lunch/Snacks

Time 2h35m

Yield 6 serving(s)

Number Of Ingredients 18

1 lb golden beets, roasted and peeled (see below)
2 bay leaves
2 sprigs thyme
1/2 cup water
1 lb asparagus, blanched and chopped (see below)
1 pot salt water
1 cup blue cheese, crumbled
1/2 cup pine nuts, toasted
1/2 cup cherry tomatoes, quartered
1 cup red wine vinaigrette
6 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
2 teaspoons Dijon mustard
1/2 teaspoon dried oregano
2 garlic cloves, minced
1 small shallot, minced
1 1/2 teaspoons sugar

  • Toss all ingredients and let stand for 30 minutes.
  • To Roast Beets: Wash beets well in cold running water. Place beets in a baking dish and coat them with extra virgin olive oil.
  • Put 1/2 cup of water into the baking dish along with bay leaves and thyme.
  • Cover baking dish with foil and bake for 1 hour in a 350-degree oven.
  • Allow beets to cool and then wipe off the skin with paper towel. Dice beets into 1/4-inch cubes. (Note: Be careful not to overcook or the beets will become mushy.).
  • To Blanch Asparagus: Bring a pot of salted water to a simmer. Trim off ends of asparagus and place them into the simmering water until they turn bright green, about 3 to 5 minutes. As soon as they turn bright green remove them from the simmer and place them into cold water. Once they have cooled chop into bite-size pieces.
  • For vinaigrette: Add all ingredients to a blender and mix on high until well incorporated, about 1 to 2 minutes.
