- In a large resealable plastic bag, combine the first eight ingredients. Add shrimp; seal bag and turn to coat. Refrigerate 2 hours., Drain shrimp, discarding marinade. On each of 30 metal or soaked wooden appetizer skewers, thread one shrimp, one mango cube and one pineapple cube. Heat a grill pan over medium heat. In batches, cook kabobs 2-3 minutes on each side or until shrimp turn pink.

GRILLED TROPICAL KEBABS - SHISH KEBABS OR SHISH KABOBS
Oh-so-very-very-good!! I originally got this recipe from my friend Alan many years ago, and have tweaked it to my liking since. My favorite for summer grilling! You can make them indoors with grill pans, too.

Steps:
- Mix together marinade ingredients; reserve 2 tbsp of marinade for brushing on while grilling and set aside.
- Cut meat into bite size cubes.
- Place meat in marinade, cover, and refrigerate for at least two hours, stirring occasionally.
- Cut pineapple into bite size chunks.
- Place meat and pineapple chunks/pepper/onion/tomato alternately on water-soaked skewers.
- Grill or broil shish kabobs until done, about 10-15 minutes, turning occasionally and brushing with reserved marinade.
- Good with beef and pork, too!

TROPICAL SEAFOOD KEBABS
These are great for BBQs! You can use an indoor grill pan or broil them, too, so you can have them all year round. :)

- In large bowl or Ziploc plastic bag combine the fruit juices, soy, oil, sugar, rind, cinnamon, and cayenne (if using); add the shrimp, scallops, melon, and pineapple.
- Cover (or Ziploc) and marinate in refrigerator for at least 4 hours.
- Soak bamboo skewers in water for 5-10 minutes.
- Place shrimp, scallops, melon, pineapple, and avocado on skewers.
- Grill or broil for 3 to 6 minutes or until shrimp are pink and scallops are opaque (be careful not to overcook!), basting frequently with marinade.
- Makes 6-8 skewers, serving 2-4 (depending on how hungry you are).

TROPICAL FRUIT KEBABS

Steps:
- Place the butter in a small skillet. Split the vanilla bean and scrape the seeds onto the butter. Mash seeds into the butter with the back of a spoon. Add the scraped pod and melt the butter over low heat. Remove from heat and set aside to steep.
- Heat the coconut cream and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until melted and smooth. Stir in the lime zest. Set aside. (The vanilla butter and chocolate sauce can be made up to 3 days ahead, refrigerated, and reheated before grilling.)
- If using wooden skewers, soak them in water for 30 minutes before grilling. Prepare an outdoor grill with a low-medium fire.
- Prepare the fruit for the skewers, cutting the fruit into 2-inch chunks. Thread the fruit onto 8 (8-inch) skewers, alternating the mango and papaya. Brush lightly with some of the vanilla butter. Grill the fruit until lightly charred but not mushy, turning as needed, about 5 minutes per side. Pool about 2 tablespoons chocolate sauce on each of 4 plates, arrange 2 skewers on each plate, and drizzle with a bit of vanilla butter.
TROPICAL FRUIT KEBABS
Steps:
- 1. Soak eight 8-inch bamboo skewers in water for 30 minutes. Heat a grill to medium low.
- 2. Place butter in a small skillet. Split vanilla bean and scrape seeds onto butter and mash with back a spoon. Add scraped pod and melt butter over low heat. Remove from heat and set aside to steep.
- 3. Heat cream of coconut and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until chocolate is melted and smooth. Stir in lime zest. Set aside.
- 4. Cut mango and papaya into 2-inch chunks and alternately thread onto skewers. Brush lightly with vanilla butter and grill until fruit is lightly charred, turning as needed, about 5 minutes per side. Serve with chocolate sauce.

- In a small bowl, combine the lemon juice, oil, 1 teaspoon dill, salt and pepper. , Place the halibut, shrimp and scallops in a large resealable plastic bag; place the peppers in another large resealable plastic bag. Divide marinade between both bags. Seal bags and turn to coat; refrigerate for 15-20 minutes. Drain and discard marinade., On six metal or soaked wooden skewers, alternately thread the halibut, shrimp, scallops and peppers. Sprinkle with remaining dill. Broil 6 in. from the heat or grill, covered, over medium heat for 4-5 minutes on each side or until halibut flakes easily with a fork, shrimp turn pink and scallops are firm and opaque.

- Place wooden skewers in a bowl of water to soak for at least 10 minutes.
- Puree the pineapple, garlic, chili sauce, and water in a food processor.
- Heat a pan over medium heat, and add the pureed sauce mixture.
- Add vinegar, salt, coconut cream, lime juice, and zest of one lime.
- Bring the sauce to a boil, stirring occasionally. Reduce heat to a simmer.
- Mix the cornstarch and water in a small bowl to create the slurry, then add the mixture into the sauce and simmer until the sauce thickens, about a minute.
- Skewer the pineapple and shrimp, then brush sauce on both sides.
- Grill skewers over medium-high heat until cooked, about 2-3 minutes per side.
- Sprinkle finished skewers with lime zest and serve with remaining sauce.

In a large bowl, combine mangoes, pineapple, papaya, red onion, red pepper, jalapenos, cilantro and lime juice. Refrigerate, covered, until serving., Drain shrimp, discarding lime juice. Place 1 cantaloupe slice on each prosciutto slice; top each with 1 shrimp. Fold both sides to close. If desired, secure with toothpicks. Serve with mango salsa.
