3 eggs
¾ cup Mazola® Corn Oil
1 cup diced mango
1 (8 ounce) can pineapple tidbits, well drained
¼ cup chopped macadamia nuts
½ cup shredded coconut
1 ½ cups powdered sugar
½ teaspoon Spice Islands® Pure Vanilla Extract
1 tablespoon butter or margarine, melted
2 tablespoons hot tap water, or as needed

Steps:

  • Preheat oven to 350 degrees F. Stir together flour, sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the dry ingredients and add vanilla, eggs, oil, fruits, nuts and coconut; mix well. Pour into 2 greased 8-1/2 x 4-1/2-inch loaf pans.
  • Bake for 45 to 50 minutes or until a wooden pick inserted near the center of loaf comes out clean. Cool in pans 5 minutes. Remove from pans and cool completely on wire racks. When loaves are cool, mix together ingredients for glaze and pour over loaves.

1 cup cubed French bread (1/2-inch cubes)
1/2 small firm banana, sliced
3 tablespoons crushed pineapple, drained
1 tablespoon sweetened shredded coconut
1/2 teaspoon lemon juice
1 egg
4-1/2 teaspoons brown sugar
1/3 cup half-and-half cream
1/4 teaspoon vanilla extract

Steps:

  • Place half of the bread cubes in a 2-cup baking dish coated with cooking spray. Combine the banana, pineapple, coconut and lemon juice; spoon over bread cubes. Top with remaining bread cubes., In a bowl, beat the egg and brown sugar. Add the cream and vanilla; mix well. Pour over bread and press down slightly. Bake, uncovered, at 400° for 20-25 minutes or until a thermometer reads 160°.

This bread was given to me by my best friend, Sharon, that is no longer with us. Everytime I fix this she is with me. Everyone just loves this bread and you can add anything you like.

1 loaf frozen bread dough, completely thawed
1/2 lb ground sausage, browned and drained
1/2 lb ground beef, browned and drained
12 ounces sharp cheddar cheese, shredded
1 onion, chopped
1 -2 jalapeno pepper
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

  • Let bread thaw and rise according to package.
  • If in a hurry, just let thaw.
  • Preheat oven 375 degrees.
  • Brown and drain meat, onions and seasonings.
  • Roll 1/2 dough out on a floured surface.
  • Spoon meat mixture down the middle.
  • Top with cheese and jalepeno peppers.
  • Roll in a loaf.
  • Repeat with other half of bread dough.
  • Place in bread pan and bake for 25 or 30 minutes or until bread is brown.
  • Let cool for about 10 minutes, slice and enjoy.

1 cup macadamia nuts
3/4 cup unsweetened coconut flakes
1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon freshly grated nutmeg
1/2 cup lightly-packed dark brown sugar
2 large eggs, lightly beaten
1/4 cup Greek yogurt
1 teaspoon pure vanilla extract
4 soft, very ripe bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 9-by-5-inch loaf pan.
  • Spread the macadamia nuts on one rimmed baking sheet and the coconut on another. Toast, tossing occasionally, until the macadamia nuts and coconut are golden, 5 to 7 minutes. Let the nuts cool, then roughly chop.
  • Whisk together the flour, granulated sugar, baking soda, cinnamon, salt, nutmeg, macadamia nuts and coconut in a large bowl. In another bowl, whisk together the coconut oil, brown sugar, eggs, yogurt and vanilla. Stir in the bananas. Fold the banana mixture into the dry mixture until just combined.
  • Pour the batter into the prepared loaf pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until golden brown and a skewer inserted into the center comes out clean, 65 minutes to 75 minutes. Let the bread cool for 15 minutes in the pan. Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine the flour, sugar, salt, cinnamon, and baking soda. In another bowl, mix together the eggs, oil, and vanilla. Add in the pineapple, coconut and bananas and stir. Pour the wet ingredients in with the dry ingredients and mix until they are just barely combined- don't overmix. Pour the batter into two 8x4" greased loaf pans.
  • Bake for 65-75 minutes or until a toothpick inserted in the middle of the loaf of bread comes out clean. Let bread cool for 5-10 minutes before removing from pans and placing on a wire rack to continue cooling.
  • In a small bowl, mix together the reserved pineapple juice and powdered sugar. Drizzle over the top of the warm bread and enjoy!
