2 pounds turnips with purple tops, cut into wedges
4 tablespoons unsalted butter, cubed
3 sprigs fresh thyme
2 shallots, sliced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Toss together the turnips, butter, thyme sprigs, shallots, olive oil and some salt and pepper in a 13-by-9-inch baking dish. Roast until the turnips begin to soften, about 30 minutes. Adjust the seasoning and serve.

This recipe has been in our family for years. We like turnips with turkey, so my mother used to serve this side dish with our turkey dinner at Christmas. Then I served this dish, and now my daughter, who has taken over preparing Christmas dinner, is carrying on the tradition.

3 medium turnips, peeled and cubed
4 tablespoons butter, divided
2 large eggs
3 tablespoons all-purpose flour
1 tablespoon brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon pepper
Dash ground nutmeg
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. Transfer to a greased 8-in. square baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Serve immediately.

I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  • Bake for another 15 minutes.

4 large baking potatoes
4 tablespoons milk
salt to taste
2 tablespoons butter
¼ cup shredded mild Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Clean and scrub baking potatoes. Pierce skin with a fork once or twice. Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until the potatoes are soft and firm.
  • Let potatoes cool slightly. Cut baked potatoes in half and scoop out pulp within 1/4 inch of the shell edge. Mash the pulp with milk, salt and butter to taste. Stuff shells with mashed pulp mixture sprinkle tops with grated cheddar cheese. Place potatoes on a baking sheet and bake at 350 degrees F (175 degrees C) for 15 minutes or until cheese is melted and bubbly.

For those of us watching our calories and carbs, turnips make an excellent alternative to potatoes. A 4 ounce turnip has only about 40 calories and a negligible impact on blood sugar levels. Turnips are available year round, but the best ones are available from late summer thru mid autumn.

2 large turnips
1 tablespoon olive oil
2 tablespoons light sour cream
2 teaspoons spice hunter poultry seasoning
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 400 degrees. Cut the stem end from turnips. Rub each with olive oil and wrap tightly in aluminum foil. Bake for approximately 90 minutes or until insides are soft enough to scoop out.
  • Scoop out insides of each turnip, leaving the shell intact. Mash & whip the insides with the sour cream, spices and seasonings. When the insides are a creamy consistency, carefully spoon them back into shells. Reduce oven heat to 350 degrees and bake the stuffed turnips for 20-30 minutes until heated thru.

2 large russet potatoes, skin washed and patted dry
2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
3/4 cup whole-fat plain Greek yogurt
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
2 scallions, finely chopped (white and green parts)
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 tablespoons salted butter, melted
1/2 cup heavy cream or milk
1 1/2 cups shredded Italian cheese blend
1/2 cup of the yogurt mixture, from above

Steps:

  • For the potatoes: Preheat the oven to 400 degrees F. Rub the potatoes all over with the oil. Season the skins with salt and pepper and place on a baking sheet. Bake until tender inside, about 1 hour. Set aside until cool enough to handle, but still warm. Leave the oven on.
  • For the yogurt mixture. While the potatoes are baking, in a medium bowl, stir together the yogurt, cilantro, dill, mint, parsley and scallions. Taste and season with salt and pepper. Set aside.
  • For the filling: Slice each potato in half lengthwise. Use a spoon to gently hollow out each half, leaving about 1/4 inch of flesh around the border and bottom. Mash the potato flesh in a large bowl with a fork or potato masher. Add the melted butter, half of the cream or milk, 1 cup of the cheese blend, 1/2 cup of the yogurt mixture, and salt and pepper to taste. Reserve the rest of the yogurt mixture for serving. Mix to combine, adding more cream or milk to make smooth. Taste and season with salt and pepper if needed.
  • Re-bake the potatoes: Line a baking sheet with parchment or nonstick aluminum foil. Place the hollowed-out potatoes on the prepared baking sheet. Using a large spoon, fill the recess of each potato with the filling. Top the potatoes with the remaining cheese. Bake until the tops begin to brown, 20 to 25 minutes. Serve with a dollop of the reserved yogurt mixture.

1 (1/4 ounce) package active dry yeast
3/4 cup warm water
3/4 cup milk
1/3 cup sugar
2 1/4 teaspoons salt
1/4 cup melted shortening
4 1/2 cups sifted flour

Steps:

  • Scald milk and cool to lukewarm.
  • Dissolve yeast in warm water.
  • Stir in milk, sugar, salt, shortening, and 2 1/2 cup flour.
  • Beat until smooth.
  • Stir in remaining flour until it makes a soft dough that leaves the sides of the bowl.
  • Knead 4 minutes.
  • Put in greased bowl and turn greased side of dough up; cover and let rise until doubled, about 1 1/2 hours.
  • Punch down and divide into 24 pieces of equal size.
  • Shape into rolls.
  • Place about 3 inches apart on greased baking sheet or in greased muffin tins.
  • Cover and let rise until doubled, about 45 minutes.
  • Bake in a very slow oven (275°F) 20 to 30 minutes.
  • DO NOT LET ROLLS BROWN.
  • Remove from baking sheet and cool at room temperature.
  • Wrap rolls in plastic wrap or aluminum foil and store in refrigerator for several days or in freezer for 2-3 months.
  • To serve: Brown rolls in hot oven (400°F) 7 to 10 minutes.

PEAS AND TURNIPS WITH BACON AND DILL BUTTER

8 tablespoons (1 stick) butter, room temperature
4 tablespoons chopped fresh dill
8 bacon slices, chopped
1 1/4 pounds turnips, peeled, cut into 1/2-inch cubes (about 4 cups)
2 16-ounce bags frozen petite peas, thawed

Steps:

  • Mix 6 tablespoons butter and 3 tablespoons dill in small bowl to blend. Season with salt and pepper. (Dill butter can be made 2 days ahead; cover and chill. Bring to room temperature before using.)
  • Sauté bacon in heavy large skillet over medium heat until brown and crisp. Using slotted spoon, transfer bacon to paper towels. (Can be made 2 hours ahead; let stand at room temperature.)
  • Melt remaining 2 tablespoons butter in large nonstick skillet over medium-high heat. Add turnips and sauté until tender and golden, about 9 minutes. Add peas and dill butter and stir until peas are heated through, about 3 minutes. Stir in bacon. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining 1 tablespoon dill and serve.

6 medium white turnips, about 3 inches in diameter
3 tablespoons unsweetened butter
6 tablespoons freshly grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon freshly ground white pepper
1/4 teaspoon freshly grated nutmeg
1 cup milk or light cream
3 tablespoons fine, dry bread crumbs

Steps:

  • Preheat oven to 375 degrees.
  • Peel the turnips and slice thinly. Using about 1/2 tablespoon of butter, butter well the bottom and sides of an oval gratin dish.
  • Mix the Parmesan cheese with the salt, pepper, nutmeg and cayenne. Bring the milk or cream to a boil in a separate saucepan and keep hot.
  • Layer turnip slices in the dish, dusting each layer with the spicy cheese mixture. When all the turnips are used up, pour the hot milk into the dish. Strew bread crumbs over the top and dot with the remaining butter.
  • Bake, uncovered, for 45 to 50 minutes, until turnips are soft and have absorbed much of the liquid.
