  • Mix water, iced tea and juice concentrate in large pitcher.
  • Serve over ice. Garnish with mint.

This is my mother's recipe, a bread she always made at Thanksgiving and Christmas to be used for tea sandwiches with a cream cheese filling. But it may also be eaten on its own like a cake. Because it is so delicious yet simple to put together, it makes a great food gift or potluck contribution. Substitute raisins for dates, if you wish.

1 ½ cups chopped pitted dates
1 ½ cups white sugar
1 teaspoon salt
2 tablespoons butter
1 ½ cups boiling water
1 egg, lightly beaten
2 ¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 ½ teaspoons vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour 9x5 inch loaf pan.
  • Place the dates, sugar, salt, and butter into a bowl, and pour in the boiling water. Stir together and set aside to cool. Once cool, mix in the egg.
  • Stir the flour, baking soda, and cream of tartar together in a bowl. Pour the raisin mixture over the flour mixture, and stir together until thoroughly combined. Mix in the vanilla extract and, if desired, walnuts. Pour batter into prepared loaf pan.
  • Bake in preheated oven until knife inserted in center comes out clean, about 1 hour 15 minutes. Cool in pan 10 minutes before turning out onto a rack to cool completely. Wrap in aluminum foil and store in the refrigerator.

4 tea bags
1/4 cup lemon juice
2 pieces cinnamon sticks
8 whole cloves
1 dash ground nutmeg
4 lemon slices (to garnish)

Steps:

  • In a saucepan, bring the orange juice to a boil. Remove from heat and add all other ingredients except for lemon slices.
  • Cover and let steep for 5 minutes or until desired strength. Remove tea bags allow to cool then chill.
  • Strain and serve in glasses garnished with lemon.

1/3 cup butter
2/3 cup honey
2 eggs
2 tablespoons milk
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup coconut, toasted
1 cup banana
2 tablespoons lemon zest
3 teaspoons lemon juice
1/2 teaspoon vanilla

Steps:

  • Cream butter; add honey.
  • Beat in eggs.
  • Sift flour, salt, baking powder, and baking soda.
  • Add coconut, previously toasted at 350 degrees for 5 minutes on cookie sheet.
  • Mix banana, lemon juice, lemon zest, and vanilla.
  • Add alternately with dry ingrienents.
  • Blend only until just moistened.
  • Spoon into well greased 9"x5" loaf pan.
  • Bake in 350 degree Fahrenheit oven for 55 minutes.
  • Allow to coool 5 minutes before removing from pan.
  • It slices better as it ages and freezes well.

Steps:

  • In bread machine pan, place the first 13 ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the macadamia nuts.

Steps:

  • 1. Stir together flour, baking powder, soda and salt. Set aside.2. Combine bananas and buttermilk. Set aside.3. In large mixing bowl, beat together shortening and sugar. Add eggs. Beat well. Add flour mixture alternately with buttermilk mixture, stirring after each addition only until combined. Stir in Kellogg's® All-Bran® cereal, apricots and nuts. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.4. Bake at 350°F about 1 hour or until wooden pick inserted near center comes out clean. Let cool 10 minutes. 3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
3 eggs
2 teaspoons vanilla
1 cup canola oil (or vegetable oil or applesauce can be substituted)
4-5 ripe bananas, mashed (about 2 cups)
1 cup shredded sweetened coconut
1 (8 oz) can crushed pineapple, with juice reserved
1 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine the flour, sugar, salt, cinnamon, and baking soda. In another bowl, mix together the eggs, oil, and vanilla. Add in the pineapple, coconut and bananas and stir. Pour the wet ingredients in with the dry ingredients and mix until they are just barely combined- don't overmix. Pour the batter into two 8x4" greased loaf pans.
  • Bake for 65-75 minutes or until a toothpick inserted in the middle of the loaf of bread comes out clean. Let bread cool for 5-10 minutes before removing from pans and placing on a wire rack to continue cooling.
  • In a small bowl, mix together the reserved pineapple juice and powdered sugar. Drizzle over the top of the warm bread and enjoy!
