TUNA LASAGNA
This is a great favourite in my household. And I have found that even people who generally don't like tuna enjoy this dish. It's sounds unusual I know, but it really is very nice served with crusty bread and a green salad!

Steps:
- Heat oil in a medium sized saucepan.
- Add garlic and onion and cook til onion is soft.
- Stir in undrained, mashed tomatoes, water, crumbled stock cube and tomato paste.
- Simmer uncovered for 15 minutes.
- Remove from heat and gently stir in Tuna.
- For the sauce: Melt butter in a microwave proof jug.
- Add flour and blend well before adding milk.
- Mix well with a balloon whisk.
- Microwave for 2 minutes on high whisking after the first minute.
- Layer Lasagna noodles, tuna mix and sauce in a casserole dish.
- Sprinkle with cheese.
- Bake 180 degrees celsius for about 25 minutes.

- Cook the onion and garlic. Pour the oil into the frying pan and heat over a moderate temperature. When the oil is fairly hot add the onion and garlic and cook until the onion softens.
- Add more ingredients for the sauce. Add the chopped tomato, tomato paste, sugar, oregano, basil and lemon juice. Season well with salt and pepper, mix together and simmer uncovered for 10 minutes.
- Stir in the tuna and remove the pan from the heat.
- Pre-heat the oven to 350 degrees F, 180 degrees C, or on gas mark 4.
- Make the bechamel sauce. Melt butter in the saucepan, then add the flour and stir in well. While stirring, slowly pour in the milk. Season with salt and pepper. Let the sauce thicken by gradually bringing it to the boil whilst continually stirring. Finally add the parmesan cheese, stir in and remove sauce from the heat.
- Layer the lasagne and sauces in the casserole dish. To build the lasagne, firstly spoon some tuna sauce over the bottom of the casserole dish. Next, add a layer of lasagne and spread some bechamel sauce on top. Finally add a layer of mozzarella. Repeat this process until you've added all the ingredients. The last layer should be the béchamel sauce which will become crisp in the oven.
- Bake the lasagne. Place the dish in the middle of the oven and bake for 35 minutes or until the bechamel sauce has turned golden-brown.
- Serve. When golden and bubbling, remove the lasagne from the oven and serve while piping hot with a fresh, green salad and crusty bread.

SHRIMP AND SCALLOP LASAGNA

- Preheat the oven to 375 degrees F. Spray a 13 by 10-inch aluminum foil pan with vegetable oil cooking spray.
- In a large pot of boiling salted water, cook the lasagna noodles until they are just done, about 8 minutes. Drain and set aside.
- Melt the butter in a large, heavy skillet and cook the onion over low heat until very soft, about 5 minutes. Add the garlic and cook about 1 minute more. Over medium-low heat, stir in the flour with a whisk, then gradually add the half-and-half, allowing the sauce to thicken slightly before adding more. When the sauce has thickened to about the consistency of whipping cream, add the cheese and stir well. Add the salt and pepper and stir again. Add the scallops and cook for about 3 to 4 minutes, then add the shrimp and cook for 1 to 2 minutes or just until the shrimp turn pink. Turn off the heat.
- Spoon about 2 tablespoons of the sauce from the skillet into the prepared pan. Cover the bottom of the pan with 4 noodles, placing them side by side. Spoon 1/3 of the sauce over the noodles, distributing half of the seafood evenly. Layer 4 more noodles, 1/3 of the sauce, and remaining seafood. Cover with the last 4 noodles and the remaining sauce. (For the top layer, do not spoon any seafood on top of the noodles; just use the sauce.) Tuck in any edges of the noodles so they're all coated with sauce. Top with the Parmesan.
- Bake for 20 to 25 minutes, uncovered, until bubbly. Allow to sit for 10 minutes before slicing.

- Cook noodles in a large pot of boiling salted water until done. Rinse and drain noodles. Set aside.
- Melt butter or margarine in a small saute pan over medium heat. Add onion; cook and stir until tender. Add cream cheese, cottage cheese, egg, basil, and salt and pepper.
- In a medium bowl, combine soup, milk, and wine. Stir in crab, shrimp, and mushrooms.

- Preheat oven to 350°. Cook lasagna noodles according to package directions; drain., Meanwhile, in a large skillet, heat butter over medium heat. - Bring a pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain, and rinse in cold water. Preheat oven to 350 degrees F (175 degrees C).
- In a skillet, cook onion in butter over medium heat until tender. Remove from heat, and stir in cream cheese, cottage cheese, egg, basil, and salt and pepper.
- In a medium bowl, mix together the soup, milk, wine, crabmeat, and shrimp.
- Lay 3 cooked lasagna noodles on the bottom of a 9x13 inch baking dish. Spread 1/3 of the onion mixture over the noodles. Then spread 1/3 of the soup mixture over the onion layer. Repeat the noodle, onion, soup layers twice more. Top with Cheddar cheese and Parmesan cheese.

Not for those on a diet, but a calorie filled lasagna thats a slice of heaven. My neighbour served this to me during the holidays and I asked her for the recipe. Some one notified me that this is a recipe from 2007 Chatalaine Magazine.

- Heat oven to 350. Place shrimp in a strainer and rince under cold water if you are using frozen shrimp. Pat dry and remove the tails.
- In a bowl stir the pasta sauce with the cream, basil and oregano. Taste and add more seasonings if needed.
- Stir ricotta with dill in a small bowl.
- Grate cheeses then stir together.
- Spread about 1/2 cup of sauce in the bottom of a 9 x 13 pan, top with 3-5 lasagna noodles,try not to overlap them.
- Spread 1/2 of the ricitta mixture.
- Cover with 1/2 of the tomatae sauce.
- Scatter 1/2 of the shrimp on top .
- Then comes 1/2 of the cheese over the shrimp.
- Put more noodles , then layer again .Ending whith a layer of noodles , the rest of the sauce and then topped with cheese.
- Baked uncovered in the centre of the onen until sauce is bubbly. Takes about 1 hour and let stand for 10 minute before serving.
- When you have finished your meal -- run around the block.
- This can be made a head just bake it for 30 minutes. Let cool ,.
- cover and refridgate overnight.
- Remove from fridge, uncover and let it come to room temperature 30 minute Reheat at 350 for 30-40 minute Cover loosely if it gets too brown around the edges.
SICILIAN-STYLE TUNA LASAGNE

- Heat oven to 200C/180C fan/gas 6. Tip the tomatoes, peppers, olives, cinnamon and herbs into a pan, cover and simmer for 10 mins until the tomatoes have broken down a little. Add the tuna and season.
- Tip the cream cheese into a bowl, season and mix to loosen a little, adding a splash of water (or milk, if you have some) to make a thick white-sauce consistency. Assemble the lasagne in a baking dish, approx 20 x 30cm. Pour roughly a third of the tuna sauce into the bottom of the dish, top with 4 lasagne sheets, a third of the cream cheese sauce, then repeat the layers twice more. Scatter over the mozzarella and bake for 35 mins until golden and bubbling.

- Do a broth with the shells of the shrimps, 1 cup of wine and the sauce of the tomatoes peeled can. In a stir-fry braise the minced onion and garlic wtth 4 soup spoons of olive oil, after becoming translucent add 2/3 of the chopped bacon. After 10 minutes add the drained tuna can, the shrimps and let them braise for 15 minutes. Add half a cup of white wine, 1 cup of the broth previously strained, 3 soup spoons of cream, 3 soup spoons of instant seafood cream to thicken the sauce, add the peeled tomatoes chopped and the tomatoe paste. Let it all cook for more 15 minutes. Finish the sauce with paprika, salt, pepper, lemon juice and 3 soup spoons of chopped coriander. Grease the platter with olive oil, lay out one layer of lasanha pasta that has been previously a few seconds in boiling water, lay out the tuna and shrimp sauce, then a thread of bechamel sauce, after this it's time to spread the ricotta cheese ( put just enought to cover the tuna). Repeat one more time the layers. Finish with another layer of lasagna pasta, the rest of the tuna and shrimp sauce (not much, just to let it moist), the bechamel sauce and a lot of ricotta cheese. Guarnish the top with 6 seasoned prawns, the rest of the chopped bacon, some chopped coriander, pepper, salt , garlic powder and some drops of lemon juice. It takes about 45 minutes in the oven. In this time let the preparation gratin for 10 minutes. Enjoy!
